Here is a healthy and quick recipe for my 400 post. Thanks everyone for your love and support.

Watermelon salsa is a perfect appetizer for summer. Very easy and quick to make. Just combine everything. Refrigerate for few minutes and enjoy. If you have mango, strawberry or any other fruit then you can add them in this salsa. Use the fruits according to your choice. Bowl full of this salsa is refreshing, filling, healthy and delicious. Loaded with vitamins, minerals and nutrients, watermelon is one fruit you should not miss this hot season.
own as a body-healing fruit, watermelon is full of amazing health benefits, especially during the summer season. Because clearly, it is the best time to indulge in this fresh, succulent melon, as it has to offer an array of nutrients, vitamins and minerals. The fruit is incredibly hydrating, with up to 92 per cent water content, making it naturally low in fat.

If you eat watermelon on a daily basis, it can improve your cardiovascular health and protect your eyes and immune system.

I have used boiled sweet corn, cucumber and tomato in this salsa. You can use red and yellow bell pepper, mango, pineapple, strawberry or any fruit of your choice.

Recipe

Watermelon – 2 cup, scooped or cubed

Sweet corn – 1/2 cup, boiled

Cilantro or coriander leaves – 2 tablespoon, chopped

Green chilli – 1 finely chopped

Cucumber – 1, peeled and cubed

Tomato – 1 cubed

Red onion – 1, chopped

Freshly crushed black pepper – to taste

Dried mint leaves – 2 tablespoon, crushed

Or

Fresh mint leaves – 2 tablespoon, chopped

Orange juice – 1/4 cup

Lemon juice – 1 tablespoon

Rock salt or black pepper – to taste

Method

1. Combine everything in a glass bowl. Mix gently.

2. I have used dried mint leaves. If you are using dried mint leaves like me then crush the dried leaves with your both palm and mix.

3. Garnish with cilantro or coriander leaves or mint leaves.

4. Refrigerate for 30 minutes and serve with tortilla chips or papad. Or enjoy bowl full as appetizer.

Notes

1. You can use jalapeño, red and yellow bell pepper, mango, strawberry, pineapple, fresh coconut pieces or any fruit of your choice.
2. Add chilli and black pepper according to your taste.

Monday again and this week’s 189 #Foodiemonday bloghop theme is gajar ka jalwa suggested by Poonam Bachhav who blog at Annapurna.
Do visit her space for some healthy and delicious recipes. So we bloghop members are celebrating Carrot day with different carrot recipes.

Earlier I have used Soyabean flour and oats in my cakes. But this time also used cornmeal. And very happy with the taste and texture. Coming soon with one more bake with cornmeal.
Till then enjoy this soft and moist carrot cake. I have made it simple. But you can add choco chips or any dry fruits like raisins, cashews, almond or walnut etc in the batter.
I have made it in bundt pan but you can use round, square or any baking pan or loaf pan. Or use muffins or cupcake moulds to make cupcake.

Recipe

Grated carrot – 1 & 1/2 cup

Cornmeal – 1/2 cup

Oats powder – 1/2 cup

Soyabean flour – 1/2 cup

Cinnamon powder – 1 teaspoon

Cardamom powder – 1/2 teaspoon

Nutmeg powder or grated nutmeg – 1/4 teaspoon

Baking powder – 1 teaspoon

Baking soda – 1/2 teaspoon

Milk powder – 1/2 cup

Milk – 3/4 cup

Vinegar – 1 tablespoon

Olive oil or butter – 1/4 cup

Powdered sugar – 1/2 cup

Method

1. Preheat the oven at 180°.

2. Grease a baking pan and dust with cornmeal.

3. Grate the carrot with fine grater. You can use your food processor but use the attachment accordingly. I have used box grater.

4. Mix vinegar in room temperature milk and keep aside.

5. In a bowl sift cornmeal, oats powder, soya flour, baking powder, soda, cardamom powder, cinnamon powder and nutmeg powder.

6. In a large bowl whisk oil or butter and powdered sugar.

7. Add vinegar mixed milk and whisk again.

8. Add milk powder and whisk well.

9. Add all the dry ingredients gradually and mix. Make a smooth and lump free batter.

10. Fold in grated carrot.

11. Pour the batter into greased and flour dusted baking pan.

12. Tap the pan gently to remove air bubbles.

13. Bake in preheated oven at 180° for 30 – 40 minutes.
Every oven take different time so check after 25 minutes. Insert a toothpick in the middle, it should comes out clean.

14. Let the cake cool down completely before serving.

Notes

1. You can add any dry fruits or choco chips in the batter.
2. Refined flour, whole wheat flour or any mixed flour can be used instead of cornmeal oats and Soyabean flour.
3. Instead of bundt pan you can use any baking pan. Or muffins or cupcake moulds can be used to make cupcakes with this batter.

Festival of light Diwali is around the corner.
On this auspicious occasion,

According to Wikipedia
Diwali or Deepavali is the Hindu festival of lights, which is celebrated every autumn in the northern hemisphere. One of the most popular festivals of Hinduism, Diwali symbolises the spiritual “victory of light over darkness, good over evil and knowledge over ignorance”.

We serve different delicacies in this festive season to our guests. This Diwali you can serve your guests some delicious homemade sweet or desserts.
Here is a collection of sweets from my archive. Some different flavoured sandesh and rasgulla along with other delicacies. Hope you will like them.

1. Paneer stuffed parwal mithai

Cottage cheese or paneer stuffed parwal mithai or pointed gourd sweet. Sugar syrup soaked parwal or pointed gourd stuffed with cardamom flavored paneer/cottage cheese, almond and pistachio mixture. You can imagine the heavenly taste.

2. Watermelon rasgulla

Rasgulla is a dessert made with ball shaped paneer/chhena or cottage cheese dumplings cooked in light sugar syrup. And I have used watermelon juice instead of sugar syrup to make these rasgulla.

3. Coconut sweet

Sometimes we don’t want to eat or serve store bought sweets. Everyone prefer home made sweets. Because its more healthy and you make it with love so more yummy too.
Here is a delicious and easy to make coconut sweet.
Highly nutritious coconut is packed with vitamins and minerals.

4. Gulkand stuffed chocolate modak

A very delicious melt in mouth modak. Chocolate and Gulkand are a great combo. Two different taste and flavour made these modak superbly delicious.

5. Cherry pineapple kesari

A delicious aromatic pineapple and saffron flavoured halwa. Hint of cherry made this dessert more yummy.

6. Chana dal halwa

Hayagriva or Hayagreeva maddi or chana dal/Bengal gram halwa.
A very easy to make and delicious traditional sweet dish from Karnataka cuisine. No sugar added, its made of jaggery . Its usually made to offer to God as naivedya and served as prasad.

6. Gulab jamun

Gulab jamun is a most popular dessert of India. Its a deep fried milk solid dumpling soaked in rose, cardamom and saffron flavourd sugar syrup.

7. Aam or mango rasgulla

Rasgulla is a popular dessert made with ball shaped paneer/chhena or cottage cheese dumplings cooked in light sugar syrup. And I flavoured it with mango. Mango flavour made these rasgulla more delicious.

8. Rasgulla with tips and tricks

A popular dessert made with ball shaped paneer/chhena or cottage cheese dumplings cooked in light sugar syrup.

9. Baked rasgulla

Rabdi soaked rasgulla covered with makha sandesh or date palm jaggery or khajur gur sandesh, condensed milk and malai or milk topping. These ingredients made this dessert heavenly.

10. Chhanar jilipi or paneer jalebi

Chhanar jilipi or paneer/cottage cheese jalebi. A sweet made of cottage cheese/paneer or chhena. Taste is almost similar to gulab jamun or pantua.

11. Chhena poda or baked cottage cheese

Its a very delicious baked dessert, made of fresh cottage cheese or chhena/paneer sugar, cardamom, cashew nuts and raisins. Flavour of cardamom and caramelised sugar made this dessert heavenly.

12. Coconut sandesh with date palm jaggery

Date palm jaggery or khajur gur /nolen gur/patali gur is a winter delicacy and mainly produced in Bengal.

13. Chocolate sandesh

A very simple recipe yet delicious. You will love the chocolaty taste. I have used choco chips over it, if you don’t have choco chips you can use pistachio to make your sandesh beautiful.

14. Coconut pomegranate sandesh

A delicious and soft dessert to celebrate this festival. Made with cottage cheese, coconut and pomegranate juice.

15. Pantua

A delicious melt in mouth dessert. In North India gulab jamun is very famous and its looks like gulab jamun right? But its not gulab jamun. Gulab jamun is made of khoya or milk solid and pantua is made of paneer or cottage cheese.

16. Kheer kadam

Kheer Kadam or Kheer kodombo or Kheerkodom is an exotic sweet of Bengal made of mini rasgullas, mashed sweetened and flavoured khoya and roasted poppy seeds.

17. Chocolate burfi or fudge

You don’t need much ingredients to make it. You need only khoya/mawa or dried milk, milk powder, sugar, vanilla essence and dark chocolate. Easy isn’t it 😊

18. Gulkand stuffed laddu

Gulkand stuffed khoya or mawa paneer laddu.
I have used homemade mawa or khoya and paneer in it. These delicious and melt in mouth laddus are very easy to make.

19. Paan sandesh

Paan sandesh or betel leaf flavoured sandesh.
A very delicious paan or betel leaf flavoured Bengali sweet made of cottage cheese or paneer.

20. Saffron pistachio sandesh panna cotta

Panna cotta is an Italian dessert made of sweetened cream thickened with gelatin or agar agar and moulded. Literally meaning of panna cotta is cooked or thickened cream. And this Saffron pistachio sandesh panna cotta is a fusion recipe. You can taste panna cotta in Bengali sandesh.

21. Mango litchi fudge or burfi

A delicious sweet with the flavour of both mango and litchi.
Its very easy to make. You need only khoya/mawa or reduced milk, sugar and cardamom powder with mango and litchi.

22. Misti doi

Misti doi or caramel flavoured sweet yogurt.
Misti doi is very common dessert in Bengal.
Authentically its made of thickened sweet milk and caramel. And allowing the milk to ferment overnight.

23. Watermelon sandesh

Sandesh is a most popular and delicious dessert of Bengal made with chhena or cottage cheese and sugar or date palm jaggery.
Sandesh can be made with different flavours. Here is a very easy recipe with watermelon.

24. Moong dal burfi or fudge

Moong dal burfi or split green gram fudge.
A very delicious and easy to make sweet for this special accession.

25. Chocolate vanilla fudge or burfi

This time try this easy and super delicious sweet for the festival. You don’t need any fancy ingredients for it. Only milk, little sugar, milk powder, vanilla essence and cocoa powder. Simple isn’t it? Surprise your guests with this super yummy homemade sweets.

26. Chocolate coconut sandesh

A sweet made of soft and smooth coconut mixture and crisp chocolate. Spread happiness with this delicious and easy to make sweet recipe.

27. Dry fruit modak

You can make it in 5 minutes if you have the ingredients ready. Very easy, quick and yummy sweet. Try out this modak shaped delicious sweet for the festival.

28. Apple coconut fudge or burfi

A very delicious and flavourful sweet. On this auspicious occasion try out this easy to make and yummy fudge or barfi.

29. Malpua

Its basically a deep fried pancake. These are fried till the edges becomes crisp then soaked in sugar syrup and garnished with pistachios and served warm with rabri or thickened milk.

26. Kesar pista sandesh

Kesar/saffron pista/pistachio sandesh is very easy and quick to make. You don’t need long hours to prepare it. Very few ingredients and only 2 minutes. Interesting isn’t it 🙂

27. Mango kalakand

Kalakand with the flavour of mango. A sweet flavoured juicy fruit. Mango not only loved for its taste it also has immense health benefits.

28. Mango sandesh

Very easy to make. Only few ingredients with mango makes a delicious sweet.
You need only cottage cheese, reduced milk, mango pulp, sugar and little cardamom powder.

29. Choco coco delight

Mixed flavour of chocolate, cardamom and coconut made this sweet delish. Try and enjoy the heavenly taste.

30. Sandesh

Sandesh is a Bengali dessert made of paneer/chhena or cottage cheese. You can make it in home by curdling the milk and separating the whey from it.

31. Steamed or bhapa sandesh

A delicious steamed sandesh made in microwave. I made it with date palm jaggery or khajur gur you can make it with sugar too.
If you don’t have date palm jaggery follow the recipe with sugar. You can find it at the end of jaggery recipe.

32. Coconut laddu or narkol nadu

A traditional and popular sweet of Bengal. The popularity of this laddu due to its very easy and quick preparation. It needs only 3 ingredients grated fresh coconut, sugar and milk.

33. Orange flavoured steamed or bhapa sandesh

Its an all time favourite traditional sweet dish of Bengal. Mouthwatering but very easy to make.

34. Cake sandesh

This sandesh is a very delicious soft sweet with the aroma of cardamom and chocolate.

35. Chocolate stuffed chocolate sandesh

Chocolate flavoured Sandesh filled with chocolate sauce.

Mango Sesame Chutney

Mango sesame chutney.
A lip-smacking delicious chutney from Andhra Pradesh cuisine.
This chutney is very easy to make. Just grind all the ingredients and add the tempering. You will love with nutty flavour of sesame. You can use it as a dip with any snack.

Tanginess of raw mango and the taste and flavour of chillies, curry leaves and sesame seeds made the chutney lip-smacking.

For recipe swap challenge I was searching for recipes on the blog of Aruna Panangipally. Who blog at aahaaramonline.com
I was paired with her. I made her falafel but I have also bookmarked this mango sesame chutney. And made it in small quantity. Just loved it. So want to share it for my readers. You can check out the original recipe from Aruna’s blog.

You can make it double if you want. But I like to make my chutney or dip in small quantity and make every time fresh. You can add some more chillies if you want your chutney spicy and hot.

Recipe

Raw Mango – 1/2 cup, peeled and chopped

Sesame seeds or til – 2 tablespoon

Turmeric – a pinch

Green chilli – 2 – 3

Salt to taste

Oil – 1 teaspoon

Mustard seeds – 1/2 teaspoon

Dry red chilli – 1

Curry leaves – 4

Method

1. In a grinder grind chopped mango, sesame seeds, green chilli with turmeric and salt.

2. Add water to make thick paste.
When the mixture becomes smooth take out in a bowl. Taste and adjust the seasoning.

3. For tempering heat oil in a small pan.

4. Add mustard seeds and let it splutter.

5. Add dry red chilli and curry leaves. Fry for few seconds.

6. Add the tempering to the chutney. Mix well.

7. Your mango sesame chutney is ready. Serve with idli, dosa or any snack.

Note

Add chilli according to your taste. If you like your chutney hot use more chilli.

Eggless Gluten Free Chocolate Chiffon Cake

Eggless gluten free chocolate chiffon cake.
A cake made with sorghum flour or jowar atta. Soft, moist, light, airy and chocolaty cake. You don’t need to separate egg yolks and whisk. Its very easy to make.

I have used sorghum or jowar flour in it. And very happy with the taste.
Sorghum, an ancient cereal grain that’s a staple crop in India and throughout Africa, has long been considered a safe grain alternative for people with celiac disease and gluten insensitivity. New molecular evidence confirms that sorghum is completely gluten-free, and reports that the grain provides health benefits that make it a worthy addition to any diet.
Sorghum has high nutritional value, with high levels of unsaturated fats, protein, fiber, and minerals like phosphorus, potassium, calcium, and iron. It also has more antioxidants than blueberries and pomegranates.

Recipe

Sorghum or jowar flour – 1 cup

Oats powder – 1/2 cup

Cornflour – 2 tablespoon

Cocoa powder – 2 tablespoon

Baking powder – 1/2 teaspoon

Baking soda – 1/2 teaspoon

Milk – 3/4 cup at room temperature

Warm milk – 1/4 cup

Instant coffee – 2 teaspoon

Vinegar – 1 tablespoon

Powdered sugar – 1 cup

Oil – 1/2 cup

Vanilla essence – 1 teaspoon

Powdered sugar to sprinkle, optional

Method

1. Preheat the oven at 180°.

2. Grease a baking pan and dust with sorghum flour. Or line with parchment paper.

3. Mix 1 tablespoon vinegar in 3/4 cup milk. Milk should be at room temperature.

4. Whisk 2 teaspoon coffee in 1/4 cup warm milk and keep aside.

5. In a bowl sieve sorghum flour, oats powder, cornflour, baking powder, soda and cocoa powder.

6. In a large bowl whisk powdered sugar, oil and vinegar mixed milk.

7. Add coffee mixed milk and vanilla essence. Whisk again.

8. Now add all the dry ingredients gradually and mix well. Make a lump free smooth batter.

9. Pour the batter into the greased and flour dusted baking pan. Tap the pan gently.

10. Bake in preheated oven at 180° for 30 – 40 minutes or until the toothpick comes out clean.

Every oven take different time so check after 30 minutes. Insert a toothpick in the middle, if it comes out clean its done. If not bake for few minutes more.

11. Let the cake cool down.
Sprinkle powdered sugar over it. This step is optional. Cake will be delicious without it too.

12.Slice and serve. Or enjoy the soft delicious chocolate chiffon cake with ice cream.

Notes

1. You can frost the cake if you like.

2. You can use all purpose flour or whole wheat flour instead of sorghum flour.

Virgin Mojito/Mocktail With Watermelon And Fanta

Virgin mojito or mocktail with watermelon and Fanta.
Mojito is a traditional Cuban highball.

Traditionally mojito is a cocktail or alcohol based drink consist of mint leaves, lime juice, sugar sparkling water and white rum.

But virgin mojito has lime juice, mint leaves and sugar syrup.
And mocktail is a non alchoholic drink which consists of a mixture of fruit juices, syrups or soft drinks.

Call it virgin mojito or mocktal but taste is awesome.
Weather is too hot. And its a perfect drink to beat the heat.

I haven’t used sugar in it. I have a Fanta bottle so used it but you can use any  orange flavored carbonated drink.

You can use sparkling water or soda water too but then you have to use sugar in it. You can make it with litchi too if you don’t like watermelon.

Recipe

Watermelon cubes  – 2 cup seedless

Lemon juice  – 2 teaspoon

Mint leaves  – 1/4 cup loosely packed

Fanta  – 1/2 cup

Ice cubes  – as require

Method

Combine watermelon cubes, mint leaves and lemon juice. If you don’t like mint much add only few leaves. Blend till smooth.

Strain the mixture and add Fanta. You can use any orange flavored carbonated drink too.

If you are using sparkling water or soda water add sugar to taste before blending.

Keep the mixture in refrigerator for an hour to chilled.
Now place some ice cubes and few fresh mint leaves in a glass. Pour the mixture over it.

Garnish with mint spring,  lemon and watermelon wedges.
Serve chilled.
Enjoy the heavenly taste.
