Green Moong Idli 


Green gram lentil or whole green moong idli with semolina or suji.

A very healthy and delicious breakfast. You don’t need to soak for long hours. Just mix everything and after 15 minutes make idli.
 

Green moong or green gram are loaded with nutritional benefits. This lentil is also low calorie and packed with protein, vitamins and minerals. A best filling option for those who wants to shed kilos.

And I have added semolina or suji in it. 

Low calorie and protein rich semolina is made from hard variety durum wheat which is digested slowly and prevent you from overeating. And its good for diabetic and perfect for weight loss. In other words, you will be able to lose weight in a shorter period of time and maintain body weight. Semolina is increases your chances of shedding more fat because it digested very slowly. Semolina is energy booster too. It keeps your body charged throughout the day.

So its a perfect breakfast for weight watchers and diabetic people. Serve hot with any chutney or sauce.

This delicious and healthy idli is very easy and quick to make. You need only equal amount of green moong and semolina with curd and some spices. And its absolutely fat free. We need very little oil only for greasing the idli moulds. You can make pancake or appe with this batter. 

Recipe 


Green whole moong lentil or green gram – 1/2 cup 

Semolina or suji – 1/2 cup 

Ginger – 1/2 inch piece 

Green chilli – 2-3 

Chopped coriander leaves – handful 

Salt to taste 

Cumin powder – 1 teaspoon 

Curd – 3 tablespoon 

Eno fruit salt – 1 teaspoon 

Cashew nuts – as required 

Oil for greasing

Lemon juice – 1 teaspoon, optional 

Method 


Soak the green moong lentil overnight. 

Grind the lentil with ginger, green chilli and coriander leaves. You can add little water if require to make a smooth paste. 

Mix the ground lentil mixture with semolina. Add curd, salt and cumin powder. Mix well. You can add 1 teaspoon chaat masala if you like. Add little water if require to make idli batter like consistency. 

Cover and keep aside for 15 minutes. 

Grease the idli moulds with little oil. 

After 15 minutes add eno fruit salt. I have used lemon flavoured eno. If you are using plain eno add 1 teaspoon lemon juice. Give a good stir. 

Place half cashew nut in each mould. You can use full cashew nuts too. 

Fill the moulds with lentil and semolina mixture. 

You can also place a cashew nut over the idlis. 

Steam the idlis for 6-7 minutes or until done. You can make pancake or appe with this idli batter. 

I have made these in microwave for 7 minutes on full power. 

Serve hot with Peanut chutney or Onion tomato chutney. Click on the name to get recipe. 

Or serve with any chutney or sauce.

Raw Banana Curry 


Raw banana curry.

A very delicious and flavourful curry made with green banana or raw banana.

We all know that green or raw banana is very nutritious vegetables.

Nutritionally, the green banana is a good source of fiber, vitamins and minerals, and contains a starch that may help control blood sugar, manage weight and lower blood cholesterol levels.

You don’t need to cook it always in a simple way. Why not transform this healthy vegetable into a rich or shahi curry? Try this recipe. Even you don’t recognise banana in this curry. Its superbly delicious, flavourful, spicy and rich.

You can serve it as a party side dish. You can make it without onion garlic too. Just omit onion and garlic, increase the amount of poppy seeds. Add 2 tablespoon each poppy seed and cashew nuts paste and 1-2 tablespoon cream. You can add fresh coconut paste too. Your no onion garlic rich and delicious curry is ready.

Recipe 



Raw banana – 5

Onion – 2 large

Garlic – 3-4 cloves

Ginger – 1 inch piece

Poppy seeds – 1 tablespoon

Tomato – 2 large

Green chilli – 2-3

Clove – 3

Green cardamom – 2-3

Cinnamon – 1 inch piece

Cumin powder – 1 teaspoon

Coriander powder – 1 teaspoon

Turmeric powder – 1/4 teaspoon

Garam masala powder – 1/4 teaspoon, optional

Kashmiri red chilli powder – 2 tablespoon

Oil – 3-4 tablespoon or as required

Coriander leaves – 1 tablespoon, chopped, optional +to garnish

Water as required

Method 


Peel and chop the bananas lengthwise. You can chop in any shape. Wash and drain the water.

Soak poppy seeds in hot water or microwave with little water for 1 minutes.
Slice 1 onion and separate the layers. Keep aside.

Grind 1 chopped onion, garlic and ginger.

Separately grind the tomatoes, soaked poppy seeds, green chilli, cardamom, cloves and cinnamon. Make a smooth paste.

Heat oil in woke or pan. You can use mustard oil or any refined oil.

Add sliced onion and fry. Stir continuously while frying, onion shouldn’t be burnt.

Fry till onion becomes brown. Remove from the oil and keep aside. We will use it for garnishing.

In the same oil fry the banana pieces till golden brown and place them on a paper towel.

Now add onion, garlic and ginger paste into the oil. Fry till oil leaves the sides. For no onion garlic recipe read the notes.

Add tomatoes, poppy seeds, green chilli, cardamom, cloves and cinnamon paste. You can also add fresh coconut paste  if you want.

Add cumin powder, coriander powder, kashmiri red chilli powder and garam masala powder.

Fry again till oil leaves the sides.

Add fried banana pieces and salt. Mix well and fry for 1-2 minutes more.

Add water as require. I have made it dry but you can make thick gravy. Don’t make it runny.

Cover and cook till the banana pieces becomes tender.

Add chopped coriander leaves if you want, I didn’t. Remove from flame. Add some fried onion and mix well.

You can add 1-2 tablespoon cream too if you like.

Garnish with chopped coriander leaves and fried onion slices.

Serve hot with roti or Indian flat bread, paratha, naan, puri or dal chawal.

Note –

With tomato, chilli and whole spices you can grind fresh coconut too.

If you want to make without onion garlic curry, omit the onion and garlic and increase the amount of poppy seeds. Add 2 tablespoon each of poppy seeds paste, cashew nuts paste and fresh coconut paste with tomatoes. At the end add 2 tablespoon cream.

Enjoy the rich, spicy and delicious banana curry with your lunch or dinner.

Almond Cinnamon Loaf Cake 


Eggless almond cinnamon loaf cake. 

A perfect accompany for your evening tea. This cinnamon flavoured cake is easy to make and super yummy. 

You will love it’s soft and moist texture. 

I have made this cake with half whole wheat flour and half refined flour. You can use only whole wheat flour or only refined flour too. 

You can add any dry fruits of your choice. Instead of shredded almond you can sprinkle cashew, tutti frutti, raisin or cherry or whatever you like to make your cake beautiful.

Recipe 


Wholewheat flour – 1/2 cup 

Refined flour – 1/2 cup 

Milk powder – 1/2 cup 

Cinnamon powder – 1 teaspoon 

Chopped pistachio and almond – 2 tablespoon +to sprinkle 

Almond – 1/3 cup 

Powdered sugar – 1 /2 cup 

Baking soda – 1/2 teaspoon 

Baking powder – 1/2 teaspoon 

Milk – 3/4 cup 

Vinegar – 2 teaspoon 

Oil or butter – 1/4 cup 

Method 



Grease a loaf pan and dust with some flour. 

Preheat the oven at 180°.

Grind the almonds into fine powder. 

In a bowl mix whole wheat flour, refined flour, almond powder, milk powder, cinnamon powder, baking powder and soda. Mix well. You can use only whole wheat flour or only refined flour too if you like. 

Mix vinegar with room temperature milk and keep aside. 
In a large bowl mix powdered sugar and oil or butter. You can use brown sugar too instead of powdered sugar. Beat well. Add vinegar mixed milk and beat till the sugar dissolved completely. 

Now add all the dry ingredients. Mix and make a lump free batter. Add more milk if required. 

Use everything at room temperature. 

Fold in chopped almond and pistachio.

Pour the mixture into greased and flour dusted loaf pan. Tap the pan gently. 

Bake in preheated oven at 180° for 30-40 minutes. Or until the toothpick comes out clean. 

Every oven takes different time so check with a toothpick after 30 minutes. Insert a toothpick in the middle. If it comes out clean its done. 

Let the cake cool down. 

Slice and serve with a glass of milk or enjoy with your tea or coffee.

Onion Tomato Chutney Or Dip 


Onion tomato chutney or dip. 

A lip-smacking and spicy savoury chutney or dip. Best accompany for your snacks, or use it as a sandwich spread.

Its my first post for Shhhh Cooking Secretly Facebook group and the theme is ‘Chutneys’. 

In this group all the participating bloggers were challenged to make a dish with the use of two secret ingredients their partner assigns them with.

This week’s theme is Chutneys. 

This is my first challenge I have been paired with Avin S Kohli, a very talented blogger who writes at  theyellowdaal.com 

A big thank to Avin for giving me these two ingredients. Chutney becomes super hit in my family. 

Best accompany with your snacks. I have used it as sandwich spread too. This finger licking chutney or dip made my sandwiches superbly delicious. 

Recipe 


Tomato – 4 medium chopped 

Onion – 1 sliced 

Cilantro –  1 cup chopped 

Garlic – 3 – 4 cloves chopped 

Ginger – 1/2 inch piece chopped 

Cashew nut – 2 heaped tablespoon 

Green chilli – 2 – 3 or to taste 

Salt to taste 

Lemon juice – 2 tablespoon 

Cumin powder – 1 teaspoon

Method 


Heat oil in a pan. Add sliced onion and chopped green chilli. Fry till onion becomes translucent. Add garlic and ginger. Fry until the onion becomes brown.

Now add the tomatoes, cashew nuts, chopped cilantro, salt and cumin powder. 

Cook till the tomatoes becomes mushy. 

Switch off the flame. If you want your chutney hot you can add 1-2 dry red chilli in the oil with onion.

Let the mixture cool down. 

Mix lemon juice and grind into smooth paste. 

Taste and adjust salt and lemon juice if required. 

Pour the chutney in a bowl or jar. 

Serve with any snacks or use as a sandwich spread. 

I have used it in my burger too. It will make your sandwiches or burger superbly delicious.

Mango Pomegranate Overnight Oats Parfait 


Mango pomegranate overnight oats  parfait.

Sharing my today’s healthy, delicious and easy to make breakfast.

You don’t need to cook anything so perfect for this hot weather. Just arrange everything in a glass or jar and keep in refrigerator at night.

Enjoy chilled delicious filling and healthy parfait next morning.

I think its a best option for a fireless cooking breakfast.

I have used mango and pomegranate in this parfait. But you can use any fruits of your choice or whatever you have in your pantry.

Instead of shredded almond you can sprinkle cashew, tutti fruity, raisin, cherries, walnut or any dry fruits to make your parfait yummy and beautiful.

Recipe 


Oats – 1/4 cup

Yogurt – 1/4 cup

Honey – 2 teaspoon or to taste

Pomegranate seeds – 1 small pomegranate

Mango – 1 peeled and diced

Walnut and shredded almond to sprinkle over the parfaite

Method 


Peel and remove the seeds of the pomegranate.

Peel and chop 1 mango.

In a bowl mix oats, yogurt and honey. You can add a pinch of cinnamon powder too.  If you don’t like yogurt use milk, almond milk or soya milk instead. I have used homemade yogurt.  If you like less sweet add only 1 teaspoon honey. Taste and add more honey if you want. I have used 2 teaspoon. Mix well.

Take a jar or a glass.

Pour half of the oats mixture.

Place chopped mango over it. Then sprinkle some pomegranate seeds.

Pour remaining oats mixture over it.

Again place chopped mango and pomegranate seeds over it.

Sprinkle shredded almond and pistachio over it. Drizzle some chocolate sauce if you like.

You can sprinkle cashew, tutti frutti, raisin, cherries, walnut or any dry fruits of your choice to make your parfait yummy and beautiful.

Serve and enjoy this delicious, healthy and colourful parfait on your breakfast table.

Cocoa Almond Cookies 


Eggless cocoa almond cookies.

A delicious, crispy and little chewy cookies. A perfect snack for your kiddos. Absolutely healthy. Kids will love it’s taste.

I have mixed three types of flour in it. Whole wheat flour, oats powder and refined flour. You can make with only whole wheat flour or only refined flour too if you like.

I have used homemade white butter in it.

Apart from being delicious, almonds are highly nutritious and very healthy.

Recipe 


Almond – 1/2 cup

Oats – 1/2 cup

Wholewheat flour – 1/2 cup

Refined flour – 1/4 cup

Baking powder – 1 /2 teaspoon

Baking soda – 1/4 teaspoon

Butter – 1/2 cup

Powdered sugar – 3/4 cup

Cocoa powder – 2 tablespoon

Vanilla essence – 1 teaspoon

Almond – as required

Method 


Grind the almonds with skin. Grind into fine powder.

Grind the oats.

Preheat the oven at 180°. Grease a baking tray or line with parchment pepper or aluminium foil.

In a bowl mix almond flour, oats powder, whole wheat flour, refined flour, cocoa powder, baking powder and soda.

In a large bowl cream powdered sugar and room temperature butter. Beat well.

Add vanilla essence and mix.

Now add all the dry ingredients. Combine and make a smooth dough.

Make small balls. Gently flatten with your hand. Place an almond over every cookies. Press lightly.

Arrange on the greased or lined baking tray 1-2 Inch apart.

Bake at 180° in a preheated oven for 15 – 20 minutes. Or until the edges becomes dark. Don’t forget to leave enough place between the cookies. Cookies will be double while baking.

Remove carefully. Cookies will be soft when hot but becomes crisp after cooling.

Let the cookies cool down completely.

Serve the crispy crunchy cocoa almond cookies with milk, tea or coffee. Or enjoy on your munching time.

Mango Peach Pear Smoothie / Dairy Free Low Calorie Smoothie 


Mango peach pear dairy free low calorie smoothie.

Mango season is about to over. So enjoy this yummy fruit in one more delicious, healthy, chilled, refreshing and filling smoothie.

A chilled glass of smoothie is perfect for this weather.

Our this week’s #Foodiemonday bloghop theme is  #Shravanvratspecial.

Shravan is considered an auspicious month for the Hindus. In North India people avoid non vegetarian food including onion garlic in this month. People observe fast on every Monday during this month.

Presenting a yummy, nutritious, filling, refreshing and power packed smoothie to boost your energy. Take a long glass of smoothie on meal time instead of calorie ladden deep fried food.

I have added peach in this smoothie. Which is a rich source of minerals and dietary fiber. Low calorie peach contain no saturated fat or cholesterol.

Normally I make this smoothie with coconut milk or chopped tender coconut. If you have coconut milk you can add 1/2 cup for a different and delicious taste. Or you can add 1/2 cup chopped tender coconut. If you don’t like pear you can use any fruit instead like chickoo, banana etc.

 

Recipe 


Ripe mango –  1 cup, peeled and cubed

Peach – 1/2 cup cut into small pieces

Pear – 1 peeled and diced

Cinnamon powder – 1/4 teaspoon

Cardamom powder – a pinch

Lemon juice – 1 teaspoon

Honey – 2 teaspoon or to taste

 

Method 


Combine peeled and cubed mango, chopped peach and peeled and diced pear in blender jar.

If you want you can add add 1/2  cup of coconut milk or 1/2 cup chopped tender coconut. Normally I like to add coconut milk or chopped tender coconut in this smoothie but today I don’t have any.

 

If you don’t like pear you can use any fruit instead like banana, chikoo/sapodilla/zapota or any other fruits.

 

Blend until smooth and frothy. Add cinnamon powder, cardamom powder, lemon juice and honey. Blend again.

Taste and add more honey and lemon juice if required.

Place some ice cubes in a glass. Pour the mixture over it. Garnish with mango cubes.

Serve chilled.
