Watermelon punch.
Here is a chilled and refreshing drink to beat the heat. A delicious drink with all the goodness of watermelon, orange and lemon. You don’t need any sweetener because watermelon and orange have enough sweetness.

This fruit punch is very easy to make. Just combine all the juice and add some ice cubes, lemon slices and watermelon scoop. Enjoy the chilled, refreshing and delicious drink.

Recipe

Watermelon – 4 cup, cubed and seedless

Orange juice – 1 cup

Lemon juice – 2 teaspoon

Ice cube as require

Watermelon scoop and lemon slices to garnish

Method

1. Blend the watermelon cubes in blender or use your juicer to make juice.

2. Strain the juice with a strainer.

3. Mix orange juice and lemon juice.

4. In a glass place some ice cubes, lemon slices and watermelon scoop.

5. Pour the watermelon orange and lemon juice over it.
Serve immediately.

Dairy free mango pineapple smoothie.
A delicious refreshing chilled and filling smoothie for your breakfast.
Its dairy free. Used coconut milk in it. Mixed taste of mango pineapple, coconut milk and a dash of cinnamon made this smoothie super yummy. A perfect drink for fasting days.
And its just three ingredients smoothie. If you don’t like cinnamon then you can omit it. Or you can increase the amount of cinnamon powder if you love the flavour.
Its peak mango season. You can get so many varieties juicy Mangoes or king of the fruit in this season. Yes its called king of the fruit because of its lip smacking taste.

So this smoothie is not only delicious, refreshing and filling but its healthy too. You don’t need ice if you are using frozen fruits. But if you have fresh fruits add some ice cubes to make it chilled.

Recipe

Mango – 1 cup, chopped

Pineapple – 1 cup, chopped

Coconut milk – 1 cup

Cinnamon powder – 1/4 to 1/2 teaspoon, optional

Honey or sugar to taste

Sliced almond to garnish

1. Blend mango and pineapple pieces in a mixer grinder.

2. Add coconut milk and blend again.

3. Taste and add honey or sugar to taste. My fruits are too sweet so I didn’t add any sweetener.

4. Add cinnamon powder if using. Blend again.

5. Place some ice cubes in your favorite glass. Pour the mixture over it.

6. Garnish with sliced almond and serve chilled.

Notes

1. You can use any fruit of your choice instead of mango and pineapple.

2. If you don’t like cinnamon then you can omit it and use cardamom or any flavour of your choice.

Green Tea Grape Mocktail

Green tea grape mocktail.
Summer time again. And here is a chilled and refreshing drink for you.
A perfect drink to beat the heat. This non alcoholic drink is perfect for your party. A delicious mocktail for kids and non drinkers.

You can make the drink and store in refrigerator. Mix soda water and ice just before serving.

This week’s 137th #Foodiemonday bloghop theme is mocktail.

Refreshing flavour of green tea, mint, ginger and lemon, sweetness of grapes and cooling properties of cucumber makes this drink superbly delicious.
I have added little ginger in it but if you don’t like you can omit. Or you can increase the amount of ginger if you like.

Recipe

Ingredients

Green tea – 1 cup

Grape – 1 cup

Cucumber – 1/2

Grated ginger – 1/2 teaspoon

Mint leaves – 8 – 10

Lemon juice – 3 tablespoon

Sparkling water or soda water – 1/2 cup

Black salt – 1/4 teaspoon

Lemon wedge, mint and thin lengthwise slice of cucumber to garnish

Method

Make one cup green tea and let it cool down.
Wash the grapes. Peel and chop the half cucumber. Taste the cucumber before using. It shouldn’t be bitter.

In a blender blend grapes, cucumber, mint leaves, black salt, grated ginger, lemon juice and green tea.
Blend till smooth and frothy.

Strain the mixture. Press with a spoon on strainer to get all the juice.
Slice thin lengthwise piece of cucumber.
Place the slice in a glass. Press on the inner wall of the glass.

Place some crushed ice in the glass.
Pour the strained juice over it. Top with sparkling water or soda water.
Garnish with lemon wedge, mint and grape.
Serve chilled.

Notes

1. I like natural Sweetness so I didn’t add any sweetener. You can add honey or sugar if you want.

2. You can add little more black salt if require.

3. You can increase or decrease the amount of mint and ginger as per your taste.

Gazpacho Or Cold Soup 

Gazpacho 

In this hot weather we want some no cook dishes, right? 😀

Yes we enjoy smoothies, cooler, mojito and different types of fruit juice and mocktails in this season. 

Now what about some refreshing  chilled, yummy and healthy soup made of raw vegetables and fruits. Nothing is better than a bowl of gazpacho in summer. Some crisp toast and a bowl of chilled no cook soup, perfect dinner for summer. 

Gazpacho is a Spanish cold soup made of raw vegetables.

Our this week’s 91st #Foodiemonday bloghop theme is #20minutes recipes. My contribution is this chilled, refreshing, healthy and yummy gazpacho. 

If you have all the ingredients in your pantry  you can make it in a jiffy. Just chop and blend. Keep it in refrigerator and serve chilled or add some ice cubes. 

Instead of sugar I have used grapes and watermelon. Fruits made the soup delicious and healthy. And both are easily available in this season. I have used almonds to give a creamy texture. 



Recipe 



Chopped tomatoes – 3 cup 

Cucumber – 1 small peeled and chopped 

Onion – 1 small chopped 

Garlic – 1 clove chopped 

Capsicum – 1 small chopped 

Seedless watermelon cubes – 1/4 cup 

Grapes – 1/4 cup

Chopped cilantro – 1/4 cup

Vinegar or lemon juice  – 2 tablespoon 

Almonds – 1/4 cup soaked and peeled 

Olive oil – 1 tablespoon, optional 

Salt and pepper to taste 

Chopped tomato, cucumber, onion and cilantro for garnishing



Method 


Taste the chopped cucumber. It shouldn’t be bitter. 

Combine all the ingredients. Blend in a mixer grinder. 

I have made it smooth but you can keep it little coarse if you like. 

I have used vinegar, you can use lemon juice too if you don’t like vinegar. 

Taste and adjust salt, pepper and vinegar or lemon juice if require. Drizzle olive oil. I didn’t. 

Garnish with chopped cilantro, tomato, cucumber and lemon wedges. 

Keep in refrigerator and serve chilled. Or you can add some ice cubes if you want to serve it immediately. 

Serve with crisp toast. 

Enjoy the delicious, refreshing and chilled gazpacho or cold soup.
