Mango Mint Coconut Lassi With Chia Seeds

Mango coconut lassi with chia seeds and coconut sugar. This chilled soothing and filling drink taste utterly delicious. Its mango season so try this delectable mango coconut lassi to beat the heat. You don’t need refined sugar to make it. I have used coconut sugar, you can also use honey, maple syrup, stevia, sugar or any sweetener of your choice.

Ingredients used to make this chilled lassi

Ripe mango – You can use any ripe mango to make this lassi. Better to use sweet variety lassi.

Curd or yogurt – Used homemade curd to make this lassi. You can also use store bought curd or Greek yogurt. But curd shouldn’t be sour. Check before using.

Fresh coconut – Grated fresh coconut taste great with ripe mango.

Mint leaves – Mint leaves used for a refreshing flavour.

Chia seeds – Used chia seeds for it’s nutritional value. You can skip if you don’t have or you don’t like.

Chia seeds may be small, but they’re incredibly rich in nutrients. A staple in the ancient Aztec and Maya diets, these seeds have been touted for their health benefits for centuries. The antioxidants, minerals, fiber, and omega-3 fatty acids in chia seeds may promote heart health, support strong bones, and improve blood sugar management. Healthline

Milk – Used milk to soak the chia seeds. You can also use any dairy free milk or water if you want.

Coconut sugar – Used coconut sugar as a sweetener. Coconut sugar or coconut palm sugar is a plant based natural sweetener. You can also use honey, maple syrup, stevia, sugar or any sweetener of your choice. If your mango is less sweet then add more sweetener. And if your mango is too sweet use small amount of sweetener.

Lemon juice – Lemon juice used for a refreshing flavour and taste.

Lemon zest – Little lemon zest used to give an extra zing. It will give a strong lemon flavour. You can skip it if you want.

Ice cubes – Ice cubes used to make the lassi chilled. Add less or more according to your choice. You can also add some ice cubes in the glass before serving. Or you can also skip the ice cubes and keep lassi in refrigerator for an hour to serve chilled.

You can also use Greek yogurt or any store bought yogurt but taste before using.

Recipe

Ripe mango – 1/2 cup, chopped

Curd or yogurt – 1 cup

Fresh coconut – 1/4 cup, grated

Mint leaves – 2 tablespoon

Milk – 1/3 cup

Chia seeds – 1 tablespoon

Coconut sugar – 1 tablespoon

Lemon juice – 1 teaspoon

Lemon zest – 1/4 teaspoon, optional

Ice cubes – 1/4 cup or as required

Method

1. Soak chia seeds in 1/3 cup milk for an hour.

2. Blend curd or yogurt, soaked chia seeds, grated fresh coconut, mint leaves, chopped mango pieces, coconut sugar, lemon juice, lemon zest and ice cubes in a blender.

3. Taste and add more coconut sugar and lemon juice if require. I had to add 1 tablespoon more coconut sugar because mango was not enough sweet. If your mango is sweet then add sugar accordingly.

4. Pour the lassi in your favourite glass. Garnish with scooped mango and mint leaves. Serve immediately or store in refrigerator to serve chilled.

Notes

1. You can skip chia seeds if you want. But chia seeds will make your lassi more nutritious.

2. Any sweetener can be used instead of coconut sugar.

3. Add sweetener according to your taste. Taste after blending and add more if required. Its depends on the sweetness of mango.

4. You can use any dairy free milk or water instead of milk.

Lemon juice – Vitamin C enriched lemon used to enhance the taste and a lovely refreshing flavour.

Pink or black salt, chaat masala and black pepper used for taste. But its completely optional. You can add only a pinch of pink or black salt and skip chaat masala and black pepper powder. For fasting days omit pink salt too.

You can soak the fennel seeds overnight in refrigerator. Soak the seeds in night and make the drink in next morning. If you want your drink less sweet then add little more water. Make this refreshing drink according to your taste.

Recipe

Fennel seeds or sounf – 2 tablespoon

Rock sugar or mishri – 1 piece

Mint leaves – 25-30

Water – 1 cup + 3/4 cup

Lemon juice – 1 teaspoon

Ice cubes – as require

Black pepper powder – 1/4 teaspoon, optional

Pink or black salt and chaat masala to taste, optional

Method

1. In a bowl soak fennel seeds or sounf and rock sugar or mishri with one cup water for 2-3 hours. You can also steep fennel seeds overnight in refrigerator.

2. When soaked strain the soaked fennel seeds with a sieve. Remove and discard the thread of mishri.

3. Transfer the seeds in a grinder jar. Add mint leaves and 1/4 cup water. You can use less or more mint leaves according to your taste. For light green colour add less mint leaves.

4. Grind into a smooth paste. Strain the mixture again. Add remaining half cup water and press with a spoon to strain well.

5. Add lemon juice and mix. Add salt, black pepper powder and salt in the strained fennel seeds water. This step is optional but it will enhance the taste. Taste and add little more water if its too sweet for you. Add some ice cubes in a glass.

6. Pour the drink over it. Serve chilled. You can also store the drink in a jar and keep in refrigerator for later use.

Honeydew melon/muskmelon/cantaloupe or kharbuj – 1 cup, chopped

Orange juice- 1 cup

Lemon juice- 2 tablespoon

Mint leaves- handful

Ice cubes as require

Method

1. Peel the honeydew melon or kharbuj and cut into half. Take out the seeds with a spoon. Discard the seeds and chop the melon into small pieces. I had lightly greenish honeydew melon but you can also use muskmelon or cantaloupe. Use whatever you have.

2. Wash the mint leaves well. Blend the chopped cantaloupe and mint leaves in a blender.

3. Add orange juice and lemon juice. Blend again till everything blend well. I have used freshly squeezed orange juice.

4. In a glass put some ice cubes. Pour the melon orange mixture over it. If you don’t want to use ice cubes, then keep the cooler in refrigerator for an hour and serve chilled.

5. Garnish with mint leaves and lemon wedges. Serve chilled or at room temperature. Enjoy…..

1. Peel and cut the carrot into thin slices. Peel and chop the banana roughly.

2. Combine everything and blend till smooth and frothy. You can use 1/4 to 1/2 cup thick coconut milk instead of coconut milk powder. Or use 1/4 cup fresh grated coconut. Add ice cubes if you want your smoothie chilled.

3. Taste and add little more lemon juice if require. Pour the mixture in your favourite glass.

4. Garnish with shredded almond and mint leaves. You can also garnish with lemon wedges.

Tisane Or Caffeine Free Herbal Tea

Tisane or caffeine free herbal tea with blue pea and chamomile tea, HolyBasil and mint. A refreshing and flavorful drink with numerous health benefits. Enjoy the delicious aromatic tea warm or chilled.

According to Wikipedia Herbal teas—less commonly called tisanes are beverages made from the infusion or decoction of herbs, spices, or other plant material in hot water. The term “herbal tea” is often used in contrast to true teas, which are prepared from the cured leaves of the tea plant, Camellia sinensis. 

Tisanes or caffeine free herbal tea can be served hot and cold both. I have used Organic Blue pea and chamomile tea bags or herbal infusion to make this tea. But if you don’t have blue pea tea then you can use any green tea bag. And I have Ceylon cinnamon dip bags or pouch so I used it. These herbal infusion bags are full of strong cinnamon flavour. But you can also use cinnamon powder if you want.

Ingredients used in this herbal tea.

1. Blue pea and chamomile tea. Blue Tea is made by seeping dried butterfly-pea flowers in water and can be enjoyed both hot and cold. It is also said to have weight loss benefits. Just grate the ginger before adding in the water. And instead of Cylon cinnamon dip bag you can use 1 teaspoon Cinnamon powder.

Recipe

Blue pea and chamomile tea bags or green tea bag – 2

Tulsi or HolyBasil – 15 leaves

Cinnamon dip bag – 1, or 1 teaspoon Cinnamon powder

Lemon – 4 slices

Dried ginger powder or fresh grated ginger – 1 teaspoon

Mint – 15 leaves

Rock salt – a pinch

Honey to taste, optional

Water – 4 cup

Lemon juice – 2 – 3 teaspoon or to taste

Method

1. Boil the water with tulsi or Holy basil leaves, dried ginger powder, rock salt and mint leaves for 5 minutes.

2. In a teapot place teabag and cinnamon pouch. Pour the boiled water with tulsi, mint leaves and dried ginger. Also add a few fresh tulsi, mint leaves and lemon slices.

3. Cover the teapot and let it steep for 5 minutes.

4. Now strain the tea in cup. Add honey and lemon juice to taste. Enjoy caffeine free refreshing and flavorful warm blue tea anytime. Or let it cool down and serve chilled with some ice cubes. Or refrigerate the tea and serve chilled.

1. If you don’t like your tea sweet skip honey.

2. You can use any sweetener instead of honey.

3. Green tea bag can be used instead of blue pea teabag.

You can call it a mixed fruit juice. Clean and wash the fruits properly and blend. And your healthy and delicious drink is ready. Serve it chilled by adding ice cubes or storing it in refrigerator. Or to serve room temperature serve immediately after blending.


Recipe

Dragon fruit – 1/2

Black grapes – 1/2 cup

Strawberry – 1/2 cup, chopped

Kiwi – 1/2 chopped

Tender coconut water – 1/2 cup

Lemon juice – 2 teaspoon


Method

1. Rinse all the fruits well.

2. Cut the dragon fruit into half lengthwise and scoop out the fruit with a spoon. Chop the strawberries.

3. Blend all the ingredients in your blender. Taste and add more lemon juice if require.

4. Pour the mixture in your favourite glass. You can add some ice cubes in the glass or keep the glass in refrigerator for an hour before serving.

5. Garnish with dragon fruit and kiwi slices and serve chilled. Enjoy your delicious chilled fruity drink to beat the heat.

Notes

1. You can use little sugar or honey with the fruits if you want, I didn’t. Its perfectly sweet for me without any sweetener.

2. A pinch of black or pink salt can be used while blending the fruits or stir in the glass.

Fruity Summer Cooler



Fruity summer cooler or fruit parfait with black grapes, strawberry and mango. You don’t need any sweetener to make this delicious fruit parfait. A super easy recipe that your kids can easily make and enjoy. Let’s introduce kids to the pleasure of making something for themselves.



Not only delicious but its also packed with nutrients because of three types of fruits. A glass with all the goodness of fresh fruits and without sugar or any sweetener. Glass looks beautiful, isn’t it? Clicked so many pictures 😀My daughter also couldn’t resist to click some pictures. Sharing two of her pictures. This week’s 290 #Foodiemonday bloghop theme is #RangBirange suggested by Sasmita who blog at First Timer Cook. Sasmita is a very talented blogger. You can get many wonderful recipes on her space. I recently bookmarked her unique Carrot chutney recipe to try.



Sasmita wants some colorful drinks. So here is a splash of colour for you in a healthy way. As I mentioned above recipe is very easy. I have used black grapes, mango and strawberry but you can use any fruits of your choice. Just crush the fruits separately with a fork and layer them in a tall glass. Keep the glass in freezer for 30 minutes to set the layers. Top with some chopped fruits and your fruit parfait is ready to serve. Enjoy chilled.



Recipe

Black grapes – 1 cup

Strawberry – 1/2 cup + for topping

Mango – 1/2 cup + for topping

Mint leaves to garnish



Method

1. Wash the fruits properly. Drain the water.

2. On a plate crush 1/2 cup grapes with a fork. Pour the crushed grapes into a tall glass.

3. Peel and chop the mango into small pieces. Crush the pieces with a fork. Layer the crushed mango over crushed grapes in the glass. See notes for more options.

4. Similarly crush the strawberry with fork and layer them over crushed mango.

5. Again crush remaining black grapes and make a layer over strawberry. Now make two thin layer of little crushed mango and strawberry. If you are using smaller glass then skip this step.

6. Keep the glass in freezer for 30 minutes to set. After 30 minutes take out the glass from freezer and top with chopped mango and strawberry. Garnish with black grapes and mint leaves.



Your colorful fruit parfait is ready to serve. Enjoy chilled. Stay healthy stay happy stay safe!

Notes

1. You can use any fruit of your choice.

2. You can also muddle some mint leaves and make a layer between the fruits.

3. Fruits are enough sweet so you don’t need any sweetener but you can add little powdered sugar or honey with crushed fruits if you like. Better to enjoy without any sweetener.

Herbal Tea

Herbal tea. Sharing my morning tea recipe today. Black tea with all the immunity booster ingredients. Every ingredient is full of numerous health benefits. You will love the aroma of boiling tea. No negative side effects shown of these common ingredients. But before using these supplements always talk to your doctor.

You can also try two more healthy drink Turmeric shot and Smoothie with turmeric and aloe vera .

These days everyone is taking kadha or different immunity booster food or drink using Ashwagandha, Giloy, Tulsi or Holy basil, cinnamon, nutmeg, raw turmeric, cumin, fennel seeds etc. I don’t have Ashwagandha so I didn’t use it. If you are living in a cold place then you can also add 1/4 teaspoon grated nutmeg or nutmeg powder.

I have used Tulsi or Holy Basil, Giloy stem, ginger, cinnamon, cardamom, bay leaf, black pepper and lemon juice with tea leaves.

Now let’s see the health benefits of these ingredients.

Tulsi or Holy Basil or Queen of herbs. Yes this herb called queen of herbs. I remember my mother used to give Tulsi leaves juice with honey daily to my daughter and she never had cold or cough.

Many studies support the use of the entire plant of holy basil for human use and its therapeutic value. Aruna suggested to share some herbal tea or anything with immunity booster ingredients. Aruna has a wonderful blog with different types of mouthwatering recipes. Her Chocolate and custard jelly cake and Sabudana coconut laddu is in my list to try. You can also visit her YouTube channel for recipe videos.

This recipe is for 3 cup of tea. You can increase or decrease the ingredients. You can also make it without tea and serve hot as kadha. Use black pepper powder or freshly crushed black pepper according to your taste.

Recipe

Tulsi or holy basil – 8 – 10 leaves

Tea leaves – 1 teaspoon

Ginger – 1 teaspoon grated or dry ginger powder

Cinnamon – 1 inch piece crushed or 1/2 teaspoon powder

Green cardamom – 2, crushed

Bay leaf – 1

Giloy stem – 1/2 inch

Cloves – 4 – 5 crushed or 1/4 teaspoon clove powder

Black pepper powder or freshly crushed black pepper – 1/8 to 1/4 teaspoon or to taste

Lemon juice to taste

Water – 4 cup

Method

1. Crush the giloy stem with a mortar pestle. You can use 1/2 inch stem more but remember giloy taste bitter.

2. Crush the cardamom, cinnamon and cloves. I have used cinnamon and clove powder. You can grind the cloves to make powder.

3. Tear up tulsi or holy basil leaves and bay leaf with your hands.

4. Mix all the ingredients with water in a pan or kettle.

5. Add black pepper powder to taste. I have used 1/8 teaspoon only.

6. Heat the pan or kettle. When it starts to rolling boil reduce the heat. Let it boil on low heat for 15 minutes.

7. After 15 minutes add tea leaves and switch off the heat. Steep the tea for 3 minutes. If you like strong tea boil for a few seconds more. Or if you like you can strain the tea immediately after removing from heat. I always steep the tea for 3 minutes.

8. Stir and strain the tea in teapot or cups. Add any sweetener of your choice. You can add jaggery powder, sugar, unrefined sugar, honey, stevia etc. Now add lemon juice and enjoy hot aromatic tea anytime.

Orange and grape juice with fresh turmeric, mint and lemon juice. A nutritious and delicious juice, perfect drink with your daily breakfast.

These days doctors advise everyone to take vitamin C enriched orange daily as a immunity booster. Grapes are also rich in vitamin C and A. So you can call it a immunity booster drink. Orange and grapes are naturally sweet so you don’t need to add any sweetener in it. I have made it 1 serving so used 1/2 cup grapes but you can use 1 cup grapes if you want. You can also increase the amount of turmeric. Use 1/2 to 1 teaspoon if you like the flavour.

Oranges are known for their high Vitamin C content. They are also rich in many anti-oxidants and carotenoids which are known to boost your immune system. A very easy to make yet delicious drink. You don’t need to add any sweetener because orange and grapes are naturally sweet. But you can add little pink salt if you want. I didn’t. Better to enjoy it without adding anything. You can also add more fresh turmeric if you like.

Recipe

Orange – 2,peeled

Grapes – 1/2 cup

Mint leaves – 2 tablespoon

Fresh turmeric – 1/4 teaspoon, paste or grated

Lemon juice – 1 teaspoon

Method

1. Discard the seeds of oranges.

2. Blend everything in a blender. Sieve the juice using a strainer.

3. Or take out the juice of orange using a juicer. Blend orange juice with grapes, fresh turmeric mint leaves and lemon juice. See notes for more options.

4. Pour the juice in your favourite glass. Garnish with lemon wedge mint leaves and grape. Serve immediately.

Notes

1. If you want to serve chilled, add some ice cubes or keep the juice in refrigerator for 30 to 60 minutes before serving.

2. You can use more fresh turmeric. If you like the flavour. 1/2 or 1 teaspoon grated or paste can be added.

3. You can also use 1 cup grapes instead of 1/2 cup.

Mint Orange Lassi

Everyone stay home stay safe. This time we have to make something delicious and nutritious with easily available ingredients. Sharing a delicious fruity lassi to satisfy your sudden hunger pangs or sweet cravings.

Mint orange lassi with honey. Different but a very delicious and filling drink with yogurt, orange juice, banana and mint leaves. You will also love the flavour. This lassi is also great for fasting days. Banana and yogurt made this lassi filling. Lassi is also very flavorful because of mint and orange.

Mayuri wisely suggested lassi this week. From yesterday maximum state of our country under lockdown. Praying for everyone’s well being. Stay safe stay healthy. This lassi is very filling and delicious. And also easy to make. Just combine everything and blend. You can enjoy it room temperature or chilled. You can add some ice cubes in the glass or use everything chilled. I have used chilled yogurt so didn’t use ice cube. Or keep the lassi in refrigerator to be chilled. Always use thick yogurt. I have used homemade yogurt but you can also use store bought. Banana is optional, you can skip it. But I recommend to add banana. Banana will make your lassi filling and more delicious.

Recipe

Yogurt – 1 cup

Orange juice – 1/2 cup

Orange zest – 1/2 teaspoon

Mint leaves – 2 tablespoon

Banana – 1

Honey – 1 & 1/2 tablespoon or to taste

Method

1. Peel and chop the banana. Rinse the mint leaves well.

2. In a blender add yogurt, orange juice, orange zest, mint leaves, chopped banana and honey. Blend till smooth and frothy.

3. Taste and add more honey if require. Blend again. For more sweetener option see notes.

4. Pour the lassi in your favourite glass. You can add some ice cubes if you want. Garnish with mint leaves and pistachios. Serve chilled or room temperature.

Notes

1. You can use 1 tablespoon more mint leaves if you want.

2. You can use any sweetener like sugar, stevia etc.

3. Add honey according to your taste.

4. For chilled lassi add some ice cubes in the glass before pouring lassi. Or use chilled yogurt. Or keep the lassi in refrigerator for 30 to 60 minutes before serving.
