Red Lentil Soup

Red lentil soup.
A delicious comforting and flavourful soup. Very easy to make and nutritious. Serve it as a comforting meal with a dash of lemon juice or serve it with rice or bread.

Earlier made a Lebanese lentil soup with whole red lentils and loved the taste so tried this with red lentils. Its equally delicious.

Lebanese Lentil Lemon Soup

Beetroot dal or lentil curry

Red lentils, also known as Masoor dal, are an extremely popular lentil in India. They are grown all over the country and consumed for their various health benefits. Red lentils are extremely good for your skin and can prevent issues like rapid ageing and acne. They can also be used to lighten the skin and get rid of tans. Red lentils promote weight loss and are very good for your digestion due to the high amounts of fiber present in this lentil. It is good for diabetics as it regulates the random spikes and drops in the glucose level in the blood. It is abundantly rich in proteins and minerals, which help boost various systems in your body. It is very good for your bones, teeth, and eyesight because of this. It can reduce the risk of cancer due to its anticancer properties and is known for reducing bowel, colon, lung, and breast cancer risks. Moreover, due to its high antioxidant content, it is very beneficial for your immune system and can help prevent a ton of diseases and infections.

This lemon flavoured lentil soup is very easy to make. You can use your pressure cooker to make it. But better to cook in open pot for taste. Soup will be more tasty if you will cook it in open pot.

Recipe

Red lentils or Masoor dal – 1 cup

Carrot – 2 medium

Potato – 1, optional

Onion – 1, finely chopped

Bay leaf – 1

Garlic – 3 – 4, minced

Ginger – 1 inch piece, grated

Tomato – 1, chopped

Baby spinach – 100 gram, chopped

Cilantro or coriander leaves – handful, chopped

Cumin powder – 1 teaspoon

Turmeric powder – 1/2 cup

Dried mint leaves – 3 tablespoon, crushed

Black pepper powder – 1 teaspoon or to taste

Salt to taste

Oil – 2 tablespoon

Water – 5 cup

Lemon juice – 2 teaspoon

Zest of 1 lemon

Method

1. Peel and cut the carrot and potato in cubes.

2. Rinse and chop the spinach.

3. Heat oil in a pan or wok. Add onion and garlic. Fry till the onion becomes translucent.

4. Add grated ginger, carrot, and potato. Saute for 2 minutes.

5. Now add spinach and tomato. Saute for 2 – 3 minutes or till the tomato becomes soft.

6. Add lentils, salt, cumin powder and black pepper powder. Mix well.

7. Add water and crushed dried mint leaves. Let it boil.

8. When it starts to rolling boil reduce the heat. Cook on low heat till lentils becomes soft. It will take 25 – 30 minutes. Don’t cover the pan.

9. When lentils becomes soft add lemon zest and lemon juice. You can add more water if require.

10. Remove from heat. Taste and adjust the seasoning. Add more lemon juice if require.

11. Garnish with mint and coriander leaves, lemon wedges and chopped tomatoes or fresh red chilli. I have used small pieces of fresh red chilli.

Dundee Cake / Eggless Cake

Dundee cake.
My first cake of the year. No not gluten free or dairy free its only egg free.
Mixed taste of almond, lemon, orange, blackberry preserve, cardamom and cinnamon made this cake super yummy and aromatic.

The cake is often made with currants, sultanas and almonds; sometimes, fruit peel may be added to it. The cake originated in nineteenth-century Scotland, and was originally made as a mass-produced cake by the marmalade company called Keiller’s. Keiller’s marmalade company first mass-produced the cake commercially and have been claimed to be the originators of the term “Dundee cake”. However, similar fruit cakes were produced across Scotland. A popular story is that Mary Queen of Scots did not like glace cherries in her cakes, so the cake was first made for her, as a fruit cake that used blanched almonds and not cherries. The top of the cake is typically decorated with concentric circles of almonds. Today, the cakes are often sold in supermarkets throughout the United Kingdom.
The cake was also made and marketed in British India, and in independent India after 1947, by Britannia Industries and its successor firms. However, after 1980 the cake was withdrawn from the market though it continued to be supplied privately as a corporate Christmas gift by the maker. Queen Elizabeth is reported to favour Dundee cake at tea-time.

I have made it with refined flour or maida but you can use whole wheat flour or atta or any flour of your choice. Or use gluten free flour if you want. If you want to make it vegan then you can use almond milk or coconut milk.
I have used candied cherries, almond and raisins. If you have sultana you can also use it.
Usually we add orange marmalade or apricot jam in this cake. But this time I have got a bottle of English blackberry preserve from Bhuira jam as a gift hamper. So I used it and loved the taste. You can use orange marmalade or apricot jam if you want.

Recipe

Refined flour or maida – 1 & 1/2 cup + 2 teaspoon

Powdered sugar – 3/4 cup

Butter – 2 tablespoon

Oil – 1/2 cup

Almond – 1/4 cup

Candied cherry – 1/4 cup, chopped

Raisins – 1/4 cup

Blackberry jam or preserve – 3 tablespoon

Baking powder – 1 teaspoon

Baking soda – 1/2 teaspoon

Cinnamon powder – 1 teaspoon

Cardamom powder – 1 teaspoon

Milk – 1/2 cup

Lemon juice – 1 tablespoon

Orange zest – 1 teaspoon

Lemon zest – 1/4 teaspoon

Vanilla essence – 1 teaspoon

Almond – 25, blanched

Method

1. Preheat the oven at 180° for 10 minutes.

2. Grease a round cake pan with oil or butter and dust with little flour.

3. Grind the almonds and keep aside.

4. Mix lemon juice in lukewarm or room temperature milk. It will start to curdle.

5. Mix 2 teaspoon refined flour with chopped candied cherries and raisins to avoid sinking at the bottom. You can also add 1/4 cup sultana if you have.

6. Sieve refined flour or maida, baking powder, soda, cardamom powder and cinnamon powder. Add ground almond in the flour mixture.

7. In a large bowl mix butter, oil and powdered sugar. Whisk well.

8. Add lemon juice mixed milk and whisk again.

9. Add jam or preserve, orange zest, lemon zest and vanilla essence. Mix well.

10. Now add all the dry ingredients gradually. First add half of the flour mixture, mix well and then add remaining flour mixture.

11. Make a lump free batter. Don’t over beat.

12. Fold in raisins and chopped candied cherries.

13. Pour the batter into the greased and flour dusted cake pan. Level the top with a spoon.

14. Tap the cake pan 3 – 4 times to remove air bubbles.

15. Peel the blanched almonds and decorate over the cake.

16. Bake at 170° for 30 – 40 minutes or till the toothpick comes out clean. Check after 30 – 35 minutes. Insert a toothpick in the middle it should comes out clean.
Every oven takes different time. Mine takes 45 minutes. Keep an eye after 30 minutes. Don’t over bake.

17. Let the cake completely cool down before slicing.

Notes

1. You can use gluten free flour if you want.
2. For dairy free version use almond milk or coconut milk.
3. You can add sultana or any dry fruits of your choice.

Gluten free lemon cherry loaf cake with Soyabean flour and oats.
A delicious eggless cake with the mixed flavour of lemon, cherry and coconut. Cake is super soft and moist.
Not only delicious but you will love it’s colourful look when slicing.

Planning to make this cake with Soyabean flour. My Pineapple cupcakes with Soyabean flour was a super hit among my family and friends. Loved the texture of Soyabean flour cake. It was super soft and delicious.
When our bloghop member Sasmita suggested this week’s 162 #Foodiemonday bloghop theme #lemonAffair, I immediately made this cake and very happy with the taste.

I have mentioned all the health benefits of Soyabean flour in pineapple cupcake post. So no more health, today I am talking only about taste. Yes no doubt Soyabean is protein rich and nutritious. It will make your cake more delicious, soft and moist than any other flour.

You will also love the taste of cherries in this cake.
There is something about cherries that makes us want to associate it with all things sweet and decadent. When they are not sitting pretty on top of cakes, they are one of the main ingredients in desserts. Sweet, tarty and ever-so delightful, cherries enjoy a massive following across the globe. But did you know that if consumed in the right way, cherries could also prove to be a treasure trove of health benefits? Montmorency cherries, a variety of sour cherry produced in France and Canada, are packed with anti-inflammatory compounds. This bright red variant of cherry is said to be ten times more effective in healing pain than popular pain relievers available in market. I have used lemon glaze and sprinkle desiccated coconut over it. But its optional. You can serve it as a tea cake without any topping.

Recipe

Soyabean flour – 1 cup

Oats powder – 1/2 cup

Lemon juice – 1 tablespoon

Lemon zest – 1/2 teaspoon

Cornflour – 2 tablespoon

Baking powder – 1 teaspoon

Baking soda – 1/2 teaspoon

Condensed milk – 1/2 cup + 2 tablespoon

Olive oil – 1/2 cup

Vanilla essence – 1 teaspoon

Cherry juice – 1/2 cup or as require

Cherry – 1 cup, pitted and chopped

For lemon glaze

Lemon juice – 1 tablespoon

Powdered sugar – 1/4 cup

Lemon zest – 1/2 teaspoon

Desiccated coconut to sprinkle

Method

1. Preheat the oven at 170° for 10 minutes.

2. Grease a baking pan with olive oil and dust with soyabean flour.

3. In a bowl sift Soyabean flour, oats powder, cornflour, baking powder and soda.

4. In a large bowl mix condensed milk, olive oil, lemon juice, lemon zest, vanilla essence and 1/4 cup cherry juice. If you are using canned cherry use the syrup.

5. Whisk everything well.

6. Now add the dry ingredients gradually. Mix well.

7. Add remaining cherry juice and make a lump free smooth batter. Don’t overeat.

8. Pour the batter in greased and flour dusted cake tin.

9. Bake in preheated oven for 30 – 40 minutes or until toothpick comes out clean.

10. Every oven takes different time so check after 30 minutes. Insert a toothpick in the middle, if it comes out clean your cake is ready.

11. Let it cool down completely.

12. For glaze whisk lemon juice, powdered sugar and lemon zest. Whisk till smooth.

13. Spread lemon glaze over the cake and sprinkle desiccated coconut.

14. Slice and serve.
Enjoy the heavenly taste.

Notes

1. You can also make this cake with refined flour or whole wheat flour.

2. I have used canned cherry but if you have fresh cherry, you can use it.

3. I made it in a loaf pan, you can make it in round or any other cake pan.

4. Lemon glaze is optional. You can make it without glaze and enjoy as a tea cake.

Beetroot Shot With Mint Lemon And Black Salt

Beetroot shot with mint, lemon and black salt.
Chilled beetroot shot is a perfect drink to beat the heat. And we all know that beetroot is a very nutritious vegetable.

Beetroot is low in fat, full of vitamins and minerals and packed with powerful antioxidants. And it contains potassium, magnesium, iron, vitamins A, B6 and C, folic acid, carbohydrates, protein, antioxidants and soluble fibre. Not only that beetroot nutrition can also make your skin glow.

I recently joined a facebook group A to Z recipe challenge. Created by Jolly and Vidya. Every alternate month we have to make a post. I have missed first theme challenge. Alphabet of this month is B. And I am sharing this chilled beetroot shot for this theme.

I have used raw beetroot to make it. Because I love the sweetness of raw beetroot. Not only that.
Beet juice is known as a blood purifier due to its antioxidant and detoxification properties. Consuming beets increase your body’s production of glutathione, which
helps your body detoxify by grabbing numerous toxins and pulling them into the colon, where they are evacuated. Beet juice might also improve the composition of blood by stimulating red blood cell production, improve stamina, dissolve kidney stones and reduce blood pressure, according to “Superfoods: The Healthiest Foods on the Planet.”
Betalains and some other nutrients are reduced in cooked beets because they are sensitive to heat, according to “Nutritional Sciences for Human Health.” As cooking time and temperature increase, betalains and vitamin C content steadily decreases.

I have used mint, ginger, lemon, black salt and pepper in it. These ingredients made this juice delicious. Add some ice cubes and enjoy the healthy and delicious beetroot shot chilled.

Recipe

Beetroot – 1 medium

Grated ginger – 1/2 teaspoon

Mint leaves – 8 – 10

Lemon zest – 1/4 teaspoon

Black salt – 1/2 teaspoon

Black pepper powder – 1/4 teaspoon or to taste

Water – 1/2 cup

Lemon juice – 1 & 1/2 tablespoon

Ice cube – as require

Method

1. Blend grated or finely chopped beetroot with water, mint leaves, lemon zest and ginger in a mixer grinder or food processor.

2. Strain the juice with a strainer or sieve.

3. Add lemon juice, black salt and pepper.

4. Mix well. Taste and adjust the seasoning.

5. Place some ice cube in the shot glass. Pour the juice over it.

6. Garnish with lemon wedges and serve chilled.

Notes

1. Use black pepper powder according to your taste. If you don’t like pepper you can omit it.

2. If you don’t have black salt then you can use rock salt or any other salt but black salt tastes better.

3. If you don’t like raw beetroot then you can boil the beetroot with skin and then peel chop and blend as mentioned above.
