Vegan Smoothie Bowl

Vegan smoothie bowl.
A dairy free and gluten free smoothie bowl for breakfast. And also sugar free. So diabetic and weight watchers both can enjoy it.
Easy to make, filling, healthy and delicious. A perfect breakfast option. With all the goodness and taste of banana, oats, almond, raisins, dates and coconut and the crunch of walnut and pomegranate.

I have used banana but you can use strawberry or any fruit of your choice. You don’t need any sweetener because raisins, banana and dates give enough sweetness to your smoothie bowl.

This smoothie is perfectly sweet and delicious but if you like less sweetness in your smoothie then you can reduce the amount raisins and dates. You can dry roast the oats if you want. I didn’t.

Recipe

Oats – 1/4 cup

Banana – 1

Coconut milk – 1/4 cup or as require

Fresh coconut – 2 tablespoon, chopped

Almond – 5

Date – 2, pitted and chopped

Raisins – 2 tablespoon

Walnut, raisins, pomegranate and banana pieces for topping

Method

1. Peel and chop the ripe banana.

2. Soak the almonds in hot water and peel when cool.

3. Soak the raisins in water.

4. Grind the oats. You can dry roast the oats before grinding if you like.

5. In a blender blend ground oats, chopped coconut, chopped dates, peeled almonds, soaked raisins, chopped banana and 1/4 cup coconut milk. Blend into a smooth mixture.

6. Pour the mixture into a bowl. You can add 1/4 cup more coconut milk if you want your smoothie consistency thin.

7. Top with banana slices, raisins, walnut and pomegranate arils.
Enjoy the delicious and healthy smoothie bowl. Stay healthy stay happy

Notes

1. You can use strawberry or any fruit of your choice instead of banana.
2. If you don’t like oats then dry roast the oats before grinding.

Dairy Free Beetroot Smoothie With Apple Orange And Carrot

Dairy free beetroot smoothie with apple, orange and carrot.
A perfect low calorie drink with breakfast. Delicious, healthy and filling. I have used carrot, apple and orange juice in it. You can use any fruit of your choice.

You don’t need to add any sweetener in this smoothie. But you can add black salt and black pepper powder if you want. I love this smoothie both ways.

Beetroots have numerous health benefits.
Beetroot is rich in vitamins, minerals and nutrients and it without doubt is a ‘super-food’. It helps to treat anemia, indigestion, constipation, piles, kidney disorders, dandruff, gall bladder disorders, cancer and heart disease. It also helps to improve blood circulation, helps to deal with respiratory problems and even prevents cataracts.

Now coming to the recipe. Just blend everything and and your healthy and yummy smoothie is ready in a minute.

I have used orange juice but you can use grape or any other fruit juice. Add fruit juice according to your taste. Almond milk can be used instead of coconut milk.

Recipe

Beetroot – 1 boiled

Carrot – 1

Apple – 1, peeled and cored

Orange juice – 1 cup

Coconut milk – 1/2 cup

Lemon juice – 1/2 teaspoon

Cinnamon powder – 1/4 teaspoon

Finely chopped walnut to garnish

Method

1. Peel and chop the boiled beetroot.

2. Grate or finely chop the apple for easy blending.

3. Mix all the ingredients and blend until smooth and frothy. See notes for more options.

4. Pour the mixture into your favourite glass and enjoy the delicious and healthy smoothie.

Notes

1. You don’t need to add any sweetener. Smoothie is enough sweet due to the sweetness of beetroot, apple, orange and coconut milk.

2. You can add black salt and black pepper powder if you like to enhance the taste.

3. You can also add ice cubes if require.

4. Almond milk can be used instead of coconut milk.

5. You can use grape juice or any fruit juice of your choice instead of orange juice.

Black Rice Pudding And Mango Parfait

Dairy free black rice pudding and mango parfait.
Pudding made of black rice or forbidden rice, coconut milk and organic jaggery powder.
If you want you can also make it with sugar or brown sugar.
Serve the pudding chilled or make it parfait with mango or any other fruit.

Black rice is quite popular in Asia. The black rice has a texture similar to brown rice, but with a more prominent nutty flavor.
Black rice is more nutritious than brown rice. Its an excellent source of fiber, amino acid, minerals, vitamins and antioxidants.

In China and some South-East Asian country it is known as “Forbidden Rice” because it was reserved exclusively for the Royals in ancient China.

Despite being less popular than brown rice or wild rice, black rice, known as forbidden rice, is an ancient grain that has even more impressive health benefits than most other closely related rice varieties.

Not only is it the type of rice that is richest in powerful disease-fighting antioxidants, but it also contains dietary fiber, anti-inflammatory properties, and has the ability to help stop the development of diabetes, cancer, heart disease and even weight gain.

Black rice has been eaten in regions of Asia for thousands of years; in fact for centuries it was reserved for only Chinese royalty. Today this type of rice is picking up in popularity and popping up in more health food stores across the US, Australia, and Europe, as people discover the numerous health benefits that whole grain black rice has to offer.

Its Monday again and this week’s 156 #Foodiemonday bloghop theme is ‘Any but white rice’. When Mayuri suggested the theme I decided to make something with black rice. I love the nutty taste of this rice.

Its a very simple, easy and quick yet delicious recipe. If you have boiled black rice, you can make it in a jiffy. I have made it with coconut milk and used organic jaggery powder to sweetened it. But you can use same amount of sugar or brown sugar if you like. You can use vanilla or any flavour of your choice.

Recipe

Black rice – 1/2 cup

Water – 2 cup

Coconut milk – 1 cup

Jaggery – 1/4 cup

Cardamom powder – 1 teaspoon

Cashew nuts – 2 tablespoon

Raisin – 2 tablespoon

Oil to fry the nuts

Mango – 1, chopped in small cubes

Method

1. Wash the rice well.

2. Black rice takes longer time to cook so soak the rice 6 – 8 hours or overnight. Then microwave for 20 minutes on high power or pressure cook with water for one whistle, after that cook on low flame for 20 minutes.

3. Heat ghee/clarified butter or oil in a pan.
Add raisins. When the raisins puffed up, immediately remove from ghee or oil.

4. In the same oil fry the cashew nuts till light golden brown. Keep aside.

5. Now mix coconut milk and jaggery powder or sugar. I have used organic jaggery powder.

6. Cook on low flame till it becomes thick and creamy. Stir occasionally.

7. Taste the sweetness. If require add 1-2 tablespoon jaggery powder or sugar.

8. Add cardamom powder, fried raisins and cashew nuts. Reserve some for garnishing. Mix well.

9. Keep the pudding in refrigerator to serve chilled.

For parfait

10. In a glass add some mango cubes, layer with black rice pudding over it.

11. Repeat the layers till end. Top with mango cubes and fried cashew and raisins. You can sprinkle little desiccated coconut over it.
Serve chilled.

Notes

1. You can use sugar or brown sugar instead of jaggery powder.

2. You can use any fruit of your choice instead of mango.

3. You can add roasted almond, pistachio or any dry fruit.

4. You can use vanilla or any flavour of your choice instead of cardamom.

Chhanamukhi ilish or paneer or cottage cheese stuffed hilsa.
Hilisha or hilsa or ilish is a very popular fish of Bengal. Its called King of fish because of it’s taste.

In Bengal and Odisha, ilish can be smoked, fried, steamed or baked in young plantain leaves, prepared with mustard seed paste, curd, eggplant, different condiments like jira (cumin) and so on.

Here is an unique and delicious recipe of hilsa fish stuffed with cottage cheese.

Fish kalia

Masor tenga or tangy fish curry

A rich and delicious fish curry. You can make it as a party side dish. Stuff with little clarified butter or ghee and salt mixed paneer or cottage cheese. You need very minimal spice to make it. You can imagine how delicious and flavourful it will be.

Recipe

Ilish Machh / Hilsa steaks (ring piece) – 5 pieces

Paneer or cottage cheese – 1/2 cup, Crumbled

Ginger Paste – 1 teaspoon

Onion Paste – 2 – 3 tablespoon

Poppy seed paste – 1 tablespoon

Coconut Milk – 1 cup

Slit green chillies – 2 – 3

Ghee/ Clarified butter – 1/4 teaspoon

White Oil – 4 tablespoon

Salt to taste

Red chilli powder – 1 teaspoon

Turmeric powder – 1/2 teaspoon

Water as require

Method

1. Wash and clean the fish pieces. Take out the fish roe or eggs if there are any.

2. Mix paneer or cottage cheese well with ghee & salt.

3. Smear salt & turmeric on the Hilsa pieces & stuff the paneer in place of the eggs / fish roe or machher deem. See the picture below 👇

4. Heat white oil in a frying pan & fry the Hilsa steaks on both sides. Take out the fish pieces once they are fried.

5. Add onion paste in the same oil. Add a bit of salt so that it does not splutter. Now add ginger paste, turmeric ,red chilli powder and saute till oil leaves the sides.

6. Add water as require for thick gravy. Don’t add much water, we have to add coconut milk too.

7. Add Hilsa pieces in the gravy. Add some more salt if require and mix gently. Taste and adjust the seasoning.

8. Now add poppy seed paste, coconut milk and slit green chillies.

9. Close the lid and cook on low to medium flame for 5 – 6 minutes or until done.

10. Serve hot with steamed rice.

Note

Use green chilli and red chilli powder according to your taste.

Gluten Free Dairy Free Lemon Glazed Water Chestnut Gulkand Cake 


Dairy free gluten free eggless gulkand flavoured water chestnut flour or singhara atta cake.

Yes its gluten free and dairy free yet taste is heavenly. Topped with lemon glaze, desiccated coconut and sugar coated fennel seeds. Gulkand, water chestnut flour, coconut, cardamom and tutti frutti make this cake super yummy and soft.

Gulkand or rose petal jam is not only delicious but it has cooling properties so its treat all heat related problems.

Its rich in antioxidants, keeps our metabolism healthy, act as a energy booster and helps to reduce acidity and stomach heat.

Water chestnut flour or singhara flour/atta is normally consumed during fasting. It is a good source of energy. This flour/atta is gluten free and very good for overall health.
It is rich in protein, carbohydrate, fiber, vitamins and minerals. It provides many essential nutrients too.
According to Ayurveda it contains more mineral compared to buffalo milk. It is used in Ayurveda to cure various diseases.

Gulkand or rose petal jam, cardamom, lemon, coconut milk and tutti frutti made this cake divine.

Recipe 


Water chestnut flour or singhara atta – 1 & 1/2 cup +1 tablespoon

Desiccated coconut – 1/4 cup

Powdered sugar – 1 cup

Coconut milk – 1 cup

Lemon juice – 1 tablespoon

Gulkand – 1/4 cup

Tutti frutti – 1/2 cup

Cardamom – 1 teaspoon

Oil – 1/2 cup

Baking powder – 1/2 teaspoon

Baking soda – 1/2 teaspoon

Lemon zest – 1/2 teaspoon

Sugar coated fennel seeds – 2 tablespoon

For glaze 


Lemon juice – 1 tablespoon

Powdered sugar – 1/4 cup

Lemon zest – 1/2 teaspoon

Sugar coated fennel seeds, desiccated coconut and cherry for topping

Method 


Preheat the oven at 180° for 10 minutes.

Grease a cake tin and dust with water chestnut flour.

Mix 1 tablespoon water chestnut flour and tutti frutti to avoid sinking in the bottom.

In a bowl mix water chestnut flour or singhara atta, desiccated coconut, cardamom powder, baking powder and soda.

In a large bowl whisk powdered sugar, coconut milk, lemon juice, lemon zest and oil. Beat till sugar dissolved.

Add all the dry ingredients gradually. Mix well to make a lump free batter.

Add gulkand or rose petal jam and mix.

Fold in flour mixed tutti frutti and sugar coated fennel seeds in the batter. But these are optional if you want you can omit these. Use dry fruits of your choice.

Pour the mixture into the greased and flour dusted cake tin.

Bake in preheated oven at 180° for 35 – 40 minutes or until the toothpick comes out clean.

Every oven takes different time. So check after 30 minutes. Insert a toothpick in the middle if it comes out clean your cake is done.

Let the cake cool down completely.

For glaze whisk lemon juice, powdered sugar and lemon zest. Whisk till smooth.

Spread lemon glaze all over the cake.

Spread desiccated coconut over it.

Top with sugar coated fennel seeds and cherry.

Slice and enjoy the lemon coconut mixed heavenly taste.

Note –

1. If you want you can add little food colour in the batter.

2. If you have problems with colour you can omit tutti frutti and sugar coated fennel seeds. Use dry fruits of your choice instead of these.

Dairy Free Coconut Dry Fruits Overnight Oats 


Dairy free coconut dry fruits overnight oats.

For overnight oats you have to soak the oats in any kind of liquid of your choice. You can use any milk like almond milk, soya milk, coconut milk etc, yogurt or any fruit juice in equal amounts of oats.

You will love the taste of this overnight oats even if you don’t like oats. The taste is just like a dessert. I am sure you will love it.

I love overnight oats as breakfast. Because its not only delicious but very easy to make and filling, just mix everything in a jar cover and keep in refrigerator and go to sleep. You don’t need to cook anything in the busy morning. Your breakfast is already ready in the refrigerator, just take out and enjoy.

Oats is a healthy option for breakfast. Oats are loaded with Dietary fiber, more than any other grain. Oats have a range of healthy cholesterol lowering properties, helps control weight, reduces blood pressure, stabilize blood sugar, good for skin, enhances immune system, lower the risk of colon cancer.

And we all know oats as world’s healthiest food. Better way to gain the strength and energy.

I have used cashew nuts, raisin, almond and coconut. You can use any dry fruits of your choice. I have pomegranate and apple so I have added them. You can add banana or any fruit or if you like skip the fruit, make it with only dry fruits. If you don’t want to add fruit increase the amount of dry fruits.

Recipe 


Oats – 1/4 cup

Coconut milk – 1/4 cup

Honey – 2 teaspoon or to taste

Cashew nuts – 1 tablespoon, chopped

Raisins – 1 tablespoon

Fresh coconut – 1 tablespoon, finely chopped or grated

Almond – 1 tablespoon chopped

Cashew, raisin, almond, chopped fresh coconut and walnut for topping

Apple and pomegranate seeds as require

Method 


Soak the raisins in little water for few minutes. Drain and keep aside.

Mix oats, coconut milk and honey. Taste and adjust the sweetness.

Add 1 tablespoon soaked raisins, chopped almond, cashew nuts and coconut. Mix well.

Take a jar or bowl. Place chopped apple and pomegranate seeds in the jar. Pour dry fruits mixed and coconut milk soaked oats over the fruits. Cover and shake the jar and keep it in the refrigerator for overnight.

Next day take out the jar.

Top with some more chopped apple and pomegranate seeds. You can add the fruits at night but I have added some more over it before serving to retain the crunch of the freshly chopped fruits. If you like you can make it without any fruit,  just increase the amount of dry fruits. Or you can use banana or any other fruits of your choice.

Now top with some dry fruits over it. You can Garnish with dry fruits of your choice. I have used cashew, almond, raisin, walnut and chopped coconut.

Enjoy chilled as your breakfast. Or serve as a dessert.
