Semolina Or Suji Quesadilla

Semolina or suji quesadilla. You can name it Indian style quesadilla. Quesadilla is a Mexican dish made of tortilla. But here is a breakfast Quesadilla made with suji pancake or our humble suji chilla. A perfect kids friendly breakfast dish. You can make any veg or non veg stuffing instead of potatoes with lots of cheese. Kids will love the taste. 

A quesadilla is a Mexican dish consisting of a tortilla that is filled primarily with cheese, and sometimes meats, spices, and other fillings, and then cooked on a griddle or stove. Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla. A full quesadilla is made with two tortillas that hold a layer of cheese between them. A half is a single tortilla that has been filled with cheese and folded into a half-moon shape. Wikipedia

As I mentioned above you can make any filling of your choice. I have made a creamy stuffing with boiled potatoes, mayonnaise, some sauce, oregano and cheese. You can use any herbs and lots of mozzarella cheese. Your kids will love the taste. You can also use grated vegetables or paneer in the stuffing. You can also use any sauce of your choice instead of pizza sauce.

I like the taste of sriracha sauce but if you don’t have sriracha sauce then you can use any chilli garlic sauce. You can also use leftover roti instead of suji chilla. See the video recipe below of this roti quesadilla.

Recipe

For stuffing

Potato- 4 medium, boiled 

Mayonnaise – 1/3 cup 

Pizza sauce – 3 tablespoon 

Oregano – 1 teaspoon 

Tomato sauce – 2 tablespoon 

Sriracha sauce – 1 tablespoon 

Cheese cube – 2

Salt – 1/4 teaspoon or to taste 

For chila or pancake 

Semolina or suji – 1 cup

Rice flour – 1/2 cup

Curd or yogurt – 1/2 cup 

Salt to taste 

Chilli flakes – 1/2 teaspoon 

Cilantro or coriander leaves – 2-3 tablespoon, chopped 

Water – 1 cup 

Oil as required 

Cheese slices or mozzarella cheese as required 

Method

1. In a large bowl mix suji or semolina, rice flour and curd or yogurt. Add water slowly and mix well. Don’t add entire water in one go. Add 1/4 cup at a time. Mix everything well and make a lump free smooth batter.

2. Now add salt, chilli flakes and chopped cilantro or coriander leaves. Mix well. Cover the bowl and keep aside. 

3. Peel and grate the potatoes. Grate the cheese cubes and mix with potatoes. You can use more cheese cubes if you want.

4. Add salt, oregano, sriracha sauce, mayonnaise, tomato ketchup and pizza sauce. Mix well. Your stuffing is ready.  Taste and adjust the seasoning. Add little more sauce and mayonnaise if required. Add less or more sauce according to your taste.

5. You can use any chilli garlic sauce if you don’t have sriracha sauce. You can add finely chopped onion in potato mixture if you want. You can also make sandwiches with this potato mixture. 

6. Heat a pan or skillet. Brush with little oil. Pour a ladle full of batter in the middle. Spread with the back of the ladle by rotating. Reduce the heat and cook on low heat.  Drizzle little oil on the sides.

7. When the edges becomes brown flip the chila upside down and fry the other side too. Remove the chilla or pancake on a plate. Make one more pancake like this.

8. Spread potato mixture all over the pancake.   Spread small pieces of cheese slice over the potato mixture. You can also use grated mozzarella cheese. Use as much cheese as you like.

9. Place another pancake over it and flip carefully. Drizzle little oil on the sides. Press gently with a spatula. Fry both the sides till golden brown.  Remove on a plate and cut into four pieces with a knife or pizza cutter.  Serve hot with any sauce.

10..You can also use leftover roti instead of chilla or pancake to make this delicious Indian style quesadilla.  Do you have any leftover stuffing? Make sandwiches with it. It will be a delicious sandwich filling.

Notes

1. You can use any flour in chilla or pancake. But don’t skip rice flour. Rice flour will make your quesadilla crisp.

2. You can use any sauce of your choice in stuffing.

3. Grated carrot, capsicum, bell peppers, boiled sweet corn or any vegetable or paneer can be used in stuffing.

4. If your kids love cheesy stuffing then add more cheese. Use as much cheese as you like.

Lemon Potato With Sesame Seeds

Lemon potato with sesame seeds. This tangy spicy lemon flavoured dry potato curry can be served as a side dish or also as a snack. Very simple ingredients and easy to cook but taste is scrumptious. Serve as teatime snack with toothpick.

Recipe is very simple and easy. If you want to make it gluten free skip hing or asafoetida. I used hing as tempering or tadka with cumin seeds and dry red chilli. Use only cumin seeds and dry red chilli if you want.  Lemon juice, lemon zest and little curd or yogurt made this dish perfectly tangy and tasty. This lemon potato is in one word chatpata or lipsmackingly delicious and absolutely flavorful because of cumin powder, mint and cilantro or coriander leaves. These potatoes can be also served as snacks. Serve with toothpick with tea or coffee. Or simply enjoy your munching time.

Recipe

Potato- 14 small, boiled 

Sesame seeds – 1&1/2 tablespoon

Cumin seeds – 1/2 teaspoon 

Hing or asafoetida – 1/4 teaspoon 

Dry red chilli – 1

Ginger – 1/2 inch piece, grated 

Green chilli – 2, finely chopped 

Oil – 2 tablespoon 

Salt to taste 

Curd or yogurt – 2 tablespoon 

Cumin powder – 1 teaspoon 

Coriander powder – 1 teaspoon 

Kashmiri red chilli powder – 1 teaspoon

Turmeric powder – 1/2 teaspoon 

Cilantro or coriander leaves – 2 tablespoon, chopped 

Mint leaves – 7-8 chopped, optional 

Slit green chili – 1-2, optional 

Water – 2  tablespoon 

Lemon juice – 2-3 teaspoon 

Lemon zest – 1/4 teaspoon

Bhaja moshla or dry roasted spice powder – 1/2 teaspoon 

Method

1. Dry roast the sesame seeds till light brown. Transfer the seeds on a plate. 

2. Peel and cut the boiled potatoes into half. If you have too small potatoes then use whole potatoes. Just prick the potatoes with a fork. Or you can also use cubed large size boiled potatoes. 

3. In a bowl mix thick curd or yogurt with cumin powder, coriander powder, turmeric powder and Kashmiri red chilli powder. Whisk everything well and keep aside. 

4. Heat oil in a pan. Add cumin seeds, hing or asafoetida and dry red chilli.  When cumin seeds starts to splutter add grated ginger and chopped green chilli. Fry till ginger starts to change it’s colour. 

5. Add potatoes and salt. Saute till potatoes becomes light golden brown. Keep stirring to avoid sticking to the bottom. 

6. Reduce the heat and add spices mixed curd or yogurt, water, chopped cilantro or coriander leaves, mint leaves and dry roasted sesame seeds. Reserve some sesame seeds for garnishing.

7. Also add 1-2 slit green chilli if using.  Saute till everything about to dried up. Keep stirring and cook on simmer to avoid curdling the yogurt.

8. Add lemon juice and lemon zest. Mix well.  When potatoes dried up completely add roasted spice powder. Get the Recipe of roasted spice powder here.

9. Mix well and remove from heat. Taste and adjust salt if required.  Your spicy chatpata delicious lemon sesame potatoes are ready to serve.

10. Garnish with cilantro or coriander leaves, mint leaves and dry roasted sesame seeds.  Serve with any bread, puri, paratha or dal chawal. Or you can serve this as a snack. To serve as teatime snack or starter serve with some toothpick

Cheesy Rice Ball

Cheesy rice balls. A delicious cheese stuffed rice balls with Italian herbs made with leftover rice. Its a kids friendly dish but adults will also love the taste of these balls. You can also make it without stuffing if you don’t like cheese much. Use herbs whatever available or whatever you like and makeover your leftover rice into a tasty snack.

Ingredients used to make these rice balls

Cooked rice – I Used 2 cup tightly packed leftover rice. Cooked rice with herbs taste great. 

Salt – Salt used to enhance the taste. Cheese is also slightly salty so one teaspoon is sufficient. You can taste the dough after mixing everything to check if require more.

Lemon juice – I used one and half teaspoon lemon juice for flavour and slightly tangy taste. You can add little more if you want.

Oregano – Oregano used to give a lovely flavour. You can use any herbs of your choice. 

Onion powder – Onion powder also used to enhance the taste. If you don’t have onion powder then you can use one finely chopped onion. 

Garlic powder – Garlic powder used for taste and garlicky flavour. I don’t like garlic much so used only half teaspoon. You can add 1-2 teaspoon if you like garlicky taste and flavour.

Chilli flakes – Chilli flakes used to give a spicy kick. You can skip or add more if you want. Use according to your taste.

Black pepper powder – Black pepper powder used for peppery flavour and mildly spicy taste. You can use little more if you like.

Rice flour – Rice flour used for binding and it will also make your rice balls crispy. 

Cornflour – Cornflour also use for binding. You can use breadcrumbs instead of cornflour.

Processed cheese cubes – I had Amul processed cheese cubes so I used it. You can also use grated cheddar cheese or mozzarella cheese.

You can use grated mozzarella cheese with rice and for stuffing.  These cheesy rice balls taste scrumptious but very easy to make. Just mix everything, make balls and fry. Cheese stuffing is completely optional. You can make these without cheese stuffing if you want. I often make without cheese stuffing. Use little grated cheese with rice only. You can also use Indian spices in rice dough. Add cumin powder, garam masala powder, amchur and chaat masala instead of oregano. You can also use finely chopped green chilli if you want.

Recipe

Cooked rice – 2 cup tightly packed

Processed cheese cubes – as required

Method

1.  Mash the cooked rice well. Add salt, lemon juice, oregano, onion powder, garlic powder, black pepper powder, rice flour, cornflour and Chilli flakes if using. You can add 1 teaspoon garlic powder if you want.

2.  Mix everything well. Cooked rice becomes like a dough. You can use finely chopped 1 onion instead of onion powder. See notes for more options. 

3. Add 1 grated processed cheese cube and mix everything well with your hand. Taste and adjust the seasoning.  Make equal size balls. I made 7 balls with this dough. 

4. Flatten the balls with your palm. Cut the cheese cube into 6 equal pieces. Place a piece of cheese cube in the middle. Gather the edges and make a ball again. Make all the cheese stuffed balls. 

5. Heat sufficient oil in a pan or wok. Fry the balls on medium heat till golden brown from all the sides. Don’t over crowd. Fry 3-4 balls at a time. 

6. When balls becomes golden brown take out the balls with a slotted spoon and place on a plate.  Serve immediately as a teatime snack or starter. 

Notes

1. Use more garlic powder if you like garlicky taste. 

2. Use chilli flakes and black pepper powder according to your taste. Skip if making for kids. 

3. Cheese stuffing is completely optional. I sometimes make it without cheese stuffing. These rice balls will be taste great in both ways. 

4. Breadcrumbs can be used instead of rice flour and cornflour.

5. You can also use grated cheddar cheese or mozzarella cheese instead of cheese cubes.

6. Indian spices can be used instead of Italian herbs. You can use cumin powder, garam masala powder, amchur and chaat masala instead of oregano. You can also use finely chopped onion and green chilli if you want.

Mushroom Spinach Cheese Sandwich

Mushroom spinach cheese sandwiches. Grilled sandwiches with creamy cheesy delicious stuffing. Sauteed mushrooms and spinach made these sandwiches filling and delectable. And sriracha sauce made the sandwiches perfectly spicy.

Earlier shared Easy quick egg sandwich here but this spinach mushroom sandwiches different in taste and flavour. Both are absolutely delicious but this one is completely vegetarian.

Ingredients used to make stuffing

Mushroom – Low calorie and nutritious mushrooms made this sandwich delicious. I used my mini chopper to finely chop the mushrooms because my husband don’t like mushrooms at all. So I always use minced or finely chopped mushrooms in some dishes and he always happily enjoy the dish without recognizing mushrooms. But you can use thinly sliced mushrooms if you want.

Baby Spinach – This leafy green vegetable taste great. Tender leaves are easy to cook and give a slightly sweet taste. And it also has so many health benefits. I blanched the spinach leaves before using.

How to blanch spinach

Rinse the spinach leaves well to remove all the dirt. Heat sufficient water in a pot. Keep a pot with cold water ready. When water starts to rolling boil add the spinach. Let it boil for 3-4 minutes. Leaves will becomes dark in colour after blanching. Immediately remove the spinach from hot water and place in the pot of ice cold water to retain the colour. Take out from the water before chopping.

Onion And Garlic to enhance the taste and flavour.

Sweet corn – Succulent and delicious boiled sweet corn taste mildly sweet and also enhance the taste of your stuffing.

Scallion – Mild taste and flavour of this green long leaves will also enhance the taste and flavour of stuffing.

Salt – Salt used to give savoury taste. Add salt according to your taste.

Black pepper powder – Use black pepper powder to give a lovely aroma and mild heat. You can also use freshly crushed black pepper. Add black pepper powder 1/2 to 1 teaspoon as per your taste.

Fresh cream – Little fresh cream will give a creaminess and enhance the taste. I used Amul fresh cream.

Tomato ketchup – tomato ketchup will give a sweet tangy taste to the stuffing.

Sriracha sauce – Sriracha sauce added to give a spicy kick. Spicy sweet tangy taste of this sauce will make your stuffing lipsmackingly delicious. You can also use any chilli garlic sauce if you don’t have sriracha sauce.

Chilli flakes – Little chilli flakes used to make the stuffing spicy. But its optional, you can skip it if you want.

Cheese – I used cheddar and mozzarella cheese mixed. I have a pack a mixture of both cheese. And this taste great. Used to give a cheesy delicious taste. You can use processed cheese or any cheese of your choice. Used 1/2 cup in stuffing and some to sprinkle over the stuffing. You can always use more cheese if you want. Add as much cheese as you like.

Butter And Olive oil – Used 1 tablespoon butter and 1 tablespoon olive oil for sautéing the stuffing. You can use only butter or only oil if you want. You can also use any other oil instead of olive oil.

Bread – You can use white bread, brown bread, multigrain bread, gluten free bread or any bread of your choice.

If you have the stuffing ready then you can make the sandwiches in a jiffy. You can make the stuffing one day before and store in refrigerator to make the sandwiches for breakfast or lunch. Even you don’t need any chutney or sauce in side to serve these sandwiches or to spread on bread. Because stuffing taste delectable on it’s own. Sauteed mushrooms and spinach and fried onion garlic with sweet corn, scallion, oregano and sriracha sauce, ketchup, butter, cheese and little fresh cream made these sandwich stuffing perfectly spicy creamy cheesy and lipsmackingly delicious.

Recipe

Mushroom – 200 gram

Baby Spinach- 200 gram, blanched

Onion – 2 medium, finely chopped

Garlic – 3, minced

Sweet corn – 1/2 cup, boiled

Scallion or onion green – 2 finely chopped

Salt to taste

Black pepper powder – 1/2 teaspoon or to taste

Fresh cream – 2 tablespoon

Sriracha sauce – 1&1/2 tablespoon

Oregano – 1 teaspoon

Chilli flakes – 1/2 teaspoon

Tomato ketchup – 2 tablespoon

Cheese – 1/2 cup, grated + to sprinkle

Olive oil – 1 tablespoon

Butter – 1 tablespoon

Bread as required

Method

1. Chop the blanched baby spinach finely. Chop the mushrooms finely. I used my mini chopper. You can grate or thinly slice the mushrooms.

2. Heat 1 tablespoon oil and 1 tablespoon butter in a pan. Add minced garlic and finely chopped onion. When onion becomes light brown add mushrooms.

3. Mushrooms will release water. When mushrooms about to dried up add chopped scallion and saute till dried up completely. Add blanched and chopped spinach. Mix and add boiled sweet corn.

4. Add salt, black pepper powder, fresh cream, sriracha sauce, oregano, chilli flakes and tomato ketchup. Saute till everything blend well and dried up.

5. Now add sriracha sauce, mix and remove from heat. Taste and adjust the seasoning. Let the mixture cool down a bit. Add 1/2 cup grated cheese and mix well.

6. Spread the mushroom spinach mixture on a bread slice. Sprinkle some grated cheese over it. Place a bread piece over the cheese and press gently. Make all the sandwiches like this.

7. Heat little butter or oil in a grill pan. Place sandwich on the pan. Toast on low heat till one side becomes light brown. Flip and turn the sandwich upside down and toast the other side too. Make all the sandwiches. Serve hot with any sauce or chutney. You can also use sandwich toaster to toast the sandwich.

Notes

1. You can use mayonnaise in the stuffing if you want.

2. Any chilli garlic sauce can be used instead of Sriracha sauce.

Seeds Date Oats Cookies

Oats cookies with mixed seeds, almond and sabja or basil seeds. You don’t need sugar or jaggery to make these cookies. Cookies are sweetened with dry dates powder. Enjoy the delectable taste with milk, tea or coffee. Or make large size cookies to serve as breakfast cookies.

These healthy, delicious and crispy crunchy cookies are perfect for health watchers and kids. I have used sabja or basil seeds as egg replacement. First grind and make a powder of sabja or basil seeds then soak in water for 10-15 minutes, your egg substitute is ready. Basil seeds are high in fiber, a good source of minerals, rich in plant-based omega-3 fat, and plentiful in beneficial plant compounds. Basil seeds are a little larger than chia seeds but have a similar nutritional profile. Source – Healthline

Roasted mixed seeds will give a nice crunch to your cookies and also make it healthy. This time I have a pack of roasted mixed seeds, including roasted pumpkin seeds, sunflower seeds, muskmelon seeds and flax seeds. I also used it in delicious Jaggery oats sesame cookies. Earlier I had a packet of roasted sunflower, pumpkin, flax, watermelon, chia and gojiberries seeds. Which I used in Wholewheat milk bread with mixed seeds,

Mango raisins overnight oats and

Gluten free bread with garlic and mixed seeds.

You can use whatever you have. Seeds are great sources of fiber. They also contain healthy monounsaturated fats, polyunsaturated fats and many important vitamins, minerals and antioxidants. As I mentioned above I didn’t use sugar or jaggery. Cookies are sweetened with dry date powder. And I love to cook or bake with this date powder. A healthier alternative of sugar or jaggery. Now coming to the recipe. You don’t need to whisk or cream the butter first. Just combine everything, make a smooth dough, give shape and bake. You can use oatmeal if you have. I have used ground rolled oats. Also used little whole oats with roasted mixed seeds to give the cookies a crunchy texture. Dry date powder made these cookies perfectly sweet for us. But if you want your cookies sweeter then you can add 1-2 tablespoon more date powder. Taste the dough and add as require.

Recipe

Oats – 1 cup

Sabja/basil seeds – 1 tablespoon

Water – 3 tablespoon

Ghee/clarified butter or butter – 3 tablespoon

Roasted mixed seeds – 4 tablespoon

Dry date powder – 1/4 cup

Almond – 12-14

Desiccated coconut – 4 tablespoon

Cinnamon powder – 1/4 teaspoon

Baking powder – 1/2 teaspoon

Milk – 1 tablespoon

Vanilla essence – 1/2 teaspoon

Method

1. Grease or line a baking tray. Preheat the oven at 170°.

2. Grind the sabja or basil seeds in your mixer grinder. Take out in a large bowl and add 3 tablespoon water. Keep aside for 10-15 minutes. Sabja seeds powder will soak all the water within 5 minutes.

3. In the same grinder grind almond and place on a plate. Now grind 3/4 cup rolled oats into fine powder. Reserve 1/4 cup oats to use whole.

4. In the bowl of soaked sabja seeds powder add all the ingredients. And make a smooth dough. Don’t knead much. Just combine everything well.

5. I like my cookies lightly sweetened. Taste the dough before making balls. If you want your cookies sweeter then add 1-2 tablespoon more date powder if required.

6. Make small balls and press gently with your palm. Arrange the cookies on greased or lined baking tray one inch apart. You can make these cookies small or large size breakfast cookies. I have made 13 small cookies. Press the cookies again with a fork or spoon to make flat.

7. Bake in preheated oven at 170° for 12 minutes or till the edges becomes brown.

8. Let the cookies cool down completely before serving. Cookies will soft when hot and becomes crisp after cooling. Serve these healthy and yummy cookies with milk, tea or coffee. Nutritios cookies are also great to satisfy your sudden hunger pangs or for your sweet craving.

Millet Soyabean Cutlets Slim/Air Fried Cutlets

Millet soybean cutlets. Kodo millet soybean cutlets are slim fried in microwave with only two teaspoon oil. One teaspoon oil to grease the crusty plate or baking tray and one teaspoon to brush over the cutlets. You can also use your air fryer to fry these cutlets. Or you can also bake the cutlets in oven or halogen oven at 200° or shallow fry. Sharing all the methods. Cooked kodo millet and soybean with spices and lemon juice made these cutlets delicious. Potatoes are used for binding. You don’t need breadcrumbs or any flour. You can also use sweet potatoes instead of potatoes if you want.

These super healthy gluten free cutlets can be served as party starter or as a teatime snack. Or enjoy it as nutritious and filling breakfast dish with any sauce or chutney. Kodo millet and soybean have an impressive amount of protein and vitamins. Vegan people can skip cheese, I had used cheese only in two cutlets for my kids. Using cheese is completely your choice. According to Healthline Although anyone can reap the nutritional benefits of eating millet, it’s been shown to be especially beneficial for diabetes management, making it one of the better whole grains for managing blood sugar. Millet is a good choice for diabetes due to its high fiber content. Fiber helps slow digestion. As a result, sugar enters the bloodstream slowly, lessening the risk of a blood sugar spike.

Potatoes are a versatile and delicious vegetable that can be enjoyed by everyone, including people with diabetes. However, because of their high carb content, you should limit portion sizes, always eat the skin, and choose low GI varieties, such as Carisma and Nicola. They’re rich in potassium and B vitamins, and the skin is a great source of fiber. However, if you have diabetes, you may have heard that you should limit or avoid potatoes. The truth is, people with diabetes can eat potatoes in many forms, but it’s important to understand the effect they have on blood sugar levels and the portion size that’s appropriate. But as I mentioned above you can always use sweet potatoes instead of potatoes. So these cutlets are gluten free, vegan and diabetic friendly. You have to rinse and soak the soybean overnight like chickpeas rajma etc. Next day pressure cook with 1&1/4 cup water. After one whistle reduce the heat and cook for 20-25 minutes or till soybean becomes soft and easy to mash. Don’t discard the remaining nutritious water of boiled soybean if any. Either cook till water absorbed completely or use the water in soup or other dishes.

You can cook kodo millet as you cook rice. Soak in water for 15-20 minutes drain and cook with double amount of water. Use 1 cup water for 1/2 cup kodo millet. You can also use pressure cooker to boil the kodo millet. Pressure cook for 2 whistle. For open pot,when water starts to rolling boil reduce the heat, cover the vessel and cook on simmer for 10-15 minutes or till moisture evaporate and millet becomes soft. Add spices according to your choice. To make your cutlets more spicy add more chopped green chilli or you can also use red chilli powder.

Recipe

Kodo millet – 1/2 cup

Soyabean – 1/2 cup

Potato – 3 medium, boiled

Onion – 2 medium, finely chopped

Green chilli -2-3 or to taste, finely chopped

Ginger – 1 inch piece, grated

Cilantro or coriander leaves – handful, chopped

Salt – 1&1/2 teaspoon or to taste

Black salt to taste

Cumin powder – 1 teaspoon

Garam masala powder – 1/2 teaspoon

Chaat masala powder – 1 teaspoon

Lemon juice – 1&1/2 teaspoon

Cheese as require, optional

Method

1..Rinse and soak soybean overnight in enough water. Next day rinse again and pressure cook with 1&1/4 cup water. After one whistle reduce the heat and cook on simmer for 20-25 minutes or till soybean becomes soft. Let the pressure settle down on its own. Open the lid and cook again till all the moisture evaporate if any.

2. Wash the kodo millet well on a colander or sieve. Soak in water for 15-20 minutes. Cook with one cup water till water absorbed and millet becomes soft. You can also pressure cook the kodo millet if you want. Peel the boiled potatoes.

3..Mash the boiled potatoes, kodo millet and soybean with a potato masher or your hand. Make lump free smooth dough. You can use your mixer grinder to grind the boiled soybean. If you find it difficult to mash. But don’t add water.

4. Add chopped onion, green chilli, cilantro or coriander leaves, grated ginger, salt, black salt, lemon juice and all the spices. Mix everything well. Taste and adjust the seasoning. You can add more green chilli if you want your cutlets more spicy or you can also use red chilli powder.

5. Make equal size balls and press with your palm to make flat patties. Shape the cutlets.

6. I made two large size cutlets and stuff with a piece of mozzarella and cheddar mixed cheese. Also sharing the pictures of cheese stuffed cutlets after frying.

7..Grease the crusty plate with 1 teaspoon oil. Arrange the cutlets on crusty plate. Brush the cutlets with little oil. Fry the cutlets in microwave slim fry mode. Set as instructed for veg cutlets. After beeping sound flip the cutlets upside down and press the start button. If cutlets are not perfectly brown cook for a few minutes again on slim fry mode. I had to cook for 5 minutes more.

8. You can also bake the cutlets in your preheated oven at 200° for 10-15 minutes or until cutlets becomes golden brown from both sides.

9. For halogen oven press speed up button. Set the temperature at 200°. Bake for 10 minutes or till upside becomes brown. Flip the cutlets upside down and bake again at 200° for 5-6 minutes or till cutlets becomes golden brown.

10. Or use your air fryer. You can also shallow fry the cutlets from both sides till golden brown.

Notes

1. You can use boiled sweet potatoes instead of potatoes.

2. You can also use cooked quinoa in the cutlets.

Easy Quick Egg Sandwich

Easy quick cheesy egg sandwich. If you have boiled eggs and potatoes ready then you can make these sandwiches in a jiffy. Vegetarian people can skip eggs and make this with only potatoes. Different types of sauce and mayonnaise with potato and eggs will make these sandwiches absolutely delicious.

Today sharing a most favourite sandwich of my kids. Here is a recipe with two different methods to make the sandwiches. Both taste slightly different. I am sure you will love both the way. I didn’t use lettuce this time. But you can place lettuce over egg potato stuffing if you have. You can use sriracha sauce or any chilli garlic sauce instead of schezwan sauce. Use sauce according to your taste. You can add 1-2 finely chopped green chilli in the stuffing if you like your sandwiches more spicy. But if you are making for kids reduce the amount of chilli and schezwan sauce or skip and add tomato sauce or any sweet and sour sauce.

You can use 2-3 tablespoon more mayonnaise if you like. I had used grated cheese cubes in the stuffing. You can use mozzarella, cheddar or mix of both or whatever you have. Add as much cheese as you like. You can also make a layer of thinly sliced onion, cucumber and tomato if you want to make your sandwiches colorful and you like the taste. Sprinkle little salt and pepper powder over the slices. You can also drizzle little lemon juice if you want.

Recipe

Potato – 3

Egg – 3-4

Onion – 1 large, finely chopped

Mayonnaise – 5 tablespoon

Pizza sauce – 2 tablespoon

Chilli sauce – 1&1/2 tablespoon

Schezwan sauce – 2 tablespoon, optional

Oregano – 2 teaspoon

Salt – 1 teaspoon or to taste

Black pepper powder – 1/2 teaspoon or to taste

Cheese cube – 2-3

Green chutney to spread on bread Bread as required

Cheese slices as required

Butter or oil as required

Method

Peel the boiled potatoes and eggs. Grate the eggs and potatoes.

For first method

1. Mix grated potatoes and eggs. Add all the sauce, finely chopped onion, salt, grated cheese cubes, oregano and mayonnaise. Taste and adjust the seasoning.

2. You can add 1-2 tablespoon more mayonnaise if you like. Mix everything well. See notes for options to make your sandwiches more spicy.

3. On a bread piece spread a thick layer of egg and potato mixture. Place cheese slice on it.

4..You can make a layer of lettuce, thinly sliced cucumber, tomato and onion over the egg potato mixture if you want.

5. Take one more bread and spread green chutney or any chutney of your choice.

6. Place the bread on cheese slice. Keep chutney side down. You can make 10-11 sandwiches with this egg potato mixture.

7. Toast the sandwich on a pan from both sides with little butter or oil till golden brown.

Second method

1. Grate the boiled potatoes. Add all the sauce, grated cheese cubes, mayonnaise, oregano and 1/2 teaspoon salt or to taste. Add less amount of salt than above because we are using only potatoes. Taste and adjust the seasoning.

3. Spread a layer of potato mixture. Grate boiled egg above potato. Sprinkle black pepper powder and pink or black salt over the grated egg. I used pink salt. Vegetarian people can skip this step. Place cheese slice over it.

4. Spread green chutney or any chutney on a bread. Place it on the cheese slice chutney side down. Make sandwiches as above method.

5. Serve hot with any sauce, ketchup or chutney. Sandwiches have different sauce and absolutely delicious so you can enjoy the sandwiches without any sauce or chutney.

Notes

1. Sriracha or any chilli garlic sauce can be used instead of schezwan sauce. Use whatever you have.

2. You can use finely chopped green chilli in the stuffing if you want your sandwiches more spicy or you like the flavour of green chilli. To reduce the hotness soak finely chopped green chilli in 1-2 teaspoon lemon juice for a few minutes before adding in the stuffing. Take out the green chilli from lemon juice and add.

3. You can use more mayonnaise if you like.

4. Add as much grated cheese as you want. You can use mozzarella, cheddar or mix of both cheese or use whatever you have instead of cheese cubes.

5. You can also make the stuffing with only egg or only potato.

6. You can make a layer of thinly sliced onion, cucumber and tomato if you want. Sprinkle little black or pink salt and pepper powder over it. You can also drizzle little lemon juice over these slices.

Soyabean Egg Casserole

Soybean egg casserole. A delicious, nutritious and wholesome meal. Just combine everything and bake, your filling comforting and tasty meal is ready in 30-40 minutes if you have the ingredients like boiled soybean etc are ready in advance. You can call it a protein packed casserole because its made with eggs and soybean. Both are enriched with protein and vitamins. Earlier shared Egg corn cottage cheese casserole here.

What is casserole

According to Wikipedia A casserole is a variety of a large, deep pan or bowl used for cooking a variety of dishes in the oven; it is also a category of foods cooked in such a vessel. To distinguish the two uses, the pan can be called a “casserole dish” or “casserole pan”, whereas the food is simply “a casserole”.

Now here is nutritious casserole recipe for you. You can also use bell peppers, capsicum or any vegetable of your choice. And topping is entirely depends on your choice. You can use sliced onion or tomato for topping. I used onion green from my terrace garden.

Soybeans are high in protein and a decent source of both carbs and fat. They are a rich source of various vitamins, minerals, and beneficial plant compounds, such as isoflavones. Eggs are one of the few foods that should be classified as “superfoods.” They are loaded with nutrients, some of which are rare in the modern diet. Eggs are among the most nutritious foods on the planet. Eggs are an excellent source of protein, with a single large egg containing six grams of it. Eggs also contain all the essential amino acids in the right ratios, so your body is well-equipped to make full use of the protein in them. To make this casserole you have to boil overnight soaked soybean and a peeled and chopped potato first. After boiling mash well. Grind the semolina or suji with curd or yogurt. I have used homemade curd. Use everything in room temperature. Milk should be lukewarm. I have used Italian seasoning but you can use any seasoning of your choice. Even you can use Indian spices. Add seasoning according to your taste. You can use any flour instead of semolina or suji. And if you are using flour then no need to grind. Just mix with all the other ingredients. You can use as much cheese as you like. If you’re making for kids add more cheese. Kids love cheesy taste, right?

Recipe

Soyabean – 1/2 cup

Egg – 4-5

Potato – 1 medium

Sweet corn – 1/2 cup

Onion – 1, finely chopped

Garlic – 4 cloves, finely chopped

Green chilli – 1, finely chopped

Olive oil – 4 tablespoon

Semolina or suji – 3/4 cup

Curd or yogurt – 1/2 cup

Milk – 1/2 cup

Pizza sauce – 3 heaped tablespoon

Salt – 1&1/2 teaspoon or to taste

Black pepper powder – 1 teaspoon or to taste

Baking powder – 1 teaspoon

Oregano – 1 teaspoon

Dried basil – 1/2 teaspoon

Cheese cube – 2-3, grated

For topping

Onion green – 1, chopped

Pickled Jalapeno

Olive slices

Sweet corn

Grated cheese

Method

1. Rinse the soybean well and soak in sufficient water overnight.

3. Peel and chop the potato roughly.

4. Grease a baking dish with oil.

5. Drain the water and rinse the soybean again. Cook in a pressure cooker with roughly chopped potato and 2 cup water. After 1 whistle reduce the heat. Pressure cook on simmer for 25-30 minutes or till soybean becomes soft. Let the pressure settle down on its own.

6. Open the pressure cooker and cook again till all the moisture evaporate if any. Take out the boiled soybean and potato in a plate or bowl. Mash with potato masher or with hand.

7. Finely chop 1 onion, 4 garlic and 1 green chilli. You can add more garlic and green chilli if you like.

8. Heat 2 tablespoon oil in a pan. Add garlic and fry for a few seconds. Add finely chopped onion and green chilli. Fry till onion becomes brown. Remove from heat and let it cool down.

9. In a large bowl whisk the eggs with a wire whisker. You can add 1-2 more eggs if you want. If you are using more eggs then reduce the amount of milk. Batter should be thick but flowing. Just like cake batter.

10. Grind semolina or suji in your mixer grinder. Add curd and blend again. Take out the mixture and mix with whisked eggs.

11. Add salt, black pepper powder, oregano, dried basil leaves, 2 tablespoon oil, pizza sauce, fried onion, garlic, green chilli and milk. Milk should be room temperature or lukewarm. Also add mashed soybean and potato. Mix everything well.

12. Add baking powder and whisk everything well with a wire whisker. Add sweet corn and grated cheese. I have used cheese cubes. You can use cheddar, mozzarella or any cheese. Mix well. I have used frozen sweet corn. You can also use boiled sweet corn.

13. Preheat the oven at 180° and for OTG preheat at 200°.

14. Pour the batter in greased baking dish. Spread grated cheese. I used cheddar and mozzarella mixed cheese. You can use mozzarella or any cheese. Sprinkle onion green, pickled Jalapeno, olive slices and sweet corn all over it.

15. Bake in preheated oven for 35-40 minutes or top of the casserole becomes brown. Slice and serve warm.

Notes

1. You can add as much cheese as you like.

2. Any flour can be used instead of semolina or suji. If you are using flour then no need to grind.

3. You can use any seasoning instead of Italian herbs. You can also use Indian spices if you want.

4. You can use bell peppers, capsicum or any vegetable of your choice.

Mushroom egg Kabab. Egg coated soft succulent spicy Kabab, made with boiled eggs and sauteed mushrooms taste scrumptious. A perfect starter or appetizer for your party or enjoy it as breakfast or burger stuffing with some cheese slices.

Kabab are super soft. Egg coating and aromatic spices made these Kabab absolutely delicious. You don’t need any sides to serve with these spicy Kabab. Lemon juice soaked onion rings or onion slices are sufficient to enjoy the scrumptious taste. You can also serve these with green chutney or any sauce of your choice. Recipe is very simple. You can make the patties and coat with bread crumb one day before and store in refrigerator. Coat with whisked egg and fry just before serving. I have used my homemade dry roasted spice powder to make the Kabab aromatic. You can use cardamom, cloves, cinnamon, jaiphal or nutmeg, javitri or mace powder in the mixture if you want. Use nutmeg and mace powder 1/4 teaspoon only. Or you can also use any flavorful spices of your choice. I have made medium size 13 Kabab but you can make large or small size patties. If you are making for burger stuffing make large size patties or to serve as starter or for teatime snack make small patties.

Recipe

Mushroom – 200 gram

Egg – 4, hard boiled

Potato – 2, boiled

Onion – 3

Garlic – 5-6 cloves, finely chopped or grated

Ginger – 1 inch piece, grated

Green chilli – 2-3 or to taste

Cumin powder – 1&1/2 teaspoon

Black pepper powder – 1/2 teaspoon

Garam masala powder – 1/2 teaspoon

Dry roasted spice powder – 1&1/2 teaspoon

Chilli flakes or red chilli powder – 1/2 teaspoon or to taste

Chaat masala – 2 teaspoon

Fennel or sounf powder – 1 teaspoon

Salt to taste

Cilantro or coriander leaves – handful, chopped

Oil – 2 tablespoon

Bread crumb – 4 tablespoon

For coating

Egg – 2

Salt & black pepper to taste

Bread crumb – 1/2 cup or as required

Pink or black salt to taste

Oil or ghee/clarified butter for frying

Method

1..Peel and grate or mash the boiled potatoes.

2. Grate or finely chop the mushrooms. I had used my chopper to finely chop the mushrooms. Grate the eggs and keep aside.

3. Thinly slice one onion. Separate the slices with your hand.

4. Finely chop 2 onion and green chilli. Use green chilli according to your spice tolerance. You can add more chillies to make your Kabab more spicy. Or skip if you are making for kids.

5..Heat 2 tablespoon oil in a pan. Add finely chopped onion, green chilli and garlic. When onion starts to change it’s colour add ginger and finely chopped mushroom.

6..Add cumin powder, black pepper powder, red chilli flakes or powder, garam masala and fennel or sounf powder. Mix well and saute till moisture evaporate and mushroom dried up completely.

7. Now add mashed potato and salt. Mix and saute till mixture dried up completely.

8..Remove from heat and let it cool down. Add chopped cilantro or coriander leaves, chaat masala, thinly sliced onion, dry roasted spice powder. To get the recipe of dry roasted spice powder click here. Mix everything well. Taste and adjust the seasoning. You can also add some finely chopped green chilli with sliced onion in the mixture.

9. In a plate spread bread crumb mixed with little black or pink salt.

10..In a bowl whisk two eggs with little salt and black pepper.

12..Make round patties with the mixture. I made 13 medium size patties. You can make small or large patties if you wish. Coat the patties with bread crumb and arrange on a plate.

13. Heat 2-3 tablespoon oil or ghee in a pan. Dip the patties in whisked egg and place on hot oil or ghee. Turn upside down and fry the other side till golden brown on medium heat. Kabab will be too soft so flip the Kabab carefully with the help of two spoon or spatula.

14. Serve hot with sliced onion or onion rings, lemon wedges and any chutney or sauce.

Bhater Kofta Or Rice Kofta

Bhater kofta or rice kofta. A very aromatic and delicious deep fried snack made with cooked rice, mawa/khoya or dried milk, saffron and some aromatic spices and coated with spiced curd/yogurt and semolina. Sounds interesting isn’t it? A wonderful recipe from a cookbook written by Pragagyasundari Devi, published on 1902. A very old cookbook with many new and old recipes which are forgotten now. Sharing one of my most favourite recipe from this book.

Pragyasundari Devi was a niece of Rabindranath Tagor. Daughter of Rabindranath Tagor’s elder brother Hemendranath Tagor. This Amish O Niramish Ahar was her first cookbook.

According to Wikipedia Pragyasundari Devi (born 1872 – died 1950), also seen as Pragyasundari Debi, Pragya Sundari Devi, Pragasundari Debi, or Prajnasundari Bezbaroa, was an Indian cookbook author and magazine editor. Her Amish O Niramish Ahar was a “significant” early cookbook in the Bengali language.

Now coming to this wonderful recipe. You can use leftover rice to make this delicious rice balls. Fragrant Gobindobhog rice is best for this recipe. But I don’t have gobindobhog rice so I used my regular Basmati rice. You can use any rice but for best result try to use some fragrant rice. I always store powdered spices so I used these. You can also use freshly ground spices. Here are the measurements of spices. You can grind them before making these bhater kofta.

1. 3 gram Jaiphal or nutmeg

2. 4 Cloves

3. 2 Green cardamom

4. 4&1/2 inch cinnamon

5. 2 dry red chilli

With 75 gram cooked rice. Use the spices according to your taste. I have skipped dry red chilli and used spices in very small quantities to make the balls mildly spiced. First add small amount of spices taste and add more if required.

This bhater kofta is a completely no onion garlic recipe. You can use brat ka chawal/Sama rice or Barnyard millet to make these kofta for fasting days.

In the original recipe ghee or clarified butter fried raisins are used but my kids don’t like raisins so I used cashew nuts instead. You can use raisins if you like.

Recipe

Cooked rice – 1 cup

Green chilli – 1-2 or to taste

Jaiphal or nutmeg powder – 1/8 teaspoon

Salt – 1 teaspoon or to taste

Clove or laung powder – 1/8 teaspoon

Green cardamom or ilaichi powder – 1/4 teaspoon

Cinnamon or darchini powder -1/4 teaspoon

Curd/yogurt or dahi – 2 tablespoon

Khoya/mawa or dried milk – 1/4 cup

All purpose flour or maida – 2 tablespoon

Semolina or suji – 1/2 cup

Cashew nuts – 8-10

Or

Raisins – 60 gram

Milk – 2 teaspoon

Saffron- a pinch or 600 Milligram

Ginger – 1&1/2 teaspoon grated or paste

Ghee or oil- 4 tablespoon

Method

1. Soak saffron in 2 teaspoon hot milk. When cool crush the saffron with your finger tips.

2. Mash the cooked rice with your palm. Mash with wet hands to avoid sticking the rice on your palm. I have ground the rice in my mixer grinder. Rice should be mashed well.

3. Fry the cashew nuts in 1 teaspoon ghee till light golden brown. Don’t make too brown. You can microwave the cashew nuts in a microwavable glass bowl with ghee for one minute stir and microwave for one minute more or till cashew nuts start to change it’s colour. Immediately switch off the oven and keep the bowl in oven for a few minutes. Cashew nuts will becomes brown in a few minutes. Chop the cashew nuts in small pieces when cool.

4. Or if you are using raisins fry the raisins in ghee. Immediately remove from ghee when raisins fluff up. Raisins shouldn’t be burnt. Keep aside to cool down. You can use both raisins and cashew nuts if you want.

5. Grind ginger and green chilli into a smooth paste. You can also crush the chilli and ginger in mortar pestle or use grated. I have ground the ginger and chilli in small chutney jar of my mixer grinder.

6. Whisk the curd or yogurt with little salt and half teaspoon ginger green chilli paste and keep aside.

7. Add crumbled mawa or dried milk in the mashed rice and mash again. I have used homemade fresh mawa. Get the method of making khoya or mawa here.

8. Add salt, all the dry spices, remaining ginger, green chilli paste, saffron soaked milk and chopped ghee fried cashew nuts or raisins. Add whatever you are using or add both. You can also add dry red chilli paste or powder if you want as mentioned in original recipe. I didn’t.

9. Mix everything well. Taste and adjust salt and spices if required. Make small balls. I have made 7 balls with this mixture. You can make small or large balls as you like.

10. Spread all purpose flour or maida on a plate and in another plate spread half of the semolina or suji. Later spread more semolina if required.

11. Roll the balls on all purpose flour or maida. Then dip into the spiced curd or yogurt and coat the balls with semolina or suji. Arrange all the balls on a plate.

12. Heat ghee or oil in a pan or wok. Fry all the balls evenly from all the sides till golden brown. Remove from oil and serve hot as teatime snack.

Notes

1. Use spices according to your taste.

2. If making for kids omit or reduce the amount of green chilli and ginger.

3. Ghee or clarified butter and oil both can be used for frying. Or you add some ghee with oil for flavour.

4. To make the bhater kofta more aromatic use gobindobhog rice or any fragrant rice.

5. Sama rice can be used to make this kofta satwik or fasting food.
