Ragi Or Finger Millet Oats Chocolate Cookies 

Ragi or finger millet oats chocolate cookies.

Gluten free, eggless, delicious and healthy cookies for your kiddos and for you too 😊

Nutritious and iron rich ragi or finger millet is a wonder food for adult and kids both.

Calcium deficiency can be cured by taking ragi regularly.

Ragi is the common name of Finger Millet in Southern part of India (and known as Nachni in the northern part of India). Along with oats this is one of the most nutritious food and one of the easy one to digest. It is rich in calcium and protein and also have good amount of iron and other minerals. It is low in fat most of which are unsaturated fats.

So here is a delicious way to enjoy healthy ragi and oats both. You can give it in your kid’s tiffin.

I have used ghee or clarified butter but you can use unsalted butter if you like.


Recipe


Ragi or finger millet flour – 1 cup

Oats – 1/2 cup

Powdered sugar – 1 cup

Ghee or clarified butter – 1 cup

Baking powder – 1/2 teaspoon

Baking soda – 1/4 teaspoon

Cocoa powder – 2 tablespoon

Vanilla essence – 1 teaspoon

Method


Preheat the oven at 180° for 10 minutes.

Grease a baking tray or line with parchment paper or aluminium foil.

Grind the oats into fine powder.

In a bowl sift ragi or finger millet flour, oats powder, baking powder, soda and cocoa powder.

In a large bowl cream 3/4 cup ghee or clarified butter and powdered sugar.

Add vanilla essence and whisk well.

Now add the dry ingredients.

Mix well and make a smooth dough. Add the remaining ghee if require.

Take 1 tablespoon of the dough. Make round ball with your hand. Press gently.

Make all the cookies and arrange on the greased or lined baking tray 1 inch apart.

Bake in a preheated oven for 12 – 15 minutes or until the edges becomes brown.

Cookies will be soft when hot so let them cool down completely.

Serve these delicious, healthy and melt in mouth cookies with a glass of milk to your to kids.

Or enjoy with your tea or coffee.

Or store in a airtight container for later use.

Soya Paneer / Cottage Cheese  Lollipop 


Soya paneer lollipop.

A very easy and delicious appetizer for your evening snacks or party starter.

You don’t need to saute,  just mix everything and fry. Your delicious soya paneer lollipop is ready.

Its a healthy and delicious snack for your kiddos. You can pack it in their lunch box. You will love these  crispy and yummy soya paneer lollipop. 

This week’s our 109th #Foodiemonday bloghop theme is #Onastick. My contribution is this super yummy and healthy soya paneer lollipop.

Soya is called unique food for it’s high protein content and having surplus vitamins, fibers and minerals.

Soya beans are a wonder beans for the grown ups and teen ages.

I have added paneer in it.

 Protein and calcium rich paneer/cottage cheese is a healthy food. Its a source of various other nutrients and low fat content.

If you have all the ingredients ready then you can make it in a jiffy. You have to mix everything and fry. You can shallow fry it in little oil or deep fry. Choice is yours.

Recipe 


Soya granules – 1/2 cup

Paneer or cottage cheese – 1/2 cup

Potato – 1 large, boiled

Ginger – 1/2 inch piece, grated

Green chilli – 2 – 3  finely chopped

Onion – 1 chopped 

Garlic powder – 1 teaspoon

Cumin powder – 1 teaspoon

Garam masala powder – 1/2 teaspoon

Red chilli flakes – 1/2 teaspoon

Black pepper powder – 1/2 teaspoon

Lemon juice – 2 teaspoon

Cilantro – handful, chopped

Salt to taste 

Rice flour – 3 tablespoon

Breadcrumbs – 1/4 cup + 2 tablespoon

Oil for frying 

Ice-cream sticks as require 

Method 


Heat the soya granules in 1 cup water. When it starts to rolling boil. Cover and remove from heat. Or you can microwave for 2 minutes on high power.

Let it cool down. Drain the water and squeeze well.

Peel and mash or grate boiled potato.

In a large bowl mix squeezed soya granules, mashed potato, grated or mashed paneer or cottage cheese, grated ginger, chopped green chilli,, chopped onion, garlic powder, cumin powder, garam masala powder, red chilli flakes, black pepper powder, lemon juice, chopped cilantro or coriander leaves, salt, rice flour and breadcrumbs. You can add 1/4 to 1/2 cup boiled green peas in it. 

Mix well with your hand. If require add little more breadcrumbs. You can also use oats for binding.

Make equal size balls. I have made 6 lollipop but you can make small bite size 12 lollipop.

Shape the balls like cutlets or croquettes.

Heat oil a nonstick pan. 

Fry the cutlets in it till the cutlets becomes golden brown.

Flip and fry the other side too. Remove and place on a paper towel. 

You can also deep fry them.

 Insert an ice-cream stick to the every cutlets. 

Serve hot with tomato sauce or any sauce or chutney.

Dairy Free Coconut Dry Fruits Overnight Oats 


Dairy free coconut dry fruits overnight oats.

For overnight oats you have to soak the oats in any kind of liquid of your choice. You can use any milk like almond milk, soya milk, coconut milk etc, yogurt or any fruit juice in equal amounts of oats.

You will love the taste of this overnight oats even if you don’t like oats. The taste is just like a dessert. I am sure you will love it.

I love overnight oats as breakfast. Because its not only delicious but very easy to make and filling, just mix everything in a jar cover and keep in refrigerator and go to sleep. You don’t need to cook anything in the busy morning. Your breakfast is already ready in the refrigerator, just take out and enjoy.

Oats is a healthy option for breakfast. Oats are loaded with Dietary fiber, more than any other grain. Oats have a range of healthy cholesterol lowering properties, helps control weight, reduces blood pressure, stabilize blood sugar, good for skin, enhances immune system, lower the risk of colon cancer.

And we all know oats as world’s healthiest food. Better way to gain the strength and energy.

I have used cashew nuts, raisin, almond and coconut. You can use any dry fruits of your choice. I have pomegranate and apple so I have added them. You can add banana or any fruit or if you like skip the fruit, make it with only dry fruits. If you don’t want to add fruit increase the amount of dry fruits.

Recipe 


Oats – 1/4 cup

Coconut milk – 1/4 cup

Honey – 2 teaspoon or to taste

Cashew nuts – 1 tablespoon, chopped

Raisins – 1 tablespoon

Fresh coconut – 1 tablespoon, finely chopped or grated

Almond – 1 tablespoon chopped

Cashew, raisin, almond, chopped fresh coconut and walnut for topping

Apple and pomegranate seeds as require

Method 


Soak the raisins in little water for few minutes. Drain and keep aside.

Mix oats, coconut milk and honey. Taste and adjust the sweetness.

Add 1 tablespoon soaked raisins, chopped almond, cashew nuts and coconut. Mix well.

Take a jar or bowl. Place chopped apple and pomegranate seeds in the jar. Pour dry fruits mixed and coconut milk soaked oats over the fruits. Cover and shake the jar and keep it in the refrigerator for overnight.

Next day take out the jar.

Top with some more chopped apple and pomegranate seeds. You can add the fruits at night but I have added some more over it before serving to retain the crunch of the freshly chopped fruits. If you like you can make it without any fruit,  just increase the amount of dry fruits. Or you can use banana or any other fruits of your choice.

Now top with some dry fruits over it. You can Garnish with dry fruits of your choice. I have used cashew, almond, raisin, walnut and chopped coconut.

Enjoy chilled as your breakfast. Or serve as a dessert.

Veg Calzone 

Veg calzone. 

Calzone is a dish of Italian origin that is made of pizza dough. Pizza dough folded in half and filled with cheese, tomato and Origano etc. 

I have used soya granules in the stuffing. If you want to make a non veg version you can use minced and boiled meat instead of soya granules. 

Make it as a party snack or for evening snacks for kids. 

Or make large sized calzone and serve as dinner.

I have used refined flour and whole wheat flour both. But you can make it with only whole wheat flour or only refined flour too. Or use half portion whole wheat flour and half refined flour. 



Recipe 



Atta or wholewheat flour  –2 cup 

Refined flour – 1 cup 

Yeast –  2 teaspoon

Sugar –  1/4 teaspoon

Milk – 1 and 1/4 cup or as require to make a soft dough

Salt  – 1/2 teaspoon

Oil  – 2 tablespoons

Garlic paste  – 2 teaspoon

Oregano  – 1 teaspoon

Black pepper powder  – 1/2 teaspoon

Some flour for dusting

For stuffing 



Onion – 3 sliced 
Capsicum – 1 large, thinly sliced 
Soya granules – 1/4 cup 
Garlic paste – 2 teaspoon
Pizza sauce – 1/4 cup 
Tomato ketchup – 2 tablespoon 
Origano – 2 tablespoon 
Chilli flakes – 1-2 teaspoon or to taste 
Black pepper powder – 1/2 teaspoon 
Cheese cube – 2



Method 



Take 1 cup lukewarm milk in a large bowl. Milk should be just warm not hot.
Add 1/4 teaspoon sugar and 2 teaspoon yeast. Stir well to dissolve both.

Now keep it covered for 15 minutes or until the mixture bubbled up. 

Add salt, oil, Oregano, garlic paste, black pepper powder and half of the flour. Mix well with a spoon.

Now add remaining flour and knead with hand. Knead well and add more milk if require. Knead the dough for 8 to 10 minutes. 

Smear the dough with some oil and cover. Allow the dough to proof for 2 hours. If the weather is cold increase the time.

For stuffing soak soya granules in hot water or microwave for one minute. Soak for 15 minutes. 

After 15 minutes drain water, squeeze and keep aside. 

Heat oil or butter in a pan. Add sliced onion. Fry till the onion becomes translucent. Add garlic paste. Fry till the onion becomes brown. 

Add chopped capsicum. You can use red or yellow bell peppers, olive or jalapeno if you have. 

Stir and add soaked soya granules. Saute for 1-2 minutes. 

Now add pizza sauce, tomato ketchup, origano, chilli flakes, black pepper powder. Saute for one minute more. 

Add chopped or grated cheese cubes. Mix well and remove from heat. 

Let the mixture cool down.

Preheat the oven at 200° for 15 minutes. 

Grease a baking tray or line with parchment paper or aluminium foil. 

Now take out the dough. It will be double. Punch down the dough to remove the air.
 

You can make 6-7 large calzone. I have made 14 small sized calzone and 3 small braided pizza out of this dough. 

Divide the dough into equal portion. Make balls out of each portion. Roll out into thin circles on a flour dusted surface. 

Fill each circle with stuffing on half of the circle. 

Leaving the edges. Spread grated mozzarella cheese over the stuffing. Fold half of the circle over it. 

Press the edges to seal and ensure stuffing does not spill out. Use a fork to seal the edges. 

Make small slits with a knife over every calzone to escape the steam. 

Brush with butter or oil. 

Bake for 15-20 minutes or until the calzone becomes golden brown. 

Let the calzone cool for 5-6 minutes before serving.

Serve with tomato sauce or cheese dip or any sauce.

Raksha bandhan or Rakhi is a festival that is celebrates the love and duty between sisters and brothers.

The world Raksha bandhan means the bond of protection. On this day sisters tie rakhi or sacred thread on brother’s wrist and pray for his happiness and prosperity.

Raksha Bandhan is an ancient festival of the Indian subcontinent, and its history dates back thousands of years.

According to one legendary narrative, when Alexander the Great invaded India in 326 BCE, Roxana (or Roshanak, his wife) sent a sacred thread to Porus, asking him not to harm her husband in battle. In accordance with tradition, Porus, the king of Kaikeya kingdom, gave full respect to the rakhi. In the Battle of the Hydaspes, when Porus saw the rakhi on his own wrist and restrained himself from attacking Alexander personally.

Our this week’s 104th #Foodiemonday bloghop theme is #Festiverecipes.

And today is Raksha bandhan. This rasgulla kheer is perfect for this occasion.

I have used homemade rasgulla in this kheer or pudding.

You can use store bought small sized rasgulla or anguri rasgulla to make this kheer or pudding. Just thickened the milk with cardamom powder and a pinch of saffron and add rasgulla in it. Add sugar as require. Rasgulla is already sweet so be careful when adding sugar.

Recipe 


Paneer or cottage cheese – 1 cup

Sugar 1 cup + 4 tablespoon

Milk – 1 litre

Cardamom powder – 1 teaspoon

Saffron – a pinch

Shredded almond and pistachio to garnish

Method 


Mash the cottage cheese with your palm. Use the heel of your palm to make the paneer smooth. Knead till it becomes lightly greasy. Make small balls.

In a large saucepan mix 1 cup sugar with 3 cup water. Rasgulla become double when cooked. Add 1/2 teaspoon cardamom powder.

Boil it until the sugar dissolve completely. When it starts to rolling boil slid the paneer balls in it.

Cover and cook for 20-25 minutes. You can check after every 5 minutes shake the saucepan gently.

After 20-25 minutes when the rasgullas becomes double in size remove from heat.

Let it cool down.

Now heat 1 litre milk in a heavy bottom pan. When it starts to boil lower the heat. Cook on simmer. Stir occasionally.

When the milk becomes half add a pinch of saffron, 4 tablespoon sugar and 1/2 teaspoon cardamom powder.

Let it cook on low flame till its become 1/4. It will be thickened when cooled.

Squeeze out the syrup from all the rasgullas. Press gently to squeeze, rasgulla may break if press hard.

And drop in the thickened milk. Taste and check the sugar. Add little more if require.

If you don’t want to make rasgulla at home you can use store bought small sized rasgulla or anguri rasgulla to make this kheer.

Let the milk boil again cook on low flame for 5-8 minutes more. Remove from the heat.

Cover and keep aside 15-20 minutes. Rasgulla will soak the milk.

Serve in individual bowl. Garnish with chopped pistachio, almond and saffron thread.

Or keep in refrigerator and serve chilled.

Enjoy the heavenly taste.

Banana Almond Mint Smoothie 


Banana almond mint smoothie.

One more healthy, yummy, chilled and refreshing drink to beat the heat.  And yes very easy to make.

Smoothie is an easiest way to nourish your body with essential nutrients. It gives you essential minerals and vitamins too. You need only some fruits, milk or yogurt and a blender to make this healthy and yummy drink.

Bananas are available in every season and packed with vitamins and minerals.

And almonds are excellent source of vitamins and heart healthy monounsaturated fat.

Yogurt has been consumed by humans for hundreds of years.

It’s very nutritious, and eating it regularly may boost several aspects of your health.

For example, yogurt has been found to reduce the risk of heart disease and osteoporosis, as well as aid in weight management.

You can take all three in a delicious way. Just blend everything and its ready. You can add ice cubes and enjoy as a chilled drink. I have used everything frozen so didn’t used ice cubes. You can add cinnamon or cardamom powder if you don’t like mint.

Recipe 


Yogurt – 1 cup

Banana – 2 peeled and chopped

Almond – 5 – 6 soaked and peeled

Lemon juice – 1 teaspoon

Mint – few leaves

Honey or sugar – 2 teaspoon or to taste

Ice cube – as require

Shredded almonds, lemon wedge and mint string for garnishing

 

 

Method 


Combine every ingredients. Blend until smooth and frothy.

You can add cinnamon or cardamom powder if you don’t like mint. You can add raisins or any soaked dry fruits of your choice.

Taste and add more honey, sugar or lemon juice if require.

Pour the mixture into your favourite glass. Add some ice cubes if require.

I have used everything frozen so didn’t used ice cubes.

Garnish with shredded almonds, lemon wedge and mint string.

Serve chilled.

Gazpacho Or Cold Soup 

Gazpacho 

In this hot weather we want some no cook dishes, right? 😀

Yes we enjoy smoothies, cooler, mojito and different types of fruit juice and mocktails in this season. 

Now what about some refreshing  chilled, yummy and healthy soup made of raw vegetables and fruits. Nothing is better than a bowl of gazpacho in summer. Some crisp toast and a bowl of chilled no cook soup, perfect dinner for summer. 

Gazpacho is a Spanish cold soup made of raw vegetables.

Our this week’s 91st #Foodiemonday bloghop theme is #20minutes recipes. My contribution is this chilled, refreshing, healthy and yummy gazpacho. 

If you have all the ingredients in your pantry  you can make it in a jiffy. Just chop and blend. Keep it in refrigerator and serve chilled or add some ice cubes. 

Instead of sugar I have used grapes and watermelon. Fruits made the soup delicious and healthy. And both are easily available in this season. I have used almonds to give a creamy texture. 



Recipe 



Chopped tomatoes – 3 cup 

Cucumber – 1 small peeled and chopped 

Onion – 1 small chopped 

Garlic – 1 clove chopped 

Capsicum – 1 small chopped 

Seedless watermelon cubes – 1/4 cup 

Grapes – 1/4 cup

Chopped cilantro – 1/4 cup

Vinegar or lemon juice  – 2 tablespoon 

Almonds – 1/4 cup soaked and peeled 

Olive oil – 1 tablespoon, optional 

Salt and pepper to taste 

Chopped tomato, cucumber, onion and cilantro for garnishing



Method 


Taste the chopped cucumber. It shouldn’t be bitter. 

Combine all the ingredients. Blend in a mixer grinder. 

I have made it smooth but you can keep it little coarse if you like. 

I have used vinegar, you can use lemon juice too if you don’t like vinegar. 

Taste and adjust salt, pepper and vinegar or lemon juice if require. Drizzle olive oil. I didn’t. 

Garnish with chopped cilantro, tomato, cucumber and lemon wedges. 

Keep in refrigerator and serve chilled. Or you can add some ice cubes if you want to serve it immediately. 

Serve with crisp toast. 

Enjoy the delicious, refreshing and chilled gazpacho or cold soup.
