Fennel seeds and rock sugar or mishri sharbat with mint. Sounf/mouri or fennel seeds and mishri or rock sugar soaked water is an age old refreshing drink for summer. Fennel seeds and mishri are usually used for mouth freshener. Here is a delicious chilled drink made with fennel seeds and rock sugar soaked water. Not only for mouth freshener but sounf mishri water is also an age old remedy for digestion.

Lemon juice – Vitamin C enriched lemon used to enhance the taste and a lovely refreshing flavour.

Pink or black salt, chaat masala and black pepper used for taste. But its completely optional. You can add only a pinch of pink or black salt and skip chaat masala and black pepper powder. For fasting days omit pink salt too.

You can soak the fennel seeds overnight in refrigerator. Soak the seeds in night and make the drink in next morning. If you want your drink less sweet then add little more water. Make this refreshing drink according to your taste.

Recipe

Fennel seeds or sounf – 2 tablespoon

Rock sugar or mishri – 1 piece

Mint leaves – 25-30

Water – 1 cup + 3/4 cup

Lemon juice – 1 teaspoon

Ice cubes – as require

Black pepper powder – 1/4 teaspoon, optional

Pink or black salt and chaat masala to taste, optional

Method

1. In a bowl soak fennel seeds or sounf and rock sugar or mishri with one cup water for 2-3 hours. You can also steep fennel seeds overnight in refrigerator.

2. When soaked strain the soaked fennel seeds with a sieve. Remove and discard the thread of mishri.

3. Transfer the seeds in a grinder jar. Add mint leaves and 1/4 cup water. You can use less or more mint leaves according to your taste. For light green colour add less mint leaves.

4. Grind into a smooth paste. Strain the mixture again. Add remaining half cup water and press with a spoon to strain well.

5. Add lemon juice and mix. Add salt, black pepper powder and salt in the strained fennel seeds water. This step is optional but it will enhance the taste. Taste and add little more water if its too sweet for you. Add some ice cubes in a glass.

6. Pour the drink over it. Serve chilled. You can also store the drink in a jar and keep in refrigerator for later use.

Spicy Pineapple Virgin Margarita

Spicy pineapple virgin margarita.
A chilled delicious refreshing alcohol free drink.
Sweetness of pineapple, flavour of cumin and mint, hint of chilli and pink salt and tanginess of lemon makes the drink super yummy 😋

Pineapples are rich in vitamins, enzymes and antioxidants. They may help boost the immune system, build strong bones and aid indigestion. Also, despite their sweetness, pineapples are low in calories.

So you can call it a healthy drink. Diet conscious people can enjoy this guilt free delicious drink.

I made it with or without sparkling water. Both are superbly delicious. You can serve it as a party drink. I didn’t add sugar in it. But if you like you can add sugar or sugar syrup according to your taste. I love this drink with the natural sweetness of pineapple.

Recipe

Pineapple – 1 heaped cup, chopped

Mint leaves – 7 – 8

Water – 1/2 cup

Black salt – 1/2 teaspoon or to taste

Chilli flakes or red chilli powder – 1/4 teaspoon

Cumin powder – 1/2 teaspoon

Lemon juice – 2 tablespoon

Method

1. Blend pineapple and mint leaves with water in a blender.

2. Strain the juice with a strainer.
Add pink or black salt, chilli flakes or powder, cumin powder and lemon juice. Blend again. You can add some ice cube with it.

3. Taste and add more salt and lemon juice if require.

4. Rub lemon on the rim of the glass. Now dip the rim in pink salt.

5. Place some ice cube in the glass. Pour pineapple mixture over it.

6. Garnish with lemon wedges and serve chilled.

Notes

1. You can add sugar or sugar syrup if you like.

2. I didn’t use sparkling water but if you want add it just before serving.

Mango Peach Pear Smoothie / Dairy Free Low Calorie Smoothie 


Mango peach pear dairy free low calorie smoothie.

Mango season is about to over. So enjoy this yummy fruit in one more delicious, healthy, chilled, refreshing and filling smoothie.

A chilled glass of smoothie is perfect for this weather.

Our this week’s #Foodiemonday bloghop theme is  #Shravanvratspecial.

Shravan is considered an auspicious month for the Hindus. In North India people avoid non vegetarian food including onion garlic in this month. People observe fast on every Monday during this month.

Presenting a yummy, nutritious, filling, refreshing and power packed smoothie to boost your energy. Take a long glass of smoothie on meal time instead of calorie ladden deep fried food.

I have added peach in this smoothie. Which is a rich source of minerals and dietary fiber. Low calorie peach contain no saturated fat or cholesterol.

Normally I make this smoothie with coconut milk or chopped tender coconut. If you have coconut milk you can add 1/2 cup for a different and delicious taste. Or you can add 1/2 cup chopped tender coconut. If you don’t like pear you can use any fruit instead like chickoo, banana etc.

 

Recipe 


Ripe mango –  1 cup, peeled and cubed

Peach – 1/2 cup cut into small pieces

Pear – 1 peeled and diced

Cinnamon powder – 1/4 teaspoon

Cardamom powder – a pinch

Lemon juice – 1 teaspoon

Honey – 2 teaspoon or to taste

 

Method 


Combine peeled and cubed mango, chopped peach and peeled and diced pear in blender jar.

If you want you can add add 1/2  cup of coconut milk or 1/2 cup chopped tender coconut. Normally I like to add coconut milk or chopped tender coconut in this smoothie but today I don’t have any.

 

If you don’t like pear you can use any fruit instead like banana, chikoo/sapodilla/zapota or any other fruits.

 

Blend until smooth and frothy. Add cinnamon powder, cardamom powder, lemon juice and honey. Blend again.

Taste and add more honey and lemon juice if required.

Place some ice cubes in a glass. Pour the mixture over it. Garnish with mango cubes.

Serve chilled.

Ramadan Mubarak

Muslims are observing Ramadan, a holy month of fasting and religious devotion.

Ramadan is the 9th month of the Islamic calendar and is the holiest of the month as it is believed that the Holy Quran was revealed to Prophet Mohammed during this month.

During this holy month of Ramadan Muslims are required to abstain from eating and drinking from dawn till sunset.

Drinks play a vital role when we are on fasting. A glass of chilled and refreshing drink at Iftaar time is energy boosting.

Fasting is a tough task for people, who abstain from food and drink until sunset in this summer season.

Our this week’s 97th #Foodiemonday bloghop theme is #Ramadan recipes.

Fasting people need to drink more after Iftaar in order to avoid dehydration.

So here is a refreshing chilled and yummy dairy free beetroot smoothie for Iftaar. Beetroots are high in immune-boosting vitamin C, fiber, and essential minerals.

You don’t need to add sugar in it. You can add black salt or rock salt and black pepper powder if you like. I didn’t.

Recipe 


Seedless beetroot – 1 cup cubed

Cucumber – 1 medium

Lemon – 1

Grated ginger – 1/2 teaspoon

Cinnamon powder – 1/2 teaspoon

Flax seed powder – 1 teaspoon
Ice cubes as required
Lemon wedge for garnishing

Method 


Boil the whole beetroot with skin in a pressure cooker.

Let it cool down. Peel and chop the beetroot into small pieces.

Peel and grate or chop the Cucumber. Make small pieces for easy blending.

Combine every ingredients with juice of 1 lemon. You can add some ice cubes too.

Blend until smooth and frothy.

You don’t need to add sugar in it.

Taste and add more lemon juice if require. You can add black salt or rock salt and black pepper powder if you like. I didn’t.

If you don’t like cinnamon, you can omit it. Add few mint leaves instead of cinnamon.

Place some ice cubes in the glass. Pour the mixture over it.

Garnish with lemon wedge. Serve chilled.

Savoury cucumber smoothie or chhach/lassi.

Do you love chhach or butter milk?  Then you will love this delicious cucumber chhach.  Butter milk is called the nectar of earth. And in Ayurveda its categorised as satvic food.

This chilled refreshing low fat and low calorie drink help in weight loss. Apart from that its helps in digestion. A best accompaniment to meal.

Its an excellent source of many nutrients and boost your calcium intake.

Not only that research shows its helps to reduce blood pressure, prevent cancer and lower cholesterol.

And this savoury smoothie has cucumber too. Low calorie vitamins enriched cucumber keeps us hydrated and cool. Its helps in digestion, stabilize blood pressure, good for diabetic and lowers the uric acid levels and keep the kidneys healthy.

Apart from that cucumbers are a source of several compounds that fight inflammation and aging. It can resolves many skin problems and ensures healthy and younger looking skin and also have anti cancer properties.

Coming to the recipe. You can make it without cucumber too. But cucumber made the drink more delicious and healthy.

Recipe 

 

Yogurt – 1 cup

Cucumber – 1 peeled, grated or chopped

Sea salt or black salt to taste

Black pepper powder to taste

Roasted cumin powder – 1/4 teaspoon

Lemon juice – 1 teaspoon

Mint leaves – few

Ice cube – as require, optional

Mint string, grated cucumber, lemon and cucumber wedges for garnishing

Method 

 

Combine everything and blend until smooth.
Taste and add more salt, pepper  cumin powder and lemon juice if require.
I have used sea salt but you can use black salt or normal salt too.
Pour the mixture into a glass and keep in refrigerator until it becomes chilled.

Or

Place some ice cubes in a glass and pour the mixture over it.
Garnish with mint string, cucumber and lemon wedges and little grated cucumber.

Serve chilled.

Virgin Watermelon Mojito 


Virgin mojito with watermelon and cucumber. 

A refreshing, delicious and chilled drink to keep your body hydrated. Watermelon and cucumber both have high water content. So its a perfect drink to beat the heat.

Mojito is a traditional Cuban highball. Traditionally mojito is a cocktail or alcohol based drink consist of mint leaves, lime juice, sugar sparkling water and white rum.

But alcohol free virgin mojito has lime juice, mint leaves and sugar syrup.

I have made this mojito sugar-free.  You don’t need to add sugar because this mojito has natural sweetness of watermelon. But you can add little sugar or sugar syrup if you want your drink more sweet. 

Watermelon is a most refreshing fruit of this summer season. Its low in calories but high in vitamin A, C and many healthy plant compounds. This fruit have high water content so its help you to keep your body hydrated and help you feel full.

And some benefits of cucumbers are 

Cucumbers are predominantly made of water.

Some people use cucumbers to soothe sunburn.

Early research shows that a compound found in cucumbers might help fight cancer.

Cucumbers contain lignan, which may help fight cardiovascular disease.

Cucumber is a versatile foodstuff and can be added to a variety of dishes.

This mojito is not only refreshing and delicious but healthy too. And mint, lemon and back salt makes this mojito super yummy.

Recipe 


Seedless watermelon cubes – 2 cup 

Cucumber – 1 small peeled and chopped 

Grated ginger – 1/2 teaspoon 

Mint leaves – 1/4 cup 

Lemon juice – 2 tablespoon 

Club soda – 1/2 cup

Black or pink salt – 1/2 teaspoon or to taste 

Black pepper powder – 1/2 teaspoon or to taste 

Mint leaves and lemon wedges for garnishing
Crushed ice optional 

Method 


Combine seedless watermelon cubes, peeled and chopped cucumber, grated ginger, lemon juice and black or pink salt. 

Blend in a mixer blender. Blend until smooth. 

Strain the mixture. 

Add club soda. Taste and adjust salt  pepper and lemon juice if require. You can add sugar or sugar syrup if you want your drink more sweet. 

Pour the mixture into a glass. Add some crushed ice. 

Garnish with mint string, lemon and watermelon wedges. Place a mint leaf in the glass. 

Serve chilled. Enjoy…………. 

Orange Grapes Frozen Cooler With Lemon And Mint 

Orange grapes frozen cooler with lemon and mint.

A very refreshing and delicious cooler to beat the heat. You can serve it as a dessert too. 

I have used fresh orange juice  grapes, lemon and fresh mint in it. 

A drink or dessert for this scorching hot weather. Serve it to your kids instead of fruits. I am sure they will love it.

Oranges are easily available and one of the most popular fruits in the world. Oranges are excellent source of nutrients but low in calories. And oranges are well known for vitamin C and significant antioxidant properties.

They not only promote healthy skin, also can help to prevent from many diseases.

And the queen of fruits grapes are known for numerous health benefits. Many studies proved that grapes can protect us from heart disease, high blood pressure and cancer.

A chilled drink with all the goodness of fruits. You don’t need to add sugar in it. Just enjoy the natural sweetness of fruits. A dash of pink or black salt and lemon juice makes the drink super delicious.

I have used fresh orange juice but you can make it with canned juice too. 

Recipe 


Orange juice – 2 cup frozen 

Grapes – 1 cup 

Lemon juice – 4 teaspoon 

Pink salt or black salt – 1/2 teaspoon 

Mint – few leaves 

Lemon wedge and mint leaves for garnishing 

Method 


I have frozen fresh orange juice but you can use canned juice too. Keep the juice in freezer till set. 

Combine frozen orange juice, grapes, salt, mint leaves and lemon juice in a blender. 

Blend until smooth. 

Taste and adjust salt and lemon juice according to your taste. I have used 1 lemon and 6 – 7 mint leaves. You can reduce or increase as per your taste. 

You can use any fruits of your choice instead of grapes. 

Pour the mixture into a glass. 

Garnish with lemon wedges and mint leaves. 
Serve chilled.
