Recipe is very easy. I have tried oats with some special spices of Bengal. And everyone loved the taste.

Recipe

Oats  – 1 cup
Poppy seeds  – 2 tablespoon
Green chillies – 2
Mustard powder  – 1 teaspoon
Salt to taste
Turmeric powder – 1/2 teaspoon
Red chilli powder – 1/4 teaspoon
Dry red chilli – 1
Mustard oil – 2 tablespoons
Water – 1 and 1/4 cup

Method

Soak poppy seeds in hot water or microwave with little water for 1 minute on high power.

Let it cool and grind with green chillies. Make a smooth paste.

Soak mustard powder in 2 tablespoons water and keep aside.

Heat oil in a nonstick pan. When the oil reached smoking point fry the dry red chilli. Remove from oil and keep it aside.

Now in same oil add poppy seeds and green chilli paste.

Saute and add salt, turmeric powder and red chilli powder. Stir continuously. Saute till the mixture dried up and leaves the sides.

Add soaked mustard powder, oats and water. Mix well and cook until the mixture dried up completely. You can also add chopped cilantro or coriander leaves if you like.

Switch off the flame.

Garnish with fried red chilli, coriander leaves and green chilli.

Serve hot.

Gluten free eggless double chocolate black rice cake.

A very healthy and delicious eggless cake with a nutty taste of black rice.

Black rice is more nutritious than brown rice. Its an excellent source of fiber, amino acid, minerals, vitamins and antioxidants.

In China and some South-East Asian country it is known as “Forbidden Rice” because it was reserved exclusively for the Royals in ancient China.

Black rice is healthier than the good old white. Black rice, an Asian staple that’s always been part of northeastern cooking in India, is making a huge comeback and so is the nutty-flavoured red rice

Black rice is gluten-free, gut-friendly, a natural cleanser and heart-savvy. The Asian basic, also called Chakhao in Manipur, is popping up at supermarts all over the world as the super-food to get hold of. The bran hull of black rice, which is the outermost layer of the rice grain, contains one of the highest levels of the antioxidant anthocyanin found in any known food. “Black rice is lower in calories but higher in protein content as compared to brown, red or white rice. Its antioxidant content is almost six times higher than other varieties of rice,” confirms Dr Kaur

And the cake is soft and moist. You will love the nutty taste of black rice. If you don’t have black rice you can make the cake with white rice too.

 

 

 

Recipe 


Black rice flour – 1 cup

Oats powder – 1/2 cup

Almond powder – 1/4 cup

Grated dark chocolate – 1/4 cup

Powered sugar – 1 cup + 1 & 1/2 tablespoon

Oil or butter – 1/2 cup

Milk – 1 cup

Vinegar – 1 tablespoon

Cocoa powder – 2 tablespoon

Baking powder – 1/2 teaspoon

Baking soda – 1/2 teaspoon

Vanilla – 1 teaspoon

 

 

 

Method 


For black rice flour wash and soak the black rice overnight. Next day spread the rice on a piece of cloth to sun dry. When the rice dried up completely grind them to a fine powder. You can use white rice too.

For almond powder dry grind the almonds with it’s skin.

Preheat the oven at 180°. Grease a baking pan and dust with flour.

Mix vinegar with milk and keep aside.

In a bowl sieve rice flour, oats powder, almond powder, baking powder, soda and cocoa powder.

In a large bowl mix oil or butter and powdered sugar. I have used oil. Beat well.

Add vinegar mixed milk and vanilla. Mix well.

Add all the dry ingredients gradually. Mix well and fold grated chocolate in the batter.

Pour the mixture in a greased flour dusted cake pan. Tap gently.

Bake in preheated oven at 180° for 30 – 40 minutes or until the toothpick comes out clean.

Every oven takes different time so check after 30 minutes.

Cake will be soft, so don’t try to slice when hot, it may be crumbled. Let the cake cool down completely before slicing.

Enjoy the soft, moist and delicious cake with tea or coffee.

Appe or kuzhi paniyaram is a popular breakfast dish from South India, made of steaming batter.
Traditionally made from pulses and rice using a mould. It can be made sweet and spicy both.
You can make it with very few ingredients and enjoy as a healthy snack.

An ideal appetizer for health watchers and kiddos.

This appe is made of beetroot. Which is low in fat. Full of vitamins and minerals and packed with powerful antioxidants. And it contains potassium, magnesium, iron, vitamins A, B6 and C, folic acid, carbohydrates, protein, antioxidants and soluble fibre. Not only that beetroot nutrition can also make your skin glow.

Recipe 



Semolina- 1/2 cup

Oats powder- 1/2 cup

Rice flour- 1/2  cup

Flax seed powder- 2 tablespoon

Beetroot- 1 ( grated)

Green chilli- 2-3 ( finely chopped)

Green coriander leaves – handful (finely  chopped)

Curd – 1 cup

Ginger- 1″ piece ( grated or paste)

Lemon – 1/2

Cumin powder- 1 teaspoon

Garam masala powder- 1/4 teaspoon

Chat masala powder- 1 teaspoon

Salt- to taste

Baking soda- 1/2 teaspoon

Onion- 1 chopped ( optional)

Curry leaves- few chopped

Mustard seeds ( rai) -1/2 tsp

Oil for cooking

Frozen peas – as require
Water as require

Method 


In a bowl mix semolina, oats powder, flax seed powder, rice powder, curd, salt, spices, green chilli, coriander leaves, grated beetroot, ginger,  chopped onion and lemon juice. I didn’t use onion. Add enough water to get an idli batter consistency.

Heat  1 tsp oil in a pan, add mustard seeds and curry leaves. Let the mustard seeds crackle. Mix it into the batter. Mix well. Keep aside for half an hour.
Add baking soda in the batter. Give a good stir.

Heat the appe pan and put little oil in the holes. Drop 4 – 5 frozen peas in each holes. Pour a spoonful of batter in each mould, cover the pan and cook on low medium flame.

Cook till the outer surface becomes light brown and then turn appe upside down to cook the other side uncovered.

Serve hot with any chutney or sauce. Enjoy the spicy yummy appe in breakfast or as a snack.

Red Velvet Choco Chips Cookies 


Happy new year everyone. Have a blessed year ahead.

Egg less red velvet chocochips cookies.

Feeling very happy to share this gorgeous looking healthy cookie for the first post of the year.

Chocolate chips filled mouth melting red velvet cookies with wholewheat flour and oats.

Loved the cracks and texture.

And its without any artificial colour. Used beetroot to make it red. Which is full of vitamins and minerals and packed with powerful antioxidants. So you can call it a healthy cookie. And you can’t recognize beetroot and oats in taste. Look at the picture, gorgeous isn’t it?

Wholewheat flour and oats makes these cookies perfect for kids tiffin too.

My family members don’t like oats at all. But these cookies are super hit amongst them.

Highly nutritious gluten free oats are known as healthiest food on earth. Studies show that this grain is a rich source of vitamins, fiber, minerals and antioxidant. And oats has numerous health benefits too, including lower blood sugar levels, weight loss and a reduced risk of heart disease.

So I always try to add oats in my  recipes and everyone enjoy without recognizing it :mrgreen:

You will love the rich chocolatey taste. I have used clarified butter/ghee in it but you can use butter or olive oil too if you like.

I have made 22 cookies out of the dough. And the look and taste made me super happy.

Recipe 


Wholewheat flour – 1/2 cup



Oats – 1/2 cup

Refined flour/maida – 1/4 cup

Beetroot – 1 medium

Clarified butter/ghee – 1/3 cup melted

Powered sugar  – 1/2 cup

Cashew nuts – 1/4 cup

Vinegar – 1/2 teaspoon

Baking powder – 1 teaspoon

Baking soda – 1/4 teaspoon

Vanilla – 1 teaspoon

Cocoa powder – 1 & 1/2 tablespoon

Choco chips – 1/4 cup

Choco chips to place over the cookies, optional

Method 



Preheat the oven at 180°.

Grease a baking tray or line with parchment paper.

Grind the cashew nuts and oats.

Wash and boil the beetroot. Pressure cook or microwave for 10 minutes. Let it cool down. Now peel and grind into a smooth paste with 1/2  teaspoon vinegar.

In a bowl mix whole wheat flour, refined flour/maida , ground oats and cashew nuts, baking powder, soda and cocoa powder.

Cream together clarified butter/ghee and powdered sugar. Mix beetroot puree with vinegar in it. Add vanilla and mix well. Add all the dry ingredients and choco chips and make a smooth dough.

Take 1 tablespoon from the dough and make small balls. Place the balls on greased baking tray 1 inch apart. Press gently with your finger or a spoon to make flat top. Place some Choco chip over it. I have made half with Choco chips and half without choco chips.

If you don’t have white choco chips you can use dark chocolate chips too.

Bake in a preheated oven at 180° for 10 – 12 minutes or until the edges becomes crisp.

The cookies will be soft in the middle when hot but it will be crisp after cooling.

So let the cookies cool down completely before serving.

Enjoy the melt in mouth chocolaty, delicious and beautiful cookies.

Khajur Gur Or Date Palm Jaggery Oats Dry Fruits Cookies 


Khajur gur/nolen gur or date palm jaggery oats dry fruits cookies.

A totally guilt free healthy cookie for you and your kids to munch and enjoy the delightful taste. Taste of dry fruits and aroma of date palm jaggery or khajur gur/nolen gur makes the cookies heavenly.

Khajur/Khejur/nolen gur or date palm jaggery derived  from the sap of date palm tree. Which is collected and cooked for long time and then cool to solidify.

Its famous in Bengal. Well known as patali gur used in many desserts in winter like nolen gur rasgulla, sandesh, paesh or kheer and many more. All are lip-smacking dishes.These delicacies makes my Kolkata visit in winter more enjoyable 🙂

I have made many desserts with date palm jaggery but never used it in cookies. Poush Sankranti or Makar Sankranti is around the corner. And we use this Jaggery in all the special delicacies on this auspicious occasion. Every year we make gokul pithe, paesh, patisapta, ranga aloor pithe, muger pithe etc on Maker Sankranti or Poush Parbon. I remember my mom spent whole day to make these delicacies. And for us it was a feasting day.

This time I have used this date palm jaggery in cookies for a change. And loved the aroma and taste. I have used homemade fresh butter in it. Wholewheat flour, oats, dry fruits and jaggery makes the cookies healthy too.

Date palm jaggery or khajur gur is the most nutrient rich variety of raw jaggery. Its loaded with vitamins and minerals and an excellent substitute for sugar. Sugar gives you only sweetness and contains no  nutrients.

Whereas jaggery is healthy and natural sweetener because its processed without any artificial or chemical ingredient. Iron rich jaggery increases hemoglobin level and treats anemia.

Recipe 


Whole wheat flour or atta – 1

Oats – 1/2 cup, powdered

Butter – 1/2 cup

Jaggery or gur – 1/3 cup

Powdered sugar – 1 tablespoon

Baking powder – 1/2 teaspoon

Baking soda – 1/4 teaspoon

Cardamom powder – 1/4 teaspoon

Raisins – 1 tablespoon chopped

Cashew nuts – 3 tablespoon broken or chopped in small pieces

Almond – 2 tablespoon broken or chopped in small pieces.

Method 


Preheat the oven at 180°.

Grease a baking tray or line with parchment paper.

Grind the oats into a fine powder.

Sift flour, powdered oats, baking powder, soda and cardamom powder. If you want you can use all purpose flour/maida instead of wholewheat flour/atta.

Mix butter, grated jaggery and powdered sugar in a large bowl. Beat well. If you don’t have date palm jaggery, you can use traditional cane jaggery too.

Add dry ingredients and chopped dry fruits. You can use any dry fruits of your choice. My son love cashew nuts and don’t like raisins much. So I have used less raisins. Add as per your choice.
Make a semi stiff dough. If your dough is not stiff enough to roll keep the dough in refrigerator for 10 – 15 minutes covered. Or if you feel its not smooth sprinkle little milk.

Roll It with the help of a rolling pin. Roll out into 1/4″ thick.  Cut with a cookie cutter. Use any shape of cookie cutter of your choice.

Bake in preheated oven at 180° for 7 – 8 minutes or until the edges becomes light brown. It will be soft in the middle and becomes crisp when cool.

I have turned upside down and bake for 2 – 3 minutes more to bring some colour on other side too.

Let the cookies cool down before serving.

Enjoy the crispy crunchy delicious khajur/nolen gur or date palm jaggery cookies.

Oats Soya Green Gram Toast

Power packed breakfast plate. Full of fiber and protein. Green whole moong/green gram, soya granules and oats toast.

Green gram is one of the best vegetarian super foods. It contains a lot of protein, fiber and minerals.
Its not only keeps you full but also helps to lose weight.

Oats are loaded with dietary fiber and have a range of healthy cholesterol lowering properties.
Its also known as the world’s healthiest food.

Soya is called world’s healthiest food too. It has the highest protein content amongst plant product.
Soya is the only vegetable food that contains all eight essential amino acid.

So its a healthy and tasty breakfast. I used brown bread you can use white bread too.

Here is the recipe of
Oats, moong / green gram, soya toast. Toast is rich in fibre because of oats, rich in protein because of green gram and soya.

Ingredients

Green moong dal – 1/2 cup

Oats – 1/2 cup

Soya granules – 1/4 cup ( soaked in hot water or microwave with water for 2 minutes)

Ginger – 1/2 inch piece grated

Green chilli – 2 ( finely chopped)

Lemon juice – 1/2 teaspoon

Cumin powder – 1/2 teaspoon

Coriander leaves – 1/2 cup  chopped

Onion – 1 chopped

Method

Soak the moong dal in water overnight, drain and add oats, soaked soya granules, salt, lemon juice, ginger, cumin powder & salt.

Grind all these to a smooth paste. You can add 1-2 eggs in the mixture if you want. I didn’t.

Now add coriander leaves and finely chopped green chilli. If you like you can grind them with other ingredients too.

Add finely chopped onion.

Take a slice of bread and brush little oil or butter on one side. Place the greased side down.

Take 1 tablespoon of ground paste and coat it all over the side. Sprinkle some oats.

Heat a pan, grease it with little oil or butter. Place the coated side down facing and oil greased side upwards.

Toast it on medium flame then flip and toast other side till golden brown in colour.

Cut the toast and serve immediately.

Enjoy the yummy and crispy toast.
You can add 1/2 tsp baking powder to make more crispy.

You can spread little tomato sauce before coating the ground paste.

Start your day with this power packed breakfast.
