Shahi Kamal Kakdi or lotus stem korma. Fried lotus stem slices in spicy aromatic silky smooth thick gravy with fresh or raw turmeric/kachchi haldi made this korma lipsmackingly delicious. If you like lotus stem and bored of usual kofta, curry like usual recipe then its perfect for you. You can also serve this flavorful and delectable shahi korma as a party side dish.

What is korma

Korma or qorma (Hindi: क़ोरमा; Urdu: قورمہ; Bengali: কোরমা) is a dish originating in the Indian subcontinent, consisting of meat or vegetables braised with yogurt (dahi), water or stock, and spices to produce a thick sauce or gravy. Korma has its roots in the Mughlai cuisine[1] of the Indian subcontinent. A characteristic Mughal dish, it can be traced back to the 16th century and to the Mughal incursions into the region. You can serve this shahi korma with any bread or rice dishes. This korma is one of my daughter’s favourite curry and her suggestion is its best to serve with Malabar paratha or puri. Now choice is yours 😊 Today I served it with a thali of steamed rice, roti, dhania aloo, pumpkin fry and chicken curry.

Ingredients used to make this shahi korma

1. Lotus stem or kamal kakdi – Main ingredient is this Lotus stem. You have to rinse the stem well. Rinse before and after peeling and also after cutting. Then follow the steps as given below in recipe. Here are the pictures of before and after peeling lotus stem.

The lotus plant has been eaten as a food for 7,000 years in Asia. Its stem and roots are often added to soups and stir-fries, but its leaves, flowers, and seeds are also used in cooking. Additionally, its stems, seeds, leaves, and flowers have long been used in traditional medicine preparations. Lotus was used to treat diarrhea, infection, cough, high blood pressure, and fever, among other ailments The lotus plant has a long history of use in Asian cuisine and traditional medicine. It contains many compounds that exhibit health benefits, including antioxidant and antibacterial effects. Healthline

Cashew nuts – Ground cashew nuts or Kaju used to make the gravy smooth creamy and tasty.

Almond – Almond or badam paste used to give a nutty taste and make the gravy creamy.

Melon seeds – Melon seeds or charmagaz are also use to make the gravy thick and smooth like other nuts.

Poppy seeds or khas khas – Soaked and ground poppy seeds will give a nutty flavour and make the gravy thick and smooth. To get some recipes with poppy seeds click here.

Fresh coconut – Fresh ground coconut will give a wonderful flavour and mildly sweet taste.

Ginger – Slightly hot ginger will give a lovely flavour to the curry. Ginger and all the other spices have numerous health benefits. Sugar – Sugar used to enhance the taste. Little sugar usually used to balance out the flavour and taste. And when adding while frying spices sugar caramelized and gives a lovely colour.

Salt – Salt used to enhance the taste.

Green chilli – Green chilli used to give a spicy kick and for flavour.

Dry red chilli – Soaked in hot water and ground dry red chilli also gives a nice aroma and colour to the gravy. Use less or more according to your spice tolerance.

Onion – Onion used to thickened the gravy and enhance the taste and flavour. Fried and ground onion will give a nice taste and flavour.

Cumin powder – Cumin or jeera powder used for a wonderful aroma and taste.

Coriander powder – Coriander or dhania powder widely used in Indian curries to give a nutty aroma.

Curd or yogurt – I used homemade curd. Thick curd used to give a buttery flavour and slightly tangy taste.

Cilantro or coriander leaves – Cilantro or coriander leaves used to enhance the taste and flavour.

Cardamom, cinnamon, cloves, mace, nutmeg Kasuri methi and ghee or clarified butter used for a lovely aroma and enhance the taste of the gravy.

Fresh cream – Well beaten fresh cream or malai used to give a creaminess to the gravy and mildly sweet taste.

Oil – I used sunflower oil here but you can use any oil of your choice.

Try to prepare all the soaked and ground nuts and spices ready before cooking. You can chop and boil the lotus stem in advance and store in refrigerator for easy and quick cooking. If you don’t have fresh or raw turmeric, use 1/2 teaspoon turmeric powder instead. You can also grind 1 teaspoon soaked raisins with cashew nuts almond, poppy seeds and melon seeds if you like.

Lotus stem or kamal kakdi- 2

Cashew nuts or Kaju – 1 tablespoon

Almond or badam – 1 tablespoon

Melon seeds or charmagaz – 1 tablespoon

Poppy seeds or khas khas – 2 tablespoon

Grated Coconut – 2 tablespoon

Ginger – 1/2 inch piece

Garlic – 2 cloves

Tomato – 2

Salt to taste

Fresh turmeric or kachchi haldi- 1 teaspoon, grated

Sugar – 1/2 teaspoon

Green chilli – 1-2 or to taste

Dry red chilli – 3

Cilantro or coriander leaves – 2 tablespoon

Onion – 1, sliced

Cumin or jeera powder – 1 teaspoon

Coriander or dhania powder – 1 teaspoon

Thick curd or yogurt – 3 tablespoon

Green cardamom or ilaichi – 2

Cloves or laung – 3

Cinnamon or darchini – 1/2 inch piece

Kashmiri red chilli powder – 2 teaspoon

Mace or javitri powder – 1/8 teaspoon

Jaiphal or nutmeg powder – 1/8 teaspoon

Kasuri methi – 1 teaspoon

Fresh cream – 3 tablespoon

Oil – 3 tablespoon

Ghee or clarified butter – 1 tablespoon

Method

1. Wash the lotus stem or kamal kakdi well. Peel and cut the both tips. Wash again under running tap water. Check if it properly clean from inside. Slice the lotus stem.

2. Rinse well and soak in sufficient water for 15-20 minutes. Drain the water and pressure cook with water for 3 whistle. Or after 1 whistle reduce the flame. Cook on simmer for 2 whistle. Immediately remove from heat after 2 whistle. Let the pressure settle down on its own .drain the water and keep aside.

3. Soak almond in hot water. Peel the almond when cool. Soak cashew nuts, melon seeds and poppy seeds in hot water. Or you can microwave for 1 minutes. Also Soak the dry red chilli in 3-4 tablespoon hot water.

4. Grind soaked and peeled almond, cashew nuts, poppy seeds, melon seeds,green cardamom, cloves and dry red chilli altogether with 3-4 tablespoon water. Grind into a smooth paste.

5. Whisk the curd with cumin powder, coriander powder, Kashmiri red chilli powder, nutmeg powder and mace powder.

6.. Heat oil in a pan. Fry the lotus stem slices till golden brown from all the sides. Don’t over crowd, frý in 2-3 batches and remove from oil and transfer to a plate.

7. In the same oil fry slied onion till brown. Let it cool down.

8. Grind the fried onion with green chilli, garlic, ginger, grated fresh turmeric and tomato. Make a smooth paste. Don’t add water.

9. Heat remaining oil of fried onion and add ghee. You can add little more oil if required. Add onion, green chilli, tomato paste and sugar. Saute till oil leaves the sides.

10. Add poppy seeds,coconut and nuts paste. Saute again till everything dried up and oil separates.

11. Reduce the heat and add spices mixed well beaten curd. Also add chopped cilantro or coriander leaves. Saute till dried up and oil leaves the sides. Add fried lotus stem and salt. Reserve 4-5 fried lotus stem slices for garnishing. Mix well.

12. Add 1&1/4 cup water and mix. When it starts to boil reduce the heat. Cover and cook on simmer for 10 minutes. Don’t leave unattended. Check and stir in-between. You can add little more water if required to get your desired consistency. But don’t make it runny. Gravy should be thick.

13. Add remaining fresh cream and stir. Add cardamom powder and Kasuri methi. Crush the Kasuri methi with your palm before adding.

14. Mix and remove from heat. Taste and adjust the seasoning. You can add little more hot water if gravy becomes too thick. Garnish with fresh cream fried lotus stem slices and cilantro or coriander leaves.

15. Serve with roti, paratha, puri, naan, pulao, fried rice or steamed rice. This shahi korma is also great to serve with Malabar paratha.

Notes

1. If you want your korma less spicy use 1-2 red chilli. Use chilli according to your taste.

2. If you don’t have fresh or raw turmeric/kachchi haldi then you can use 1/2 teaspoon turmeric powder instead.

Mushroom Spinach Cheese Sandwich

Mushroom spinach cheese sandwiches. Grilled sandwiches with creamy cheesy delicious stuffing. Sauteed mushrooms and spinach made these sandwiches filling and delectable. And sriracha sauce made the sandwiches perfectly spicy.

Earlier shared Easy quick egg sandwich here but this spinach mushroom sandwiches different in taste and flavour. Both are absolutely delicious but this one is completely vegetarian.

Ingredients used to make stuffing

Mushroom – Low calorie and nutritious mushrooms made this sandwich delicious. I used my mini chopper to finely chop the mushrooms because my husband don’t like mushrooms at all. So I always use minced or finely chopped mushrooms in some dishes and he always happily enjoy the dish without recognizing mushrooms. But you can use thinly sliced mushrooms if you want.

Baby Spinach – This leafy green vegetable taste great. Tender leaves are easy to cook and give a slightly sweet taste. And it also has so many health benefits. I blanched the spinach leaves before using.

How to blanch spinach

Rinse the spinach leaves well to remove all the dirt. Heat sufficient water in a pot. Keep a pot with cold water ready. When water starts to rolling boil add the spinach. Let it boil for 3-4 minutes. Leaves will becomes dark in colour after blanching. Immediately remove the spinach from hot water and place in the pot of ice cold water to retain the colour. Take out from the water before chopping.

Onion And Garlic to enhance the taste and flavour.

Sweet corn – Succulent and delicious boiled sweet corn taste mildly sweet and also enhance the taste of your stuffing.

Scallion – Mild taste and flavour of this green long leaves will also enhance the taste and flavour of stuffing.

Salt – Salt used to give savoury taste. Add salt according to your taste.

Black pepper powder – Use black pepper powder to give a lovely aroma and mild heat. You can also use freshly crushed black pepper. Add black pepper powder 1/2 to 1 teaspoon as per your taste.

Fresh cream – Little fresh cream will give a creaminess and enhance the taste. I used Amul fresh cream.

Tomato ketchup – tomato ketchup will give a sweet tangy taste to the stuffing.

Sriracha sauce – Sriracha sauce added to give a spicy kick. Spicy sweet tangy taste of this sauce will make your stuffing lipsmackingly delicious. You can also use any chilli garlic sauce if you don’t have sriracha sauce.

Chilli flakes – Little chilli flakes used to make the stuffing spicy. But its optional, you can skip it if you want.

Cheese – I used cheddar and mozzarella cheese mixed. I have a pack a mixture of both cheese. And this taste great. Used to give a cheesy delicious taste. You can use processed cheese or any cheese of your choice. Used 1/2 cup in stuffing and some to sprinkle over the stuffing. You can always use more cheese if you want. Add as much cheese as you like.

Butter And Olive oil – Used 1 tablespoon butter and 1 tablespoon olive oil for sautéing the stuffing. You can use only butter or only oil if you want. You can also use any other oil instead of olive oil.

Bread – You can use white bread, brown bread, multigrain bread, gluten free bread or any bread of your choice.

If you have the stuffing ready then you can make the sandwiches in a jiffy. You can make the stuffing one day before and store in refrigerator to make the sandwiches for breakfast or lunch. Even you don’t need any chutney or sauce in side to serve these sandwiches or to spread on bread. Because stuffing taste delectable on it’s own. Sauteed mushrooms and spinach and fried onion garlic with sweet corn, scallion, oregano and sriracha sauce, ketchup, butter, cheese and little fresh cream made these sandwich stuffing perfectly spicy creamy cheesy and lipsmackingly delicious.

Recipe

Mushroom – 200 gram

Baby Spinach- 200 gram, blanched

Onion – 2 medium, finely chopped

Garlic – 3, minced

Sweet corn – 1/2 cup, boiled

Scallion or onion green – 2 finely chopped

Salt to taste

Black pepper powder – 1/2 teaspoon or to taste

Fresh cream – 2 tablespoon

Sriracha sauce – 1&1/2 tablespoon

Oregano – 1 teaspoon

Chilli flakes – 1/2 teaspoon

Tomato ketchup – 2 tablespoon

Cheese – 1/2 cup, grated + to sprinkle

Olive oil – 1 tablespoon

Butter – 1 tablespoon

Bread as required

Method

1. Chop the blanched baby spinach finely. Chop the mushrooms finely. I used my mini chopper. You can grate or thinly slice the mushrooms.

2. Heat 1 tablespoon oil and 1 tablespoon butter in a pan. Add minced garlic and finely chopped onion. When onion becomes light brown add mushrooms.

3. Mushrooms will release water. When mushrooms about to dried up add chopped scallion and saute till dried up completely. Add blanched and chopped spinach. Mix and add boiled sweet corn.

4. Add salt, black pepper powder, fresh cream, sriracha sauce, oregano, chilli flakes and tomato ketchup. Saute till everything blend well and dried up.

5. Now add sriracha sauce, mix and remove from heat. Taste and adjust the seasoning. Let the mixture cool down a bit. Add 1/2 cup grated cheese and mix well.

6. Spread the mushroom spinach mixture on a bread slice. Sprinkle some grated cheese over it. Place a bread piece over the cheese and press gently. Make all the sandwiches like this.

7. Heat little butter or oil in a grill pan. Place sandwich on the pan. Toast on low heat till one side becomes light brown. Flip and turn the sandwich upside down and toast the other side too. Make all the sandwiches. Serve hot with any sauce or chutney. You can also use sandwich toaster to toast the sandwich.

Notes

1. You can use mayonnaise in the stuffing if you want.

2. Any chilli garlic sauce can be used instead of Sriracha sauce.

Double Chocolate Whole Wheat Muffins With Coconut

Double chocolate whole wheat muffins with coconut sugar. Soft moist rich chocolaty muffins taste scrumptious. Cocoa powder and grated chocolate made these muffins perfectly chocolaty and delightful.

I have used whole wheat flour to make these muffins. You can definitely use all purpose flour or maida but better to avoid all purpose flour or refined flour. Whole wheat flour are packed with nutrients including several vitamins and fiber. You can also use millet flour or any gluten free flour instead of whole wheat flour.

Cocoa powder and dark chocolate made these muffins full of chocolaty flavour. Earlier I had used Morde chocolate compound but this time used Amul compound chocolate. You can use whatever you have.

Instant coffee powder used to enhance the flavour of chocolate.

Oil will help to make your muffins moist. You can use olive oil or any flavorless oil. I used sunflower oil.

Salt will balance the sweetness of muffins and enhance the taste.

Baking powder and soda used for leavening and also to make the muffins soft.

Curd or yogurt will make your muffins moist. Curd with baking powder and soda makes the eggless muffins fluffy and moist. No need for hung curd, use normal homemade curd.

Milk used to add moisture to the batter. And to make the muffins light.

Milk powder used to enhance the taste. And it also gives an extra richness. But its optional you can skip if you want.

Coconut sugar used as sweetener. You can always use cane sugar, brown sugar, jaggery or any sweetener of your choice. Coconut sugar is a healthy sugar alternative. The harmful effects of added sugar are becoming increasingly more evident. As a result, people are turning to natural alternatives. A sweetener that has become very popular in the past few years is coconut sugar. This sugar is derived from the coconut palm tree and touted as being more nutritious and lower on the glycemic index than sugar. Source

You have to sieve the flour baking powder, soda, cocoa powder and salt. Add milk powder and keep aside. I have used grated chocolate. Heat the grated compound chocolate with milk for a minute to melt the chocolate. Used Amul compound chocolate. I had microwave for one minute on full power. Whisk well with curd, vanilla essence, coffee, oil and coconut sugar. Whisk everything well.

Now add all the dry ingredients. Don’t add all the dry ingredients in one go. First add half and mix then add remaining dry ingredients and mix well to make a smooth lump free batter. You can also use 1/4 to 1/2 cup choco chips in the batter for more chocolaty taste.

I baked in my Samsung microwave hot blast function to bake the muffins. Bake in preheated oven at 170° for 10- 12 minutes or until toothpick comes out clean. Insert a toothpick in a muffin to check. Let muffins cool down. Dust the muffins with icing sugar with the help of a sieve. This step is optional. Used white choco chips and icing sugar only to make the muffins attractive and kids friendly.

Recipe

Whole wheat flour or atta – 1 cup

Baking powder – 1/2 teaspoon

Baking soda – 1/4 teaspoon

Cocoa powder – 4 tablespoon

Salt – 1/8 teaspoon

Cooking chocolate – 1/2 cup, grated

Curd or yogurt – 1/2 cup

Milk – 1/4 cup

Instant coffee powder – 2 teaspoon

Vanilla essence – 1/2 tablespoon

Oil – 1/4 cup

Coconut sugar – 1/3 cup

Milk powder – 1/4 cup, optional

Method

1. Grease or line muffins moulds. Preheat the oven at 170°.

2. Sift whole wheat flour or atta, cocoa powder, baking powder, soda and salt. Mix milk powder if using.

3. Grate the cooking chocolate in a microwavable glass bowl. Add milk and microwave on high power for 1 minute. You can also melt the chocolate with milk in pan on stove top. In the milk mixed melted chocolate add coffee, vanilla essence and curd or yogurt. I have used homemade curd. Whisk well.

4. Add coconut sugar and oil. Whisk again till everything combined well. If you are not using milk powder add 1-2 tablespoon more coconut sugar. Because milk powder gives an extra sweetness. And if you want your muffins lightly sweetened add 1/4 cup coconut sugar.

5. Pour the mixture in a large bowl. Add all the dry ingredients gradually and mix. Make a smooth lump free batter.

6. Pour the mixture in greased or lined muffin moulds. Fill upto 3/4 cup.

7. Bake the muffins in preheated oven at 170° for 12 minutes or until toothpick comes out clean. Let the muffins cool down before serving. You can dust the muffins with powdered sugar with the help of a sieve. Or press some white choco chips over the muffins.

8. Enjoy the soft delicious chocolaty muffins.

Notes

1. All purpose flour or any flour can be used instead of whole wheat flour or atta. You can also use millet flour if you want.

2. You can also use 1/4 to 1/2 cup choco chips in the batter.

3. Brown sugar, powdered sugar, granulated sugar or any sweetener can be used instead of coconut sugar.

4. You can use olive oil or any flavorless oil.

Besan Or Chickpea Flour Cookies/Nankhatai

Besan or chickpea flour/garbanzo flour nankhatai or Indian shortbread cookies. Texture of these delectable cookies are light, flaky and crisp outside. And inside of the cookies are melt in mouth. You can feel the burst of flavour of ghee or clarified butter, baked chickpea flour or besan and cardamom.

What is nankhatai

Nankhatai are shortbread biscuits originating from the Indian subcontinent, popular in Northern India, Pakistan, Bangladesh, and Myanmar. The word nankhatai is derived from the Persian word naan meaning bread and khatai from a Dari Persian word meaning biscuit. Source – Wikipedia

You can make these nankhatai with different flavour. Here are some different types of nankhatai from this blog.

1. Multigrain chocolate nankhatai

2. Whole wheat coffee jaggery nankhatai

3. Gluten free rose nankhatai

4. Orange nankhatai

6. Nankhatai

You don’t need any fancy ingredients to make these superbly delicious cookies. All the ingredients are easily available in your pantry. Main ingredient is besan or chickpea flour or garbanzo flour.

And flavoured with cardamom powder. Baked besan and cardamom will give a wonderful taste and flavour.

Also used semolina or suji with whole wheat flour or atta to give a crispy texture. You can use butter to make these cookies but better to use ghee or clarified butter. Aroma of ghee made these cookies heavenly. You can use shredded almond or cashew nuts in the dough. I didn’t but used some cashew nuts and pistachio for garnishing. But this step is optional. You can also make the cookies without nuts if you want. Do try and after tasting these cookies, I am sure you will never buy nankhatai from store. Homemade nankhatai are much better than store bought.

Recipe

Besan or chickpea flour – 1 cup

Atta or whole wheat flour – 1/2 cup

Semolina or suji – 2 tablespoon

Powdered sugar – 3/4 cup

Ghee or clarified butter – 3/4 cup

Cardamom powder – 1/2 teaspoon

Baking powder – 1/2 teaspoon

Baking soda – 1/4 teaspoon

Milk – 2 tablespoon or as required

Cashew nuts and pistachio as required

Method

1. Preheat the oven at 170°. Grease a baking tray or line with parchment paper.

2. In a bowl mix besan or chickpea flour, atta or whole wheat flour, semolina or suji, cardamom powder, baking powder and soda.

3. In a large bowl whisk melted ghee or clarified butter and powdered sugar. Whisk till mixture becomes creamy. If the weather is hot use room temperature ghee. No need to melt the ghee.

4. Now add all the dry ingredients. Combine everything to make a dough. In chilled weather ghee solidify quickly so if require add little milk to make a smooth dough. Or you can also add 2-3 tablespoon more ghee if you want. I used 2 tablespoon milk because my kids like crisp cookies. If you want mouth melting cookies skip milk and add 2-4 tablespoon more ghee to make a smooth dough.

5. Make small balls. I made 26 cookies with this dough. Press the balls gently with your palm and arrange on the greased or lined baking tray. Don’t forget to leave some space between the cookies.

6. Place half cashew nut on the middle of the every cookies. Press gently. You can also use pistachio or almond. I have used cashew nuts and pistachio. You can also use both on every cookies.

7. Bake in preheated oven for 12 minutes or till edges becomes light brown. Take out the cookies immediately after baking. I have made the cookies in two batches. And taken out the first batch after a few minutes. Colour of the cookies becomes brown. So don’t leave the cookies in hot oven after baking. Take out the baking tray from oven immediately after baking.

8. Enjoy the delicious cookies or nankhatai when completely cool down. Or store in airtight container for later use.

Date Palm Jaggery Coconut Cake/Mawa Cake

Date palm jaggery coconut cake. A teacake made with mawa or khoya and date palm jaggery or khajur gur/nolen gur. You can also use coconut sugar if you don’t have date palm jaggery. Richness of mawa and flavour of date palm jaggery made this cake divine. Try this palm jaggery flavoured cake and enjoy the delectable taste. You can call it a sankranti special cake. Because this cake is made of all the sankranti special ingredients.

I have used all the ingredients which we usually use in sankranti special delicacies. Like date palm jaggery or khajur gur, rice flour, coconut and mawa or khoya. Earlier shared Semolina or rawa cake with sankranti special ingredients. And here are some different types of Sankranti special recipes.

1. Ranga aloor pithe or sweet potato dumplings

2. Til badam laddu

3. Moong dal fried and baked pithe

4. Baked dudh puli

5. Date palm jaggery oats dry fruits cookies

6. Malpua

7. Khejur gur or nolen gur payesh/kheer

8. Gokul pithe

9. Kheerer malpua or mawa malpua

10. Rice kheer or pudding

And a bhog or sankranti special Bhuni khichuri.

This cake recipe is very simple and made with all the easily available ingredients. You have to blend the mawa/khoya and grated jaggery with oil, milk and vinegar first. Blend really well till jaggery completely dissolved. If you don’t have date palm jaggery or khajur gur then you can use cane jaggery, sugar, brown sugar or any sweetener of your choice. But taste and flavour may differ. You can get similar taste with coconut sugar only. So I recomend to use coconut sugar if you don’t have date palm jaggery. You can also use chopped cashew nuts, almond, raisins, walnut or any dry fruits of your choice.

Recipe

All purpose flour/refined flour or maida – 1 cup

Rice flour – 1/2 cup

Desiccated coconut – 1/2 cup

Semolina or suji – 2 tablespoon

Cardamom powder – 1/2 teaspoon

Baking powder – 1 teaspoon

Baking soda – 1/2 teaspoon

Mawa/khoya or dried milk – 3/4 cup

Oil – 1/3 cup

Date palm jaggery or khajur gur – 1 cup, grated

Vinegar or lemon juice – 1 tablespoon

Milk – 3/4 cup

Lightly roasted sesame seeds to sprinkle

Method

1. Grease or line a baking pan with parchment paper. Sprinkle little sesame seeds so that you also serve the cake upside down if you want.

2. Preheat the oven at 160°. For OTG preheat at 180° for 10 minutes.

3. In a bowl mix all purpose flour or maida, rice flour, desiccated coconut, semolina or suji, cardamom powder, baking powder and soda.

4. In a large bowl whisk grated date palm jaggery or khajur gur/nolen gur, mawa/khoya or dried or dried whole milk, oil and vinegar or lemon juice. Whisk well till jaggery completely dissolved and everything combined well. Add 1/2 cup milk and whisk again.

5. Now add all the dry ingredients. Mix well and make a smooth lump free batter. You can add little more milk if required. But first add only 1/2 cup milk. Batter shouldn’t be runny. Make a thick but flowing batter.

5. Pour the batter in greased baking pan and tap the pan gently on your kitchen counter to remove the air bubbles. Sprinkle sesame seeds over it.

6. Bake in preheated oven for 35-40 minutes or until toothpick comes out clean. Every oven takes different time so check after 30 minutes. Insert a toothpick in the middle. If it comes out clean then your cake is ready.

7. Remove the cake from oven and let it cool down. Cut and serve the soft moist cake warm or at room temperature. Enjoy the heavenly taste.

Notes

1. You can use whole wheat flour or atta or any other flour instead of all purpose flour or maida.

2. Cane jaggery, brown sugar or powdered sugar can be used instead of date palm jaggery or khajur gur. But for best result use coconut sugar if you don’t have date palm jaggery.

3. You can also add chopped cashew nuts, almond, walnut or any dry fruits of your choice in the batter.

Seeds Date Oats Cookies

Oats cookies with mixed seeds, almond and sabja or basil seeds. You don’t need sugar or jaggery to make these cookies. Cookies are sweetened with dry dates powder. Enjoy the delectable taste with milk, tea or coffee. Or make large size cookies to serve as breakfast cookies.

These healthy, delicious and crispy crunchy cookies are perfect for health watchers and kids. I have used sabja or basil seeds as egg replacement. First grind and make a powder of sabja or basil seeds then soak in water for 10-15 minutes, your egg substitute is ready. Basil seeds are high in fiber, a good source of minerals, rich in plant-based omega-3 fat, and plentiful in beneficial plant compounds. Basil seeds are a little larger than chia seeds but have a similar nutritional profile. Source – Healthline

Roasted mixed seeds will give a nice crunch to your cookies and also make it healthy. This time I have a pack of roasted mixed seeds, including roasted pumpkin seeds, sunflower seeds, muskmelon seeds and flax seeds. I also used it in delicious Jaggery oats sesame cookies. Earlier I had a packet of roasted sunflower, pumpkin, flax, watermelon, chia and gojiberries seeds. Which I used in Wholewheat milk bread with mixed seeds,

Mango raisins overnight oats and

Gluten free bread with garlic and mixed seeds.

You can use whatever you have. Seeds are great sources of fiber. They also contain healthy monounsaturated fats, polyunsaturated fats and many important vitamins, minerals and antioxidants. When consumed as part of a healthy diet, seeds can help reduce blood sugar, cholesterol and blood pressure. To read more about seeds click here.

As I mentioned above I didn’t use sugar or jaggery. Cookies are sweetened with dry date powder. And I love to cook or bake with this date powder. A healthier alternative of sugar or jaggery. Now coming to the recipe. You don’t need to whisk or cream the butter first. Just combine everything, make a smooth dough, give shape and bake. You can use oatmeal if you have. I have used ground rolled oats. Also used little whole oats with roasted mixed seeds to give the cookies a crunchy texture. Dry date powder made these cookies perfectly sweet for us. But if you want your cookies sweeter then you can add 1-2 tablespoon more date powder. Taste the dough and add as require.

Recipe

Oats – 1 cup

Sabja/basil seeds – 1 tablespoon

Water – 3 tablespoon

Ghee/clarified butter or butter – 3 tablespoon

Roasted mixed seeds – 4 tablespoon

Dry date powder – 1/4 cup

Almond – 12-14

Desiccated coconut – 4 tablespoon

Cinnamon powder – 1/4 teaspoon

Baking powder – 1/2 teaspoon

Milk – 1 tablespoon

Vanilla essence – 1/2 teaspoon

Method

1. Grease or line a baking tray. Preheat the oven at 170°.

2. Grind the sabja or basil seeds in your mixer grinder. Take out in a large bowl and add 3 tablespoon water. Keep aside for 10-15 minutes. Sabja seeds powder will soak all the water within 5 minutes.

3. In the same grinder grind almond and place on a plate. Now grind 3/4 cup rolled oats into fine powder. Reserve 1/4 cup oats to use whole.

4. In the bowl of soaked sabja seeds powder add all the ingredients. And make a smooth dough. Don’t knead much. Just combine everything well.

5. I like my cookies lightly sweetened. Taste the dough before making balls. If you want your cookies sweeter then add 1-2 tablespoon more date powder if required.

6. Make small balls and press gently with your palm. Arrange the cookies on greased or lined baking tray one inch apart. You can make these cookies small or large size breakfast cookies. I have made 13 small cookies. Press the cookies again with a fork or spoon to make flat.

7. Bake in preheated oven at 170° for 12 minutes or till the edges becomes brown.

8. Let the cookies cool down completely before serving. Cookies will soft when hot and becomes crisp after cooling. Serve these healthy and yummy cookies with milk, tea or coffee. Nutritios cookies are also great to satisfy your sudden hunger pangs or for your sweet craving.
