Mango Sandesh

Aam Sondesh or mango sandesh
I have already posted some sandesh recipes. Sandesh or Sondesh is a famous sweet of Bengal, made of Paneer/chhena or cottage cheese. Its can be made with different flavours.
This time I have made it everyone’s favourite fruit mango.

“The king of the fruits,” mango fruit is one of the most popular, nutritionally rich fruits with unique flavor, fragrance, taste, and heath promoting qualities, making it number one among new functional foods, often labeled as “super fruits.”

Very easy to make. Only few ingredients with mango makes a delicious sweet.
You need only cottage cheese, reduced milk, mango pulp, sugar and little cardamom powder.

Recipe

Paneer/chhena or cottage cheese  – 1 cup crumbled

Reduced milk or khoya  – 1/2 cup
Sugar  – 1/3 cup

Mango – 1, pureed

Cardamom powder  – 1/4 teaspoon optional

Method

Combine cottage cheese or paneer, reduced milk, sugar and mango pulp.

I have used homemade khoya or reduced milk. To make reduced milk or khoya cook the milk on low flame. Stir continuously and scrape the sides. Cook till the milk becomes thick and almost dry.

Now grind the Cottage cheese, reduced milk, mango pulp and sugar mixture.
Make a smooth paste.

Heat a heavy bottom pan. Pour the mixture in it. Cook on low medium heat. Stir continuously.

Cook until the mixture becomes a dough like consistency. And leaves the sides. Switch off the flame. Add cardamom powder and mix well.

When it still little warm knead with your finger tips. Knead nicely to make it more smooth.

Now make small balls and give them shape in moulds.
If you don’t have sandesh mould make round balls with your palm then flatten it. Make them round or square. Make the shape of your choice.

Serve fresh or store in refrigerator for later use. You can store in refrigerator for 3-4 days.
